1 lb Chicken or calves liver
1 tb Chicken fat or peanut oil
2 sm Onions — chopped
2 Eggs — hard boiled, fine
chop
Salt pepper to taste
Bake chicken or calves liver until fairly well done.
Put through a meat grinder. Chop into a paste. Saute
onion in fat until brown. Add to liver paste. Add
hard-boiled eggs (finely chopped) to liver paste. Salt
and pepper to taste. Serve with toast rounds, thin
slices of rye bread, or potato chips.

Pea Pods
Amount Measure Ingredient — Preparation Method

1 1/2 tablespoons peanut oil
1 slice fresh ginger root — 1/2″ thick
1 pound beef — in thin strips
4 ounces bamboo shoots — sliced
4 ounces button mushrooms — sliced
3 ounces snow peas
1/2 cup chicken broth
2 tablespoons oyster sauce
1/2 teaspoon soy sauce
1/4 teaspoon seasame oil
1/4 teaspoon sugar
1/2 teaspoon cornstarch — mixed with
1/2 teaspoon water
Preheat a wok or frying pan and add the oil. Add the ginger and stir to add
flavor to the oil. Discard the ginger and addthe beef slices. Stir fry for
about 2 minutes. Add the bamboo shoots, mushrooms, snow peas and chicken
broth. Cover and cook for 2 minutes. Sitr in oyster sauce, soy sauce, sesame
oil and sugar. Thicken with the cornstarch blend and serve immediately with
rice.

Title: Kiffles

Yield: 5 servings
2 c Flour, (heaping) 3 tb Sugar
1 tb Sour cream, heaping 1 c Butter
3 ea Egg yolks 1 c Prune butter
Cream butter, sour cream, and sugar. Add egg yolks, then flour. Knead
with hands until well blended, adding a little more flour if needed. Divide
dough into 6-8 sections, pat each into a flat piece, then chill. Roll out,
between waxed paper, each section like a pie crust. Cut with a sharp knife
~ 4 cross cuts to make 8 triangles. Drop 1/2 teaspoon of prune butter onto
each triangle, roll up starting at wide end. Put on greased cookie sheet.
Bake 375 degrees or till light brown. If desired, sprinkle with powdered
sugar. Even though these have very little sugar, they are fabulous. They
even give Kolaches some stiff competition.

Viennese Coffee Mix

3/4 Cup Dry non-dairy creamer
Combine and put in an airtight container. To mix, add 4 heaping
teaspoons to 8 oz. boiling water.

Chocolate Mousse – Master Chefs

1 cup Cocoa — unsweetened
1/2 cup Water
4 ounces Chocolate, semi-sweet
4 Egg whites — room temp.
melted — cooled to room
1/4 teaspoon Cream of tartar
temperature
2 cups Cream, whipping — whipped
3 tablespoons Espresso powder — instant
to soft peaks
For Mousse:
===========
Heat sugar and water in heavy saucepan over medium-low heat until sugar
dissolves, stirring occasionally and brushing down any crystals from sides of
pan with brush dipped in cold water. Increase heat and boil until mixture
registers 240 F (soft ball stage) on a candy thermometer.
Meanwhile, beat egg whites and cream of tartar until soft peaks form.
Slowly pour in hot syrup, beating until mixture is cool, about 5 minutes
Gently fold in whipped cream, cocoa, melted chocolate and espresso.
Cover and refrigerate for 1 hour.

1 can cream of mushroom soup
10 ounces frozen mixed vegetables
1 pound Kielbasa sausage or turkey Kielbasa
Milk
White rice
In a small saucepan, simmer the mixed vegetables until done. While they are co
oking, melt 2 tablespoons of butter in a deep fry pan. Slice the Kielbasa and t
hen quarter each of the slices so there are four bite size pieces. Brown the Ki
elbasa in the butter. Then add the can of cream of mushroom soup to the meat a
nd butter. then add the milk and blend it all together making a cream sauce.
Add the vegetables, blend it all together and serve over rice. Use milk to the
consistency you like.

GOOSEBERRY CREAM

1 1/2 pt Gooseberries, stemmed
1 tb Butter
1/4 c Sugar
4 Egg yolks
Boil the gooseberries very quickly in just enough
water to cover them. Stir in the butter when the
gooseberries become soft, then press them through a
sieve. While the pulp is hot, sweeten it with sugar to
taste and then beat in the egg yolks. Serve in cups or
glasses.

1 lb Apples, cored, peeled

1 lb Pears, cored, peeled,
– cubed 3/4″
1/2 lb Cheeries, pitted
1/2 lb Plums, pitted
1/2 lb Peaches, peeled, pitted,
-cubed 3/4″
1/2 c Bread crumbs, soft fresh
1 T Fresh lemon juice
1 1/2 T Grated lemon rind
1/4 c Raspberry jam or preserves
1/2 c Sugar
3/4 c White wine, sweet
1 c Cranberry juice
Put the water, cinnamon, lemon juice bread crumbs, and the lemon rind
in large pot. Bring to a boil, then add the fruits, reduce heat, and
simmer for 25 minutes. Puree this mixture in a blender then add the
jam, wine, cranberry juice. Mix well then refrigerate. Serve when
well chilled. Note: Apple dumplings may be served in this soup.

2 c long-grain rice — uncooked
1 tbsp Fleischmann’s® Fat Free Spread
2 egg whites — whipped
1/4 c fat-free parmesan cheese
—-Sauce Toppings—-
1 1/2 c Homemade Italian Sauce
1 c mushrooms — sliced
2 c low-fat polish sausage — sliced
8 ozs fat-free mozzarella cheese — grated
Preheat oven to 400. Prepare a jelly roll pan with cooking spray. In a
mixing bowl, combine rice, spread, egg whites, and parmesan cheese; mix
well. Press evenly onto prepared pan. Spread sauce over crust. Top with
mushrooms, polish sausage, and mozzarella cheese. Bake for 20 minutes or
until crust is lightly browned.

1 1/2 cups flour
1/2 cup sugar
1/2 cup cornstarch
1 cup butter
Preheat the oven to 300 degrees. Mix together the dry ingredients. Melt
the butter and stir into the dry ingredients. Press into a circular pan
with a fork (the tines of the fork will give the top of the cookies an
invitingly crumbly texture). Bake at 300 degrees for 40 minutes.
Cut into wedges while the cookies are still hot, but wait until they have
cooled completely to remove them from the pan. Enjoy!
