Asparagus Pimento

Title: Asparagus Pimento

Yield: 4 Servings

1 lb To 1 1/4 lb fresh Asparagus;
1 c Water
2 tb Fresh lime juice;
1/4 c Diced pimento;
1 tb Toasted pine nuts;

Rinse asparagus and snap off tough ends. In a large skillet, bring
to a boil and add asparagus. Cover and steam asparagus until bright
green, 2 to 3 minutes. Remove from heat, drain and arrange on a
platter. Sprinkle with lime juice; garnish with pimento and pine
nuts. Serve warm or chilled.

NOTE: Substitute red bell pepper for the pimento…

2 Cups Cottage Cheese — 2% Fat
3/4 Cup Soft Whole Wheat Bread Crumbs
1/2 Cup All-Purpose Flour
1/3 Cup Parsley — Snipped
1/3 Cup Green Onion — Chopped Fine
2 Tablespoons Margarine
1/4 Teaspoon Salt
4 Eggs
1 Tablespoon Parsley — Snipped

In a medium mixing bowl combine cottage cheese, bread crumbs, flour, 1/3 cup
parsley, green onion, margarine and salt. Set aside.
In a large mixing bowl beat eggs with an electric mixer on high speed about
minutes or till thick and lemon colored. Gradually pour the cottage cheese
mixture over the beaten eggs, folding to combine.
Pour the egg mixture into a greased 5 or 6 cup souffle dish or casserole.
Bake in a 350 degree oven about 1 hour until a knife inserted near the
center comes out clean. Sprinkle with 1 tablespoon parsley. Serve
immediately. Serves 6.

NOTES : This airy baked casserole resembles a souffle, but without all the
fuss.

Title: EGGSQUISITE EASTER BASKETS

4 Shredded wheat biscuits
-crumbled
3/4 c Peanut Butter
3/4 c Butterscotch chips

Mix peanut butter and chips over low heat or place in microwave until
melted. Add shredded wheat.
Cool slightly, then mold into baskets – wonderfully yucky! Try shaping
over back of bowl.
Place baskets in fridge to set.
Fill nests with Easter eggs and/or candy. Little nests filled with
jellybeans are delightful.

Title: Never Fail Biscuits

5 tb Shortening
3/4 c Milk
2 c Flour
3 ts Baking powder
1 ts Salt

Sift dry ingredients, Cut in shorteneing very finely. Add milk. Toss
on a floured board. Knead lightly, roll, cut and put on greased pan.
Bake in 400 F. oven for 20 minutes.

1 c Shortening
1 c Grated carrots
1 c Sugar
3 ts Baking powder
1 pn Salt
3 Eggs
Apricots lemon juice
Spices – whatever you’d
-like (nutmeg — cinnamon…
10 oz Dried apricots
20 oz Pineapple in its own juice
-(1 can)
1/2 Lemon
1/2 c Sugar
1 ts Ground cardamom
3 ts Poppy seeds

Mix eggs well, add oil and mix well. Add salt and baking powder to to this
mixture. Add the remaining ingredients and knead. Refrigerate for at least
several hours.

Roll out in small circles to make the filled triangles. Bake in a hot oven
(375-400 degrees F).

Apricot Puree index{apricots!apricot puree}

Put apricots in a bowl, cover with water. Soak for a few hours. If the
apricots are sour, add honey or sugar. Add a few drops of lemon juice and
any other spices you’d like. (Cinnamon, nutmeg, clove, etc. Experiment!)

Cook over a low flame until the apricots are soft and the water is thick.
Transfer to a food processor or blender and mash well.

The puree may be refrigerated. It should be spooned onto the dough before
the dough circles are folded into the triangular hamentaschen.

Simmer the apricots in the juice from the pineapple and lemon until soft.
Blend everything in blender or food processor until smooth with some
chunks. Let cool and chill before using.

