    4                    Potatoes &#8212; lg<br />
    2      teaspoons     Margarine &#8212; or<br />
    2      teaspoons     Butter &#8212; sofftened<br />
    1      cup           Cheese Montery Jack &#8212; with Jalapeno Pepper<br />
    4                    Bacon slices &#8212; crisp crumbled</p>
<p> Prick Potatoes with fork to allow steam to escape.  Bake potatoes in 425F oven<br />
 until tender, about 1 hour. Cool slightly Cut each potatoe lengthwise into<br />
 halves, scoop out insides, leaving a 3/8 inch shell.  Spread inside of shells<br />
 with margarine or butter, sprinkle with salt.  Cut each potatoe into six<br />
pieces,<br />
 sprinkle with cheese and bacon.<br />
 Set oven control to broil or 550F.  Broil potatoe pieces about 5 inches from<br />
 heat until cheese is melted, about 2 minutes.<br />
 Makes 48 appetizers.</p>

       Yield: 6 servings</p>
<p>       1    Orange; grated peel only                 -or under a spoon<br />
       4 tb Fresh orange juice                  5 tb Olive oil<br />
       4 ts Lemon juice                         1 tb Hazelnut oil<br />
       1 ts Balsamic vinegar                    1 tb Chives<br />
     1/2 ts Salt                                     &#8211; sliced into narrow rounds<br />
       3    Scallions; white parts only         1 tb Chervil or fennel leaves<br />
            &#8211; minced                                 -(chopped)<br />
     1/4 ts Fennel seeds                        1 tb Parsley, finely chopped<br />
            -crushed in a mortar           </p>
<p>   PUT THE ORANGE PEEL, orange juice, lemon juice and vinegar in a bowl with<br />
   the salt, scallions and crushed fennel seeds. Whisk in the oils, then the<br />
   herbs. Taste, and adjust any of the ingredients if necessary. The dressing<br />
   should be fresh and sparkly.</p>

   Servings:  4</p>
<p>     1/2 lb ground beef, crumbled               1 c  frozen cut green been<br />
       1 ea medium onion                    1 1/2 c  broken spaghetti (uncooked)<br />
       1 ea clove garlic minced                 1 t  parsley flakes<br />
       4 c  beef stock                        3/4 t  salt<br />
       1 t  olive oil                         1/8 t  pepper<br />
       1 ea can sliced mushrooms                1 ea bay leaf<br />
       1 ea can tomato sauce                  1/2 t  oregano</p>
<p>   In  large  casserole  combine  ground  beef,  onion,  garlic,  and  oil.<br />
   Microwave  at  high until meat is no longer pink,  stirring once  during<br />
   cooking.  Drain.</p>
<p>   Add remaining ingredients.   Cover.  Microwave at high till spaghetti is<br />
   done (around 20 to 25 minutes).  Stir occasionally.</p>
