2 c Swiss cheese; shredded
1/2 c Mayonnaise
1 c Sauerkraut; rinsed draine
2 ts Butter
1 c Corned beef; chopped, 12 oz
1/4 c Thousand island dressing or:
1/4 c Mayonnaise dash ketchup,
-relish
2 Tomatoes; sliced (optional)
1 Green pepper; cut in rings
1/4 c Bread crumbs

Fat grams per serving: Approx. Cook Time: :12
Put sauerkraut in buttered 1 1/2 casserole dish. Top with corned beef,
broken into bits, then cheese. Combine mayonnaise and Thousand Island
dressing (or substitute made with mayo, ketchup and relish) to equal 3/4
cup ) and spread over cheese. Top with tomatoes or green pepper. Melt
butter in microwave and blend with bread crumbs, spread over top. Cook 12
minutes on HIGH (100%).

    Amount Measure Ingredient — Preparation Method

    6 large eggs
    1/2 cup green onions — chopped
    1/2 teaspoon pepper
    1/2 teaspoon salt
    6 ounces Swiss cheese — grated
    3 cups cooked potatoes — peeled and diced
    4 ounces ham — diced
    1/2 cup green bell pepper — chopped
    1/2 cup half and half

    Preheat oven to 350 degrees F. Generously butter 9-inch pie dish. Whisk
    eggs, onions, salt and pepper in large bowl. Add potatoes, cheese, ham, bell
    pepper and half and half. Stir to blend. Pour into prepared dish. Bake until
    set, about 1 hour 20 minutes. Cut into wedges.

    2 cups Brown beans
    4 cups Cornmeal
    1/2 cup Flour
    1 teaspoon Soda

    Boil beans in plain water until tender. Put cornmeal, flour and soda in large
    mixing bowl. Mix well. Add boiling beans and some of the juice to the cornmeal
    mixture to form a stiff dough. Roll in balls and drop in pot of boiling hot
    water. Let cook for 30 minutes at slow boil.

    3 c Fresh orange juice

    instant breakfast drink powder may be substituted for the pudding
    stuff.

    BASIC BISCUIT CRUST

    1 3/4 c Unbleached or whole wheat
    -pastry flour
    1/2 ts Salt
    2 ts Baking powder
    1/2 ts Baking soda
    1 tb Safflower or soy margarine
    3/4 c Soy milk
    2 ts Honey or maple syrup

    Sift flour, salt if desired, baking powder, and
    baking soda into a large bowl. Using a pastry blender
    or fork, cut the margarine into the flour mixture
    until it resembles coarse meal. In a measruing cup,
    combine soy milk and honey or syrup. Add the liquid
    mixture to the flour mixture, stirring with a fork to
    form a stiff dough. Add more buttermilk if dough is
    too dry.
    Knead lightly in bowl, about 3 to 5 minutes, until
    the dough is no longer sticky. Thenturn out onto
    lightly floured surface.Rollout into desired shape.
    Makes enough crust to cover a 9- by 12-inch baking pan.

    chol; 211 mg sod; 1 g fiber; vegan

  • Title: YOGURT TANDOORI MARINADE.

    Suitable for chicken, fish,
    Lamb and beef.
    10 ml 2 tsp sunflower oil.
    150 ml 5 oz low fat natural yogurt.
    5 ml 1 tsp ground cumin.
    1 1/4 ml Half tsp ground turmeric.
    1 1/4 ml Quarter tsp chili powder.
    5 ml 1 tsp ground coriander.
    5 ml 1 tsp garam masala.
    5 ml 1 tsp paprika.
    1 lg Clove garlic, crushed.

    Mix all the ingredients together and leave to marinade
    for at least one hour.
    Cook over a barbecue, under a grill or in the oven at
    230 c, 450 f, gas mark 8.

    Almond Grape Chicken Salad

    2 pounds boneless skinless chicken breasts — cooked
    1 cup mayonnaise or salad dressing
    1/2 cup sour cream
    1 cup green grapes — halved
    1 1/4 cups toasted almonds
    White pepper
    salt

    Cut cooked chicken breast meat into 1/2 inch cubes and set aside. Blend
    mayo and sour cream in a bowl. Season with salt and pepper as needed.

    Add cubed chicken meat, grapes and almonds and mix lightly, coating chicken.
    Stir gently until blended. Refrigerate 1 hour. Can serve with lettuce
    instead of bread.

    If the salad is too dry, add more mayo.

    Title: Whole Wheat Bagels

    2 pk Dry yeast
    2 c Warm water (105-115 degrees)
    2 tb Honey
    2 c Whole wheat flour
    1 1/2 ts Salt
    3 c All-purpose flour
    = to 3 1/2, divided
    3 1/2 qt Water
    1 ts Salt
    Sesame seeds

    Preparation Time: 0:45
    Dissolve yeast in warm water in a large bowl; let stand 5
    minutes. Add honey, stirring well. Stir in 2 cups whole
    wheat flour and 1-1/2 teaspoons salt; mix well. Gradually
    stir in enough all-purpose flour to make a soft dough. Turn
    dough out onto a heavily floured surface (dough will be
    sticky), and knead until smooth and elastic (8 to 10
    minutes). Place dough in a well-greased bowl, turning to
    grease top. Cover dough, and let rise in a warm place (85
    degrees), free from drafts, 1-1/2 hours or until doubled in
    bulk.

    Punch dough down, and divide dough into 12 equal pieces.
    Roll each into a smooth ball. Cut with 1-inch cutter or
    punch a hole in the center of each ball with a floured
    finger. Gently pull dough away from center to make a 1- to
    1-1/2-inch hole. Place shaped bagels on lightly greased
    baking sheets. Cover and let rise 15 minutes. Broil
    bagels 5 inches from heat 2 minutes on each side or until
    lightly browned. Bring water and 1 teaspoon salt to a boil
    in a large Dutch oven. Reduce heat, and simmer bagels 3
    minutes on each side. Place bagels on lightly greased
    baking sheets. Sprinkle with sesame seeds; lightly press
    seeds into bagels. Bake at 425 degrees for 20 to 25
    minutes or until golden brown. Yield: 1 dozen.
