Title: Chocolate Crackles

Yield: 48 cookies
1 c Semi-sweet chocolate pieces
1 c C and H Brown Sugar; packed
1/2 c Salad oil
2 Eggs
1 ts Vanilla
1 c All-purpose flour
1 ts Baking powder
1/4 ts Salt
1/2 c Chopped walnuts
1/2 c C and H Powdered Sugar
— (approximately)
Melt chocolate. Combine with sugar and oil. Add eggs one at a time; beat
well. Add vanilla. Combine flour, baking powder and salt. Add to
chocolate mixture. Stir in nuts. Chill dough. Drop teaspoonfuls of
dough in powdered sugar. Roll to coat. Place on greased cookie sheet.
Bake in 350 degree oven 10 to 12 minutes. Cool on rack.
Makes 4 dozen cookies.

Title: Nut Wedges

1 11 oz packag pie crust mix
1/4 c Sugar
1/3 c Sugar
1 ts Ground cinnamon
2 ts Honey
1 ts Lemon juice
1 c Finely chopped nuts

1/2 c Semisweet chocolate pieces
1 ts Shortening

Stir together pie crust mix and 1/4 cup sugar. Add 3 to 4 tablespoons
water
to form ball. Divide in half. On floured surface, roll each half into a
9-inch circle. Spray a cookie sheet, preferably one of those air-insulated
ones, with PAM or other non-stick spray. Transfer 1 circle to cookie
sheet.
Preheat oven to 375 deg F.
For filling, combine 1/3 cup sugar,cinnamon, honey, lemon juice, and
chopped nuts. Spread over pastry. (Be careful to leave about 3/4-inch to
1-inch edge with no topping. You will seal along this edge. I also try to
press the nut filling down, so it isn’t too crumbly. Something I do is to
take beaten egg white and brush around the edge of the pastry round with
the nut filling. This will serve as a “glue”.) Top with other pastry
round. Use tines of fork to seal edges (by pressing fork around the edge,
making a fluted-like edging). Brush with milk. (The milk makes for a shiny
top crust.) Bake in 375 deg F. oven 15 to 20 minutes or until pastry
starts
to brown. Cool 10 minutes. while warm, cut into wedges. Cool.
Combine the chocolate pieces and shortening. Cook and stir over low heat,
just till melted. Drizzle over wedges.

1 lb Navy Beans — Dried
8 c Water
3 c Beef Broth
1 ea Carrot — Chopped
1 ea Celery Stalk — Chopped
4 ea Bacon — Strips, Cubed
2 ea Onions — Small, Chopped
1 t Salt
1/4 ts Pepper — White
6 ea Frankfurters, Sliced *
2 tb Parsley — Chopped
* Note: Use the real Frankfurters in this recipe and
not the hot dogs!

++++++++++++++++++ Soak beans overnight. In a 3-quart
saucepan bring beans, water and beef froth to a boil.
Cook for about 1 hour. Add carrot and celery and
continue cooking for 30 minutes. In a separate frypan
cook the bacon until transparent. Add the onions;
cook until golden. Set aside. Mash soup through a
sieve or food mill. Return to pan and add the bacon
onion mixture, salt and pepper. Add frankfurters;
reheat about 5 minutes. Sprinkle soup with chopped
parsley and serve.

3/4 pounds medium shrimp — shelled and
— deveined
3/4 pounds sea scallops
3/4 pounds salmon fillet
1 cup diced tomatoes — 1/2inch dice
1 cup diced mango — 1/2inch dice
2 grapefruits — peeled and
— segmented
3 oranges — peeled and
— segmented
4 limes — peeled and
— segmented
1/2 cup diced red onion — 1/2inch dice
2 jalapenos — minced
4 cups fresh lime juice
1 cup chopped cilantro
2 tablespoons sugar
salt and freshly ground pepper
In a large nonreactive bowl, combine the scallops, salmon, shrimp,
tomatoes, mango, onion, jalapeno and lime juice. Marinate, refrigerated,
for 3 hours.
Remove from marinade and grill fish and shellfish, just long enough to get
grill marks 3060 seconds. Cut all fish in a 1/2-inch dice. Just before
serving drain off as much lime juice as possible from the fruit, add the
cilantro, sugar, shellfish and salmon. Gently mix being careful not to
break up the fruit and fish.
Yield: 6 to 8 servings

1 1/4 pk Nestles Bon Bon Ice Cream
– nuggets
1 pk Instant vanilla pudding
1 3/4 c Milk
Green food coloring
1 ts Peppermint extract
Chocolate; melted
Whipping topping
Cover bottom of 9″ chocolate cookie crust with 1 1/4 boxes of Nestles Bon
Bon Ice Cream Nuggets. Mix instant vanilla pudding mix with milk, food
coloring and peppermint extract. Spoon over Bon Bons and freeze 5 hours.
Decorate with melted chocolate, whipped topping and more Bon Bon nuggets.