Spaghetti With Garlic and Oil

1/2 cup White wine
Salt and pepper to taste
1/4 cup Olive oil
1 16 ounce Thi spaghetti- cooked
1/4 Stick butter
according to dir.
3 tablespoon Chopped garlic
Gratd cheese for serving
2 tablespoon Fresh chopped parsley

Melt the butter in olive oil. Add garlic and sautee for 5 min on low. Add wine
and simmer for 5 min. Toss with pasta and garnish with parsley. Serve hot with
grated cheese on the side. Serve with crusty bread and salad.

Title: THE STRAUSS FAMILY’S TIPSY SQUIRE PUDDING

20 Ladyfingers or strips
-of sponge cake
1 1/2 c Blanched, split almonds
1/2 lb Golden raisins
1/2 c Plus 2 tbs bourbon, divided
3/4 c Sugar
3 tb Cornstarch
2 tb Flour
1/4 ts Salt
4 c Milk, scalded
3 Eggs, separated
1 ts Vanilla extract

Line bowl with ladyfingers on bottom and sides in a
single layer and set aside. Reserve remaining
ladyfingers. In a medium-size bowl, soak almonds and
raisins in 2 tablespoons of bourbon and set aside.
Scald milk (heat until bubbles form at edges) and set
aside. Combine sugar, cornstarch, flour and salt in
top of a double boiler over simmering water on
medium-high heat; whisk in scalded milk, stirring
well. Reduce heat, cover pan and cook for 15 minutes,
stirring often. Beat egg yolks and egg whites in
separate bowls with clean beaters.
Remove pan from heat and pour a little of the milk
mixture over the egg yolks. Mix well then return egg
mixture to pan. Cook for 2 minutes longer, whisking
constantly until smooth. Whisk in vanilla and
remaining 1/2 cup of bourbon. Fold in beaten egg
whites. Pour one-third of the custard over ladyfingers
in bowl. Sprinkle with one-third of the almond/raisin
mixture, then add a layer of ladyfingers on top.
Repeat layers until bowl is almost full, finishing
with a layer of lady fingers. Garnish as desired.

MUSHROOM AND CHEDDAR CHEESE SOUP

1 1/2 lb Dried porcini mushrooms *
2 tb (1/4 stick) unsalted butter
6 oz Fresh shitake mushrooms,
– stems removed, sliced
1 bn Green onions, chopped
2 tb All-purpose flour
2 c Canned chicken broth
2 c Milk
1 1/4 c Packed grated sharp
– Tillamook cheddar cheese

Cover porcini with hot water and soak 30 minutes. Drain.

Melt butter in heavy large saucepan over medium-high heat. Add shitake
mushrooms and green onions and saute’ until tender and beginning to brown,
about 5 minutes. Gradually mix in broth and milk. Add porcini. Bring to
simmer, stirring frequently. Reduce heat to low and simmer unti thick,
stirring occasionally, about 20 minutes. Add cheese and stir just until
melted. Season with salt and pepper. Garnish with parsley and serve.

* Porcini are available at Italian markets and specialty foods stores.

    1 Celery — large bunch
    1 Onion — small chopped
    1/2 cup Pinenuts — toasted
    4 tablespoons Butter — Salt pepper
    1 tablespoon Parsley — chopped italian

    Wash celery, cut into diagonal pieces, 1″ long. Melt butter in saucepan
    and add onions and celery. Cover and cook, shaking pan till celery is
    tender-crisp, about 15 minutes. Remove lid, stir in salt pinenuts,
    serve immediately.

    Rice rolls

    Take an umeboshi plum and chop it into little pieces distributed through
    the rice. Lay some of this rice out on a piece of sushi nori (that’s nori
    sheets that have been roasted), and roll it up closing the ends. Do this
    while the rice is still warm and it sticks together perfectly. When you bite
    a piece off, the seaweed wrapper closes itself with help from your teeth so
    the rice doesn’t fall out.
