CHAYOTE CAVIAR SALAD

1 TB minced shallots
1 TB Dijon mustard
1/2 TB thin soy sauce
2 TB lemon juice
1/2 ts ground white pepper
3/4 c canola or neutral oil
2 chayote julienned
1/8 c red bell pepper brunoise
1 oz Osetra caviar
1 TB chive batons

Combine first 5 ingredients and slowly whisk in oil.
Toss 3/4 of vinaigrette with chayote and peppers.
Combine the rest of the vinaigrette with the caviar
and chives. Cover plate with thinly sliced gravlox.
Place small amount of salad in the middle. Drizzle
with vinaigrette. Yield: 12 to16 portions.

  • Stuffed Cabbage with Sweet and Sour Sauce

    ROLLS:
    1 head green cabbage — about 3 lbs
    2 pounds extra lean ground beef
    1 medium potato — peeled and grated
    1 small onion — chopped
    2 large eggs — lightly beaten
    1/2 cup ketchup
    1/2 cup matzo meal — or bread crumbs
    1/2 cup water
    1 bay leaf
    Salt and pepper — to taste

    SAUCE:
    16 ounces tomato sauce
    1/3 cup brown sugar
    14 ounces cranberry sauce
    1/4 cup lemon juice
    1 tablespoon lemon juice — additional

    Combine all sauce ingredients and mix in blender or food
    processor with metal blade.Pour into a 4-qt ovenproof stewing pot
    and let simmer over medium heat while you prepare the cabbage balls.

    Core the cabbage. Pull off as many leaves as possible til they become
    too small to hold filling. Bring 1 cup of water to a boil, place the leaves
    in the water, cover, turn to simmer, and let cook for 10 minutes til soft,
    or microwave with 1/4 cup water on HIGH for 6 minutes. Drain.

    Combine ground beef, grated potato, chopped onion, eggs, ketchup,
    matzo meal (or bread crumbs) and 1/2 cup water.
    Mix well. Season with salt and pepper.

    Fill the cabbage leaves by placing about 1 tablespoon of the ground
    meat mixture in the middle of each leaf. Fold over the sides
    and roll the cabbage ball away from you.

    Place seam side down in the simmering sauce.
    Continue til all the cabbage leaves have been used.
    (If you have some ground beef balls left over, just add them to the sauce.)

    Cut up remaining small pieces of cabbage and distribute them evenly over
    the top of the balls. Add the bay leaf. Check for seasonings.
    (You may wish to add more lemon juice, cranberry sauce or brown sugar,
    according to your taste.)

    Simmer, covered on top of the stove for 20 minutes.

    OVEN: 350
    Bake uncovered for 20 minutes more to brown the top.

    NOTES : Excellent..lots of extra ground meat..made lots of meatballs and cooked
    in same pot..freezes well..used ground turkey…can reduce lemon juice…

  • Caramel Shortbread

    Title: CARAMEL SHORTBREAD

    1.00 c All-purpose flour 0.50 c Icing sugar
    0.50 c Butter or margarine 0.50 c Butter or margarine
    0.25 c Corn syrup (dark is best) 1.00 ts Unflavored gelatin
    0.67 c Sweetened condensed milk

    An upside down toffee-like confection.

    First Layer: Measure first 3 ingredients into bowl. Crumble together well.
    Press in ungreased 8 x 8-inch pan. Bake in 350 F oven for 20 to 25 minutes.
    Cool.

    Second Layer: Melt the scond amount of butter and corn syrup in heavy
    saucepan. Measure sugar in cup. Stir in gelatin to mix thoroughly. Add to
    saucepan stirring to dissolve. Add condensed milk. Stir, bringing to a
    boil. Boil 4 minutes stirring constantly. It burns very easily when
    boiling. Remove from heat. Beat with spoon until it thickens and gets
    blobby. You will need to take a moment’s rest now and then as you beat.
    Pour over first layer. Chill overnight. Invert on plastic wrap. This makes
    it much easier to cur through to the bottom. Cut into 25 squares.

    1 pound bulk pork sausage or ground beef
    2 cloves garlic — minced
    3 to 4 tsps. chili powder
    1/2 teaspoon cumin
    1 to 2 cans red kidney beans — drained
    1 cup chopped celery
    1 cup chopped onions
    1/2 cup green bell pepper — chopped
    1 pound can tomatoes — cut up
    10 ounce can tomatoes with green chilis — Mexican style
    1 cup tomato juice or vegetable juice cocktail
    6 ounce can tomato paste
    1/4 teaspoon salt
    shredded Cheddar cheese
    sour cream

    In skillet, cook sausge or ground beef and garlic until brown. Drain fat. Stir
    in chili powder and cumin. Cook for 2 minutes longer. Meanwheil, in crockpot,
    combine beans, celery, onion, green pepper, tomatoes, tomatoes with chili
    peppers, juice, tomato paste and salt. Stir in browned meat mixture. Cover and
    cook on Low for 10-12 hours or on High for 4-5 hours. Ladle chili into soup
    bowls. Pass cheese and sour cream for topping.

  • Title: Impossible Greek Spinach Pie

    1/2 c Green onions;chopped
    1 tb Butter
    1 pk Spinach; thaw drain
    1/2 c Cottage cheese
    1 c Milk
    1/2 c Bisquick
    3 Eggs
    1 ts Lemon juice
    1/4 ts Pepper
    3 tb Parmesan cheese
    1/4 ts Nutmeg

    Layer spinach, onions and cottage cheese in greased dish. Put rest in
    Blender. Pour over cheese. Bake at 350 for 35-45 min until tests clean with
    knife.

