HEARTY HUNGARIAN PEASANT SOUP

1 sm Frying chicken, skinned
-and cut in pieces
2 ea Turkey legs, skinned
1 lb Of boneless beef stew meat
16-20 black peppercorns
1 ea Whole nutmeg
1 ea Beef bouillon cube
1 1/2 ts Salt
3 qt Water
2 ea Parsley roots with greens
6 ea Carrots
1 ea Leek
1 ea Onion with skin
3 ea Cloves garlic
1 ea Kohlrabi
2 ea Stalks celery
3 ea Sprigs of dill
1 ea Tomato
1 ea Green pepper
12 oz Soup noodles

Put all of the meat into the soup pot and add the
peppercorns, nutmeg, bouillon cube, and salt. Cover
with water and bring to a boil. Clean the vegetables,
discarding seeds and tops, except for the parsley
root, the leaves of which should be used. Cut into
large even chunks. After the meat has simmered for an
hour, add the vegetables and cook gently for another
hour or until both meat and vegetables are done. Cook
the noodles separately and drain. To serve the meat
Hungarian style, spoon noodles into soup bowls, and
spoon broth over them for the soup course. The meat
and vegetables should be served with crusty black

    6 oz Semisweet chocolate pieces
    1/3 c Margarine or butter
    16 lg Marshmallows
    1 t Vanilla
    2 c QUAKER Oats uncooked
    -(quick or old fashioned)
    1 c Mixed fruit

    Mixed fruit may consist of any combination of raisins,
    diced dried mixed fruit, flaked coconut, miniature
    marshmallows or chopped nuts

    In large saucepan over low heat, melt chocolate
    pieces, margarine and marshmallows stirring until
    smooth. Remove from heat; cool slightly. Stir in
    remaining ingredients. Drop by rounded teaspoonfuls
    onto wax paper. Chill 2 to 3 hours. Let stand at room
    temperature about 15 minutes before serving. Store in
    tightly covered container in refrigerator. MICROWAVE
    DIRECTIONS: Place chocolate pieces, margarine and
    marshmallows in large microwaveable bowl. Microwave
    on HIGH 1 to 2 minutes or until mixture is melted and
    smooth, stirring every 20 seconds. Proceed as recipe
    directs.

    5 c Water
    1 T Salt
    3 c Uncooked egg noodles
    1/4 c Butter or margarine
    1 c Fine dry bread crumbs
    1 lb Lean ground beef
    1/2 c Finely chopped onion
    1/4 c Finely chopped green pepper
    1/2 t Garlic salt
    1 t Salt
    1/8 t Pepper
    1 c Grated Swiss cheese
    8 oz Can tomato sauce
    4 oz Mushroom stems pieces,
    -drained

    1. In a deep, 3-quart, heat-resistant, non-metallic casserole place 5 cups
    water, 1 tablespoon salt and 3 cups uncooked noodles. Heat, covered, in
    Microwave Oven 12 minutes or until noodles are tender, Stir occasionally.
    2. Drain noodles and set aside.
    3. In a large, heat-resistant, non-metallic mixing bowl, me1t 1/4 cup
    butter
    or margarine in Microwave Oven 30 seconds.
    4. Add bread crumbs and heat, uncovered, in Microwave Oven 1 1/2 minutes or
    until bread crumbs are golden brown.
    5. Add meat to bread crumb mixture and mix to combine well. Heat,
    uncovered,
    5 minutes or until meat is browned, stirring occasionally so meat crumbles.
    6. Add onions, green pepper, garlic salt, salt and pepper. Blend into meat
    mixture thoroughly. Heat, uncovered, in Microwave Oven 2 minutes.
    7. In a 2-quart, heat-resistant, non-metallic casserole layer cooked
    noodles
    with meat mixture. Top with cheese, tomato sauce and mushrooms (in that
    order). Heat, uncovered, in Microwave Oven 8 minutes or until cheese melts.

  • Dilly Squash

    Title: DILLY SQUASH

    Yield: 4 servings

    3 c Sliced yellow squash
    1 ts Minced onion
    1 tb Chopped fresh parsley
    1/2 ts Salt
    1/4 ts Dried dillweed
    1 tb Dry butter substitute

    Arrange squash and onion in a vegetable steamer
    over boiling water. Cover and steam 5 minutes or until
    tender.
    Remove from heat, and mash squash mixture.
    Add parsley, salt and dillweed; toss lightly.
    Sprinkle with butter substitute, and serve warm.
    Yield: 4 servings.

