Title: CHICKEN AND CASHEWS

Yield: 6 servings
1 ts Chicken bouillon granules
3/4 c Hot water 3/4 c. carrots,
-cut diagonally
1 tb Cornstarch 1/2 onion, cut
-into 1 inch pieces
1 tb Soy sauce 1 6 oz. package
-frozen peapods
1/4 c Cold water 1 jar sliced
-mushrooms
2 tb Oil 1/3 c. whole cashews
2 Whole chicken breasts, boned
-and cubed
Hot cooked rice
Dissolve granules in hot water. Stir cornstarch and
soy sauce into cold water; set both mixtures aside.
Stir fry chicken in oil till opaque. Add carrots and
onion, stir fry 1 minute. Add bouillon, cover.
Simmer over medium heat 3-4 minutes. Add pea pods,
mushrooms and soy sauce mixture. Stir fry till it
thickens. Stir in cashews. Serve over hot rice.

Title: French Lace Cookies

1/2 c Light corn syrup
1/2 c Shortening
2/3 c Packed brown sugar
1 c All-purpose flour*
1 c Finely chopped pecans
*do not use self-rising

Heat oven to 375 degrees. Grease cookie sheet lightly. Heat corn syrup,
shortening and brown sugar to boiling in 2-quart saucepan over medium
heat, stirring constantly; remove from heat. Gradually stir in flour and
pecans. Drop batter by teaspoonfuls about 3 inches apart onto cookie
sheet. (Keep batter warm by placing saucepan over hot water; bake only 8
or 9 cookies at a time.) Bake about 5 minutes or until set. Cool 3 to 5
minutes; remove from cookie sheet. Drizzle with melted chocolate if
desired. ABOUT 4 DOZEN COOKIES; 65 CALORIES PER COOKIE.

Title: CASEY JONES ONE DISH SUPPER

1/2 Loaf frozen white bread
-dough, thawed (1 lb size)
1 1/2 lb Lean groun beef
1/4 c Chopped onions
1 cn (4oz) sliced mushrooms,
-drained
1 Ca n (8oz) tomato sauce
2 tb Catsup
1 ts Beef soup mix (or beef
-boullioun mix ie Oxo)
1/4 ts Oregano
1/4 ts Thyme
1/4 ts Basil
1/4 ts Parsley
1/8 ts Black pepper
1 Egg beaten
bacon flavored bits
Brown beef and onions in Dubtch over. Drain if necessary. Add next 9
ingredients. Cover, simmer 15 minutes. Remove from stovetop and cool
to warm. Divide dough into 20 pieces and place on top of warm beef
mixture. Cover with clean towel and let rise 30 minutes or until
pieces of bread dough have doubled in size. Lightly brush dough with
beaten egg. Sprinkle with bacon flavored bits. Bake uncovered at 375
F for 25-30 minutes. Makes 8 servings. (Remaining bread dough can be
made into rolls.)

2 c Fresh mushrooms,
Chopped fine
1/4 ts Sugar
1/2 tb Worcestershire sauce
1 t Garlic minced
Saute onion in butter until transparent. Add the remaining
ingredients to skillet and cook over medium-high heat until liquid is
gone.
This mixture is great as a stuffing for boneless breasts of chicken or
veal. Add a little gouda cheese and viola!~ Freezes well too.

Title: SARAH SMITH’S FIG-STRAWBERRY PRESERVES

3 c Figs, mashed
3 c Sugar
2 pk Strawberry Jello (3 oz pkg)
Thoroughly mix figs, Jello and sugar in a large saucepan. Bring to
a boil over medium heat and continue boiling for 3 minutes, stirring
occasionally. Pour quickly into glasses and seal or cover with 1/8
inch of paraffin.

EASY CROCKPOT BEEF DINNER

1 lb Chuck or other cut beef
1 Onion — sliced
2 Garlic cloves — chopped
2 Carrots — sliced
2 Celery stalks — diced
1 cn Stewed Tomatoes — 14.5 oz.
1 pk Lipton Onion/Mushroom Soup
1 tb Kitchen Bouquet
1 tb Worcestershire sauce
1 cn Mushrooms (optional)

2 tb Flour
Add the onion, garlic, carrots, celery to the crockpot. Place meat on
top of vegetables. Add the Worcestershire sauce, Kitchen Bouquet,
dry soup mix. Last, pour the stewed tomatoes over the top. I cooked
this on Low heat for 7 hrs then added the mushrooms and let it cook
for an hour or so more. When done, remove the meat and if a thicker
gravy is desired, stir in 2 T flour and set crockpot to high while
stirring for a minute or so. Serve with rice or noodles. (Or can add
cut up potatoes with the vegetables)

THOSAI

250 g Black gram
1/4 ts Fenugreek
2 5 g onion
1 Fresh chilli
100 g Rice flour
250 g Parboiled rice
1 t Salt
-pinch turmeric
50 ml Oil
-sprig curry leaves
1 t Cumin
Soak the black gram and tenugreek in water until soft.
Chop the onion and chilli. Drain the gram and
fenugreek and liquidise with the rice flour, rice and
sufficient water to make a batter. Add the salt and
turmeric. Heat 25 ml oil and fry onion, chilli, curry
leaves and cumin, then add to the batter. Reheat the
pan, add a little oil and pour in batter to make a
thin pancake. When little holes appear on the thosai
turn it over and cook on the other side for a minute
or two. Repeat process until all the batter is used

1/2 t Baking Powder

2 T Milk

Heat Casera Sauce and broth to boiling in a 3-quart saucepan. Mix
remining ingredents except milk; stir in milk. Shape dough by
teaspoonfuls into small balls; add to broth mixture. Cover and cook over
medium heat 15 minutes. Sprinkle with chopped green onion, if desired.

1 x Salt pepper
Heat the oysters in their liquor about 5 minutes until the edges curl.
Skim off the top. Combine oysters and liquor with the scalded milk,
add the butter and the seasoning to taste. Serve immediately.
