Title: SALSA CUBANO BARBECUE SAUCE

1 md White onion, chopped
5 cl Garlic, chopped
1/2 c Sour orange juice < OR >
1/3 c Lime juice (see note)
1/2 ts Oregano
1/2 ts Cummin seeds
1/4 ts Salt
1/2 c Water
Put onions, garlic, orange juice (or lime juice) and
water in a blender. Set blender on “liquify” setting
and process. Crush all dry ingredients togather and
add them to blender. Process for one minute more.
Marinate meat (chicken, beef, pork or fish) for at
least one hour in mixture. It is better to marinate
meats overnight.
Brush meat frequently with the sauce while
cooking…..Makes 2 Cups.

LENTIL SOUP WITH FRANANKFURTERS

1 c Lentils — dried quick-cooking
6 c Water
2 ea Bacon — slices, diced
1 ea Leek or green onion — *
1 ea Carrot — large, finely
chopped
1 ea Celery — stalk, finely
chopped
1 ea Onion — finely chopped
1 tb Vegetable oil
2 tb Unbleached flour
1 tb Vinegar
4 ea Frankfurters — thickly sliced
1 tb Catsup — tomato
1 t Salt
1/4 ts Black pepper
* Leek or Green Onion should be finely chopped.

++++++++++++++ ++++ Wash the lentils thoroughly. In a
2 1/2-quart saucepan bring 6 cups of water to a boil.
Add the lentils, bacon, leek or green onion, carrot
and celery. Simmer, partially covered, for 30 to 40
minutes. Meanwhile in a frypan, saute chopped onion in
vegetable oil until soft. Sprinkle flour over onion,
and stir. Lower heat, stir constantly, and cook until
the flour turns a light brown. DO NOT burn flour.
Stir in 1/2 cup of hot lentil soup into the browned
flour; beat with a wire whisk until well-blended.
Beat in vinegar. Add contents of frypan to lentil pan
and stir together. Cover and simmer for 30 minutes or
until lentils are soft. Add the frankfurters and
catsup. Cook to heat frankfurters through. Season
with salt and pepper and serve hot.

Title: Creole Beans

1/4 c Celery, sliced
1/4 c Onion, coarsely chopped
1/4 c Green pepper, chopped
1 ts Margarine
1/2 cn Tomatoes (16-ounce can)
– (about 1 cup)
1/8 ts Garlic powder
1/16 ts Salt
1 ds Pepper
1 1/4 c Dried pea (navy) beans
-cooked, unsalted, drained*
2 servings of 1 cup each 60 calories per serving
1. Cook celery, onion, and green pepper in margarine until
tender–about 5 minutes.
2. Break up large pieces of tomatoes. Add tomatoes and
seasonings to cooked vegetables. Bring to a boil.
3. Add beans and return to a boil. Reduce heat, cover, and
boil gently until flavors are blended and liquid is
reduced–about 30 minutes. Stir occasionally to prevent
sticking.
*NOTE: 1-1/4 cups canned navy beans, drained, may be used
in place of cooked dried beans; then omit salt in step 2.
About 202 calories per serving.

Cranberry-Apricot Relish

2 tablespoons unsalted butter
2 whole jalapeno — minced and seeded
1/2 cup red onion — finely diced
2 tablespoons ginger — finely minced
4 cups cranberries
2 cups orange juice — fresh
2 tablespoons light brown sugar
1/2 cup honey
8 ounces dried apricot halves — julienned
1 tablespoon curry powder
salt and pepper
Melt the butter in a medium saucepan over medium heat. Add the jalapenos,
onion,
ginger, and 2 cups of the cranberries and cook for 5 minutes, or until the
cran
berries have popped.
Increase the heat to high, add the orange juice, brown sugar, and honey, and
bri
ng to boil. Reduce heat to medium and simmer for 10 minutes. Add the remaining
2
cups of cranberries and simmer for 5 minutes. Add the apricots, curry powder,
s
alt, and pepper. Mix well and remove the pan from heat. Pour the relish into a
s
hallow non alumininum container and let cool at room temperature. Pour the
mixtu
re into a bowl, cover and refrigerate.