    Title: GENERAL TAO CHICKEN

    10 oz Chicken legs – bite sized
    1 tb Minced fresh ginger
    2 Scallions – 2 inch lengths
    1 tb Minced garlic
    2 tb Dried chilli peppers – whole
    2 tb Sugar
    2 tb Soy sauce
    1 1/2 ts Rice vinegar
    2 tb Cornstarch
    1/4 c Chicken stock
    1 ts Sesame oli
    2 c Soya oil for cooking
    Marinade
    1 Egg white
    1 tb Cornstarch
    1 tb Soy sauce

    1. Cut chicken into pieces no larger than 3/4 inch
    square. Combine marinade
    ingredients in large bowl. Add chicken pieces and
    set aside for 2
    hours. Add 2 T cornstarch to chicken stock, store
    in refridgerater. 2. In a deep pot, heat oil to 350 F.
    In a basket, or slotted spoon, lower
    several pieces of chicken into the oil. Fry until
    chicken becomes
    crisp (1 to 2 minutes) and test meat to ensure
    doneness. Continue doing
    several pieces at a time until all are cooked. 3.
    In a wok, on high heat, reheat 2 T reserved oil. Add
    prepared ginger,
    scallions, garlic, and chilies. Stir to prevent
    burning. Add the cooked
    chicken pieces, still stirring quickly. 4. Add
    sugar, soy sauce, vinegar, stock/cornstarch mixture
    and stir until
    thick. Remove from heat, stir in sesame oil, and
    place on serving dish.
    Serve with steamed rice.

    Dulces (literally sweets) like this one are common all over Latin
    America. They are firm, sliceable pastes made from, for example,
    quinces or sweet potatoes. Serving a slice of semi-soft cheese with
    a similarly- sized slice of dulce is a popular dessert and the
    flavours marry exceptionally well. This mango dulce originated in
    the Caribbean.

    Peel remove the flesh and process enough ripe mangoes to provide 2
    cups of mango puree.

    Scrape the puree into a saucepan and add 2 cups of white sugar and a
    tablespoon of lime juice.

    Cook over a medium heat, stirring all the time until the mixture
    thickens sufficiently so that you can see the bottom of the saucepan
    in the wake of the spoon.

    Moisten the inside of a mould++a cake or loaf tin will do++scrape the
    dulce into it and leave to cool. When it is cold, turn out. It will
    keep very well wrapped in plastic and refrigerated.

    French Onion Soup

    Title: French Onion Soup

    1/4 c Butter 6 x Medium cooking onion sliced
    1 ts Sugar 1 tb All purpose flour
    1 c Dry white wine 4 c Beef broth
    1/4 ts Pepper 6 x 1/2 in day old french bread
    2 c Grated swiss cheese 1/2 c Grated parasean cheese
    1 x Paprika

    In large Dutch oven over medium heat, melt butter. Add onions and sugar.
    Cover and cook, stirring occaisionally, 30 minutes or until onions are
    tender but not colored. Uncover pan, increase heat slightly and continue
    to cook, stirring regularly until onions are rich caramel colour (10 to 15
    minutes) DO NOT LET ONIONS BURN. Stir in flour until well blended.
    Gradually add wine; cook, stirring constantly, until mixture boils and
    thickens. Stir in beef broth and pepper; bring to boil. Reduce heat to
    low. Cover and simmer 15 minutes. Ladle soup into 6, 1-1/2 cup oven proof
    bowls. Top each with bread slice; sprinkle with swiss cheese and parmaean
    cheeses and paprika. Place bowls on jelly roll pan. Broil until cheese
    melts and bubbles.

    2 cups cream
    9 ounces sugar
    3 pieces gelatin
    1 piece vanilla beans
    8 tablespoons water
    1/2 cup Cognac
    pepper

    For the caramel :
    Take 7 ounces sugar with water in a pan, bring it slowly to boil unlike
    the caramel
    is light brown. Spread the caramel into the forms.

    Panna Cotta :
    Take the gelatine in cold water. Mix Cream, sugar and the vanilla bean,
    bring to boil.
    Boil it for at least 5 minutes on slow fire. Take out the vanilla, add the
    Cognac and
    gelatin. Mix well. Spread it into the prepared forms.

    Place into a storage container and cool to room temperature before
    refrigerating.
    At least 2 hours.

  • Ranch Style Taco Salad

    Head of Lettuce
    Onion
    1 lb Can Ranch Style Beans
    1 pk Corn Chips
    2 x Avocados
    2 x Tomatoes
    1 lb Cheddar Cheese
    Bottle Catalina Dressing
    1 lb Ground Beef
    2 tb Lemon Juice

    Saute ground beef, drain well and set aside to cool. Tear
    lettuce into pieces. Dice tomatoes and onion. Grate cheese. Drain
    beans. Break corn chips into smaller pieces. Chop avocado and
    sprinkle with lemon juice, lightly tossing to coat.
    Toss together all ingredients except corn chips. Top with chips
    just before serving.
