Burned at the Steak Marinade

2 large rribeye steak
4 ounces good seasons italian dressing
2 habanero peppers dried
2 tablespoons worcestershire sauce
1 tablespoon red wine vinegar
1 teaspoon pepper
1/4 teaspoon salt
Make italian dressing, set aside. In a small saucepan boil water and blanch
(2 min.) the habaneros. Remove and cut off stems. remove seeds from one
pepper but save seeds from one of the peppers. Place peppers in a blender and
add all other ingredients. Blend well. Coat steaks generously. Marinate for
3-4 hours. Grill over hot charcoal fire. Look out hot.

Christmas Tree Biscuits

6 oz Plain flour
1/2 ts Bicarbonate of soda
1 t Ground mixed spice
2 oz Butter, chilled and cubed
3 oz Soft light brown sugar
2 tb Golden syrup, heated
1 Egg, beaten
Plain flour for dusting
DECORATION
9 oz Packet coloured fondant
Icing
Glace icing made with 2oz
Icing sugar 2 tspn water
Icing sugar for rolling
Silver balls, sweets,
Desiccated coconut, gold
Thread
Preheat oven to 190′C (375′F). Grease two baking
sheets. Sift the flour, bicarbonate of soda and spice
into a bowl. Rub the butter into the flour until the
mixture resembles fine breadcrumbs. Stir in the sugar.
Add the golden syrup and egg and mix to form a dough.
Gently knead the dough on a floured surface until
smooth, the roll out to 1/4 inch thick. Use christmas
cutters to cut out 16 shapes. Lift shapes on to baking
sheets and bake until just firm to the touch. Make a
hole large enough for gold thread at the top of each
biscuit. Transfer to cooling rack and leave until
cold. To decorate, roll out fondant icing on a clean
surface dusted with icing sugar. Cut out shapes with
cutters and place on biscuits, securing them with a
little water. Make a hole for thread as before.
Decorate with piped glace icing, silver balls, sweets
or coconut. Thread each biscuit with gold thread and
hang on Christmas tree, if liked.

Chilled Watercress Bisque

1 Can quick-frozen cream of potato soup
1 soup can milk
2 C. washed — drained finely cut
watercress
Thaw soup a little by placing opened can in a pan of hot
water. Pour into glass container of electric mixer or blender
or food processor. Add milk and watercress. Blend until
smooth. Refrigerate until well chilled. Just before serving,
pour into blender again and blend a few seconds. If too thick,
add a little cold milk or cream. Serve in chilled soup cups.
Makes 3 or 4 servings.

Cranberry-Apple Strudle

6 Granny Smith apples
6 tablespoons unsalted butter
1/2 cup plus 1 tablespoon sugar
1 teaspoon cinnamon
Pinch allspice
Pinch nutmeg
3/4 cup sweetened dried cranberries
1 1/2 teaspoons cornstarch dissolved in 2 Tbs cold water
5 sheets (14-by-18-inch) phyllo dough
Peel, core and quarter the apples. Cut each quarter in half
and then each wedge into three pieces (you will have apple
chunks).
In a heavy-bottomed 12-inch frying pan, melt 3 tablespoons
of the butter over medium-high heat. Add the sugar and
cook, stirring, until the butter and sugar melt together,
turn light brown and have the consistency of peanut butter.
Add the apples car efully (the sugar mixture is very hot).
With a wooden spoon, mix the apples carefully with the
caramel. The caramel will harden; don’t worry, it will melt
again. Mix together the cinnamon, allspice and nutmeg and
sprinkle evenly over the apples. Cook the apple mixture,
stirring often, until the caramel melts and the apples
soften and start to look cooked.
Stir in the cranberries and the cornstarch mixture. Cook
for 2 to 3 minutes, until the juices in the pan thicken and
take on a glossy appearance. Transfer the apple-cranberry
mixture to a shallow dish and let cool.
Preheat the oven to 350 degrees. Line a baking sheet that
has a raised rim all around with parchment paper.
Melt the remaining 3 tablespoons of butter. Lay a sheet of
phyllo on the prepared baking sheet. Brush the phyllo sheet
lightly with the melted butter. Place the next sheet of
phyllo on top and brush it with butter. Repeat with the
remaining sheets, but do not butter the top sheet. Reserve
a bit of melted butter to brush on top of the finished
strudel. Place the apple-cranberry mixture in a strip along
the long side of the phyllo, about 1 inch in from the edge.
Using the parchment to help keep th ings together, roll up
the phyllo to form a long log. Adjust the roll’s position
on the baking sheet so it is not touching the sides of the
sheet. The roll will leak while it cooks, so make sure it
is on the parchment paper. Brush the top of the roll with
the reserved melted butter. Bake in the preheated oven for
25 to 30 minutes, until the roll is nicely browned. Let it
sit at least 15 minutes before serving.
Per serving: 247 calories, 2 gm protein, 43 gm
carbohydrates, 9 gm fat, 19 mg cholesterol, 5 gm saturated
fat, 96 mg sodium

