1 lb Fresh mushrooms
1/4 c Soy sauce
1/2 c Red wine vinegar
6 tb Sherry
4 tb Sugar
1 c Finely minced onions

Mix all ingredients but the mushrooms in a saucepan and bring to a boil.
Pour over mushrooms that have been cleaned and halved or quartered
depending on size. Marinate and chill fo 24 hours before serving. Small
button mushrooms can be used whole.

    Title: Hearty Minestrone

    Yield: 6 servings

    1 lb Hot or Mild Italian Sausage 1 1/2 c Sliced carrots
    2 tb Olive oil 1 1/2 c Frozen cut beans
    1 ea Large onion, chopped 1 1/2 ts Dried basil
    3 ea Large cloves garlic, chopped 1/2 ts Dried Marjoram
    5 c Chicken stock 1 pn Hot Pepper Flakes
    1 cn 28 oz tomatoes, chopped 1 cn 19 oz Romano beans
    1 pk 10 oz frozen spinach, chop 3/4 c Small shell pasta

    Prick the skins of the sausages; place in a saucepan and cover with water.
    Bring to a boil, cover and let simmer for 15 minutes or until cooked.
    Drain; cut into slices. In a large saucepan or dutch kettle, heat oil and
    lightly brown the sausage slices. Add the onions and garlic; cook 2 – 3
    minutes until softened. Add the chicken stock, chopped tomatoes including
    juice, frozen spinach, carrots, beans, basil, marjoram and red pepper
    flakes. Bring to a boil, reduce heat and let simmer, covered, for 10
    minutes or until vegetables are almost tender. Add the romano beans
    including liquid, and the pasta and peas. Let simmer 5 – 7 minutes more or
    until pasta is al dente – tender but firm. Adjust seasoning with salt and
    pepper to taste. Thin soup with additional chicken stock (if you wish).
    Ladle soup into heated bowls and sprinkle with grated Parmesan cheese.
    Serves 6 – 8.

    Traditional Chutney

    Title: TRADITIONAL CHUTNEY

    4 c Ripe mango 1/2 c Lime, seeded and chopped
    1 c Yellow onions 1/2 c Grated fresh ginger
    3 ea Cloves garlic, minced 3/4 c White raisins
    2 c Light brown sugar 1 c Apple cider vinegar
    1/4 c Fresh orange juice 1/4 c Fresh lemon juice
    1 T Whole mustard seed 1 t Dried red pepper flakes
    1 t Ground cinnamon 1/4 t Ground cloves

    Mango: Hard, ripe, peeled, seeded and sliced.
    Place all ingredients in heavy saucepan over medium heat. Bring to boil.
    Lower heat and simmer for about 20 minutes, stirring frequently. Remove
    from heat, cover, and let stand for about 12 hours. Again bring to a
    boil, lower heat, and cook for 15 minutes, stirring frequently. Remove
    from heat and immediately pour into hot sterilized jars. Vacuum seal.
    Makes: 4 1/2 pint jars.

    CHILI BEAN SOUP

    1 lb Pinto beans
    8 c Boiling water
    1 t Garlic salt
    1 t Onion salt
    1/4 ts Thyme
    1/4 ts Marjoram
    10 1/2 oz Can beef broth
    16 oz Can tomatoes
    1 pk (1-5/8 oz)chili seasoning mx
    1 c Hot water

    Rinse, sort and soak beans overnight. drain and empty
    them into a large pot; add boiling water, garlic and
    onion salts, thyme and marjoram. Cover and simmer
    until beans are tender, about 3 hours. (Don’t let
    beans boil dry;add hot water as needed.) Spoon out 3
    cups of cooked beans to use another day in another
    way. Mash remaining beans with their liquid. Add
    remaining ingredients. Heat 10 minutes to blend
    flavors.

    OLD-STYLE WHEAT BISCUITS

    1 c Unbleached white flour
    1 c Whole wheat flour
    2 ts Baking powder
    1/4 ts Lite salt or less or none
    1/4 ts Baking soda
    1/4 c Canola oil
    2 tb Vinegar
    1 c Skim milk

    Preheat oven to 475 degrees. Sift together flours,
    baking powder, lite salt and baking soda. Cut in oil
    until mixture looks like coarse corn meal. Put vinegar
    and milk together in a cup and stir. Stir enough milk
    into flour mixture until soft dough is formed.
    Sprinkle flour on countertop and knead dough. Roll out
    dough to 1 inch thick. Cut with a biscuit cutter or
    glass. Place on baking sheet. Bake about 12 minutes.
    Makes 16 2″ biscuits.

  • Title: Vegetable and Bean Biryani

    1 md aubergine; cubed (large is better, though)
    1 pn salt and black pepper
    4 tb vegetable oil or vegetable ghee
    3/4 ts poppy seeds
    1 ts mustard seeds
    1 pn cayenne
    1/4 ts turmeric
    3/4 ts garam masala
    1/4 ts ground coriander
    1 red pepper; seeded and sliced
    3 oz butter beans; cooked
    2 tomatoes; skinned, seeded chopped
    8 oz long grained brown rice;
    -cooked with saffron (??? expensive or what???)
    1 oz toasted pine nuts
    1 oz raisins
    1 coriander sprig for garnish*

    Place the aubergine cubes in a colander, sprinkle with salt and leave for
    30 minutes. Rinse the cubes and dry.
    Heat the oil or ghee in a large pan. Add the poppy and mustard seeds and
    cook for 2 minutes, stirring.
    Add the cayenne pepper, turmeric, garam masala, coriander, aubergine, red
    pepper, beans, tomatoes and salt and pepper. Cover and cook for about 10
    minutes.
    Layer the rice and vegetable mixture in an ovenproof dish. Cover and cook
    in a preheated moderate oven (180~C, 350~F, Gas Mark 4) for 30 minutes.
    To serve:

    Sprinkle with toasted pine nuts and raisins. Garnish with a coriander
    sprig and serve hot.

    * I’ve never used sprig of coriander – can’t stand it unless it’s ground
    coriander, from a packet! It’s called cilantro in the US, isn’t it?

    EASY MILKY WAY PIE

    1 cn 21 oz. cherry pie filling
    4 ts Lemon juice
    4 ea 1 1/2 oz. Milky Way candy ba
    1/3 c Chopped nuts
    1 ea 9″ pie crust,chilled

    Add the lemon juice to pie filling.Place in pie
    shell.Thinly slice candy bars over top.Sprinkle with
    nuts.Bake in a preheated 450 degree oven for 10
    minutes.Reduce temperature to 350 degrees. Continue
    baking 10 to 15 minutes more.Cool and serve.