Dill / Lima Bean Rice

Somebody asked about cooking basmatti rice so it isn’t sticky. I use a method
that results in perfect rice every time. I cook it in a non-stick pot on the
stove, not in a rice cooker:
First, be sure to rinse the rice with cold water until most of the starch is
removed and the water pours off pretty clear. Then, add enough water to cover
the rice and boil for about 7 minutes. Test the rice by biting into a few
grains…it should be firm, but not crunchy. Be sure not to over-cook the rice
at this stage (it’s better to have it a little under-cooked).
Drain in a colander and rinse the rice with about 2-3 cups fresh water.
Put the rice back in the pot and steam with the lid on for 30-40 mins. over
low heat. The rice will develop a nice crunchy bottom that’s delicious (eat
this first so it doesn’t get soggy!)
After you drain the rice in the colander, add 1 bunch chopped dill and 1 box
frozen baby lima beans. Mix it all together and return to the pot to steam
as described above. (Again, this is for about 6 cups cooked rice.)

1 cup Sour Cream (I use fat free)
1 Cup Parmesan Cheese grated
2 cans WATER PACKED artichoke hearts, drained and chopped
1/2 tsp. garlic powder
Mix all ingredients, sprinkle with paprika and bake at 350 for
30 minutes (until bubbly).
I serve this w/ fresh veggies and melba toast.

BUTTERMILK APPLE MUFFINS

1 c Brown sugar
1/3 c Oil
1 Egg, beaten
1 t Vanilla
1 1/2 c All purp flour
1/2 ts Baking soda
1/4 ts Salt
1 c Apples, peel, chp
1/2 c Buttermilk
1/4 c Chopped walnuts
1/2 ts Cinnamon
Preheat oven 325. Place paper liners in muffin tins.
Blend 3/4 c brown sugar, oil, egg, and vanilla in lg
bowl. Add flour, baking soda and salt. Add apple and
buttermilk and mix thoroughly. Divid among tins.
Combine remaining 1/4 c brown sugar, walnuts, and
cinnamon in sm bowl. Sprinkle over batter. Bake until
muffins are brown and test done, 30-35 mins.

Apple Knockers

3 Cinnamon sticks
1 cup Sugar
2 teaspoons Whole cloves
2 cups Orange juice
1/2 teaspoon Ground nutmeg
1/2 cup Lemon juice
1/2 gallon Apple cider
1 cup Brandy (any fruit flavor)
Tie cinnamon, cloves and nutmeg in cheesecloth. Simmer cider and sugar
with spices for about 15 minutes. Remove bag of seasonings. Add orange
juice, lemon juice and brandy. Heat to bubbling and serve. Source:

Title: Rendang Padang (Indonesian Beef Curry)

1 T Vegetable oil
2 Cloves garlic
1 t Turmeric
1/2 t Ginger
3 Lemon grass leaves
450 g Top round or lean beef
Sliced thinly
1 t Salt, or to taste
1 1/2 c Coconut milk
1 Salam leaf
Heat oil in pan and add garlic, turmeric, ginger and lemon grass. Saute
lightly.
Then add meat and crushed chillies. Saute 3 minutes, stirring frequently.
Add salt and chillies and mix well.
Pour coconut milk over meat and add salam leaf. Cover and cook over low
heat until almost dry.
Serve with rice.

Title: HONEY-GINGER SNAPS

1/2 c Butter, sweet
1/2 c Sugar
1 Egg
2 c Flour
2 ts Baking soda
1/2 ts Salt
1 ts Ginger
1 ts Cinnamon
1/2 ts Cloves
Preheat oven to 375 F. Cream the honey, butter, sugar, and egg
together. Sift the remaining ingredients together, and add to the
butter mixture. Chill for one hour. Roll level tablespoons of dough
into balls and place 2″ apart on a greased cookie sheet. Bake for 10
to 12 minutes.
