Title: Weight Watchers Oven “Fries”

Yield: 4 servings

1/4 c Parmesan cheese, grated TT Ground white pepper
2 ts Paprika 12 oz Baking potatoes, scrub
1/2 ts Bacon bits

Cut potatoes into 3"x1/2″ wedges. Preheat oven to 375oF. Spray
nonstick baking pan with non-stick spray. Combine all ingredients
except potatoes. Toss potatoes in mixture to coat thoroughly
(suggestion to put in gallon size plastic bag, press out air, seal,
toss). Place potatoes on prepared baking sheet. Bake 10-12 min,
turning over after 5 min. PER SERVING: 92 calories; 4 g protein;; 2 g
fat (19.5%) 15 g carbohydrate; 116 mg sodium; 4 mg cholesterol

    Recipe

    1 c. Crisco
    1 c. Sugar
    2 Eggs
    3 c. Flour
    2-3 Mashed Bananas
    1/2 c. Buttermilk (or regular milk w/ a little vinegar)
    1 t. Vanilla
    1-1/2 t. Baking Soda
    Chocolate Chips – My mom makes 1-1/2 batches/pkg. chips
    (I just make 1 batch/pkg)

    Combine ingredients (crisco, sugar, eggs, vanilla, flour milk, bananas,
    chips) and then chill for 1 hour before baking.

    Spoon onto cooky sheet. Bake at 375F for 10-12 minutes.

  • Title: BUTTERSCOTCH APPLE CRUMB PIE

    1 1/2 t Lemon juice
    4 c Tart cooking apples
    1 x Pared,cored,sliced
    1/2 c Sugar
    1/4 c All-purpose flour
    1 t Cinnamon
    1/8 t Salt
    1 ea 9″ unbaked pie shell

    ———————————-TOPPING———————————-
    1 c Nestle Butterscotch Flavored
    1/4 c Butter
    3/4 c All-purpose flour
    1/8 t Salt

    Preheat oven to 375 degrees.In large bowl,combine lemon juice and
    apples;toss until well coated.Stir in sugar,flour,cinnamon and
    salt;mix well.Turn into 9″ unbaked pie shell.Cover edges with
    aluminum foil.Bake @ 375 degrees for 20 minutes.
    TOPPING: Melt over hot (not boiling water,Nestle Butterscotch Flavored
    Morsels and butter;stir until smooth.Remove from heat;stir in flour
    and salt.Blend until mixture forms large crumbs.Remove foil from
    pie.Crumb mixture over top of hot apples.Bake @ 375 degrees 25
    minutes longer.

    Recipe

    Title: Four-colour Shiu My

    Yield: 50 Snacks

    MMMMM————————–FILLING——————————-
    6 oz Minced pork
    1 ts Light soy sauce
    1 ts Dry sherry
    1 ts Cornflour
    2 ts Sugar
    Salt and pepper
    2 tb Water
    1 tb Oil
    6 oz Peeled cooked
    -shrimps, diced
    1 ts Finely grated fresh
    -root ginger
    1 ts Chopped spring onion
    8 oz Winter melon or
    -courgettes, grated
    A pinch of monosodium
    -glutamate

    MMMMM—————————DOUGH——————————–
    1 lb Plain flour
    6 fl Boiling water
    1/4 pt Cold water

    MMMMM————————–GARNISH——————————-
    2 tb Peas
    2 tb Diced carrot
    2 tb Minced black fungas
    2 tb Sieved hard boiled
    -egg yolks

    Mannate the pork with the light soy sauce, sherry and cornfiour, the
    sugar, a pinch of pepper, the water and oil for 20 minutes. Mix in
    the shrimps ginger, chopped spring onion, winter melon or courgettes,
    seasoning and monosodium glutaniate. Chill for 1 hour. DOUGH: Sift
    the fiour and divide it in half. Mix the boiling water into ope
    portion and knead well. Mix the cold water into the second portion.
    Knead thorouhly. Combine both doughs and knead until smooth. Roll
    into a cylinder and cut into 50 equal portions. Roll these into thin
    rounds. Fold them in half, pinch the middle together, then open the
    dough to form a bow=B7 Pinch opposite ends of the bow together in the
    middle to make four neat pockets. Press filling into each pocket; top
    with peas, carrot, black fungus and egg yolk. Steam the shiu my over
    boiling water for 10 minutes. Serve at once.

    Recipe

    Title: PICKLED SPINACH
    Categories: Diabetic, Vegetables, Side dish
    Yield: 4 servings

    2 c Spinach; torn
    1 c Tomato; chopped
    1/4 c Green pepper; chopped
    1/4 c Vinegar
    1/3 c Oil, vegetable; to 1/2 cup
    2 sl Bacon; cooked and crumbled
    Lettuce leaves; opt.

    Combine first 5 ingredients, tossing gently. Chill at
    least 15 minutes. Sprinkle bacon over top; serve on
    lettuce leaves, if desired.