NOTES :
This is a delicious alternative to the traditional pie. The
only sticking point (literally) is in trying to get the
strudel off the baking sheet when it’s done. The easiest
method is to leave the strudel on the parchment paper and
move it onto a plat ter with the parchment still beneath
it, cutting away the excess. If you don’t want to risk
breaking the strudel, slice and plate it in the kitchen, or
make individual strudels, which are easier to handle.

COLESLAW WITH GREEN APPLES

1 tb Apple juice concentrate

1/4 ts Salt
1/4 ts Freshly cracked black pepper
Shred the cabbage, carrot, and apples in a food processor or with a hand
grater over a large bowl.
Whisk together the remaining ingredients. When well blended, pour over
the cabbage mixture. Allow to marinate for 30-40 minutes or longer. This
can be made up to 1 day in advance.

1 c Dry instant mashed potatoes
8 Canned anchovy fillets,

1 tb Chopped parsley
1/2 ts Salt
1/2 ts Dry mustard
1/4 ts Pepper
1/8 ts Mace
1 Egg yolk
1 c Bread crumbs
Oil for deep frying
Add boiling water to instant mashed potatoes. Add
finely minced anchovy fillets, flour, parsley, salt,
mustard, pepper and mace; mix well. Form into
walnut-sized balls, coat with beaten egg yolk, then
bread crumbs, and deep fry in hot oil (375F) a few at
a time until golden brown.

1. Cream together butter and sugar until fluffy. Blend in molasses and
egg. Sift together dry ingredients; add to butter mixture and beat well.
2. Chill dough for at least 1 hour.
3. Heat oven to 350.
4. Form dough into 1-inch balls and roll in sugar.
5. Bake for 8 – 10 minutes. Let cool on baking sheets for at least 3
minutes, until cookies are set.

2 qt Whole milk
5 x Eggs
1 1/4 c Sugar
3/4 c Flour, plain
1 ts Vanilla extract
2 tb Whiskey or Extract
2 tb Brandy or Extract
1 tb Nutmeg
Scald all but 1/2 cup milk in top of a large double boiler. Separate eggs.
In a large bowl, beat yokes well while adding 1 cup sugar and flour sifted
together and 1/2 cup cold milk. Add hot milk slowly to mixture, stirring
well. Put back into double boiler and cook until thickened, stirring
constantly. Remove from heat, add wiskey, brandy and vanilla. Place nutmeg
on bottom of a large baking bowl. Beat egg whites while slowly adding 10
tablespoons sugar until foam peaks. Place on top of custard mix. Bake at
350F about 10 minutes or top turns golden brown. Chill before serving.

1 tb Milk
3/4 c Finely chopped walnuts

Melt the chocolate over hot water. Sift the flour, baking soda, and
baking powder together, set aside. In the bowl of a mixer, cream the
butter. Add the sugar slowly and continue to beat. Add the vanilla, then
the eggs 1 at a time. Add the chocolate and stir to blend. Stir in the
dry ingredients and the milk by hand. When just blened, mix in walnuts.
Cover and refrigerate dough for 30 mintues before rolling.Preheat oven
to 375*. Lightly grease a cookie sheet. To form the cookies, scooop out
a portion of dough and rool out on a well-floured surface. When dough is
1/4 inch thick, cut it into rounds or other desired shapes. Re roll
scraps and cut agian. Place on cookie sheet (leave room for expansion)
and bake for 6 to 8 minutes. Don’t let theese cookies overborwn

Process apples with lemon juice in a food processor using the steel
blade. When the mixture is smooth, add sugar, apple cider and/or the
liquor. Process until everything is well blended. Freeze in an ice
cream maker.