    Title: Old Fashioned Coconut Oatmeal Cookies

    1 c Butter
    1/2 c Brown sugar
    1 c Flour
    1/4 c Wheat germ
    1 ts Baking powder
    1 1/2 c Chocolate chips or raisins
    1 c Granulated sugar
    1 Egg
    1 c Old mill oates
    3/4 c Coconut
    1 ts Baking soda

    Cream butter, sugars and egg together thoroughly. Add flour, oats,
    wheat germ, coconut, baking powder and baking soda. Mix well. Stir
    in raisins. Drop by teaspoonfuls onto lightly greased baking sheets.
    Flatten slightly with floured fork. Bake at 350 degrees for 12-15
    minutes or until golden. Makes about 3 dozen.

    Title: Pasta and Bean Soup

    1/2 c Elbow macaroni,shells, etc 15 oz Can Chick Peas, drained *
    2 tb Safflower oil 16 oz Can Kidney beans,
    drained *
    1 x Med Onion, chopped 3/4 ts Black pepper
    1 x Clove Garlic, minced 1/2 ts Summer savory
    1/2 x Green Bell Pepper, chopped 1/2 ts Thyme leaves
    3 c Vegetable stock or water 1 ds Cayenne Pepper
    6 oz Can Tomato Paste (2/3 cup)

    * rinsed well, then drained
    GARNISH: grated Parmesan cheese, optional
    Cook pasta in boiling water for about 6 minutes, until al dente.
    While pasta is cooking, in Dutch oven or 4-5 qt saucepan, heat oil. Stir
    in onion, garlic, and green pepper. Saute till tender. Stir in remaining
    ingredients except macaroni. Cover and cook for 10 minutes. When pasta is
    done, drain well. Stir into other ingredients. Heat. Garnish if desired.
    Variations: – substitute or add other vegetables such as chopped sweet red
    shredded carrot to sauteed veggies; substitute 1 t basil and 1 t oregano
    for savory, thyme, and cayenne pepper.

  • Apple Kuchen

    Title: APPLE KUCHEN

    1/2 c Butter, melted
    1/2 c (+4tbs.) sugar
    1 c All-purpose flour
    1 ts Baking powder
    1 ts Vanilla extract
    1 Egg, beaten
    8 lg Granny Smith apples,>>>>
    Peeled, cored, cut in>>>>>
    Thick slices.
    1/4 ts Cinnamon
    3 tb Slivered almonds

    Preheat oven to 350 F. In a large bowl, mix together the butter, 1/2 cup
    sugar, flour, baking powder, vanilla extract and egg.

    Pour half the batter into a greased 8″ square baking pan and spread to
    cover bottom. In another lge. bowl, toss the apple slices with the
    remaining 4 tbs. cugar and cinnamon, then place on top of the batter in the
    baking pan.

    Spread the remaining batter over the apple mixture. Bake for 20 minutes,
    then sprinkle with almonds and bake for 30 min. more.

  • Steamy Smoked Oyster Dip

    Title: STEAMY SMOKED OYSTER DIP

    1 tb Butter Or Regular Margarine
    1/2 c Almonds; Sliced
    1 c Cream Cheese; Softened
    1 tb Milk
    1 x Black Pepper; To Taste
    1 1/2 ts Horseradish; Prepared
    2 tb White Onion; Chopped
    7 oz Smoked Oysters; *

    * Use two 3.6 oz cans of smoked oysters, rinsed,
    drained and mashed
    with a fork.

    ++++++++++++++++++ Melt the butter in a frying pan.
    Brown the almonds, on all sides, in the melted butter
    and set aside. Beat the cream cheese until smooth
    then blend in the milk. Add the pepper to taste,
    horseradish, and chopped onion, blending well. Fold
    in the oysters and pour into a casserole dish.
    Sprinkle the browned almonds on the top and bake at
    375 degrees F for 20 to 30 minutes or until bubbly.
    Put in a chafing dish and serve hot. Makes about 2 1/4
    cups of dip. SUGGESTED DIPPERS: Potato Chips,
    Tortilla Chips, Cheese Crackers, Bell Peppers, Fennel,
    Zucchini

  • Four Happiness Meatballs

    Recipe

    Title: FOUR HAPPINESS MEATBALLS

    Yield: 6 servings

    Meatball Mixture:
    1 1/2 Inch cube ginger, minced
    1 lb Ground pork
    2 Chopped scallions
    8 Chopped water chestnuts
    3/4 ts Salt (or to taste)
    1 tb Corn starch mixed with 3
    -Tb water
    4 ts Soy sauce
    1 tb Dry sherry
    1 Egg
    Casserole Base:
    1 1/2 lb Bok choy
    3 tb Cooking oil
    1 tb Soy sauce or to taste
    1 ts Sugar
    1 tb Dry sherry

    Mix together ingredients for the meatballs. Shape the
    mixture into 4 large meatballs.

    Wash and remove all the sandy particles from bok choy.
    Cut crosswise into 2 inch sections.

    Heat 3 Tb oil in a wok. Fry 2 meatballs at a time
    until both sides are brown (about 3 minutes.) Remove,
    and fry the other 2 meatballs. (Use more oil if frying
    in a saucepan.)

    Remove all but 2 Tb oil from the wok, stir-frying
    vegetables for 1-2 minutes over medium heat. Remove
    wok from the heat.

    Line the stems of the vegetable in the bottom of a
    casserole. Place the meatballs on top, then cover
    with the leaves of the vegetable.

    Add soy sauce, sugar, and sherry; bring to a boil,
    then simmer on low heat with cover on for 30 minutes.
    Serve hot.
