2 ea Cabbage heads
1/2 c Mayonnaise
4 c Mini marshmallows
12 oz Pineapple, crushed
1/2 pt Whipping cream

Clean, core and slice cabbage very fine. Add mayonaise and mix thoroughly.
Add minimarshmallows. Strain pineapple and add to mixture. Whip cream until
peaks form and add. Toss mixture well and refrigerate 2 hours befor
serving. Note: Peelen adds a small amout of sugar to sweeten.

    BASIC BREAD STUFFING

    1/2 c Butter or margarine
    1 Large onion, diced
    1 c To 2 c diced celery w/leaves
    15 c Toasted 1/2-inch bread cubes
    1 1/2 ts Salt
    1/4 ts Black pepper
    1 tb Dried sage *
    1/2 c Chopped parsely
    1 c Turkey stock, water, or milk

    * or 1/4 cup minced fresh sage

    Melt butter in large stockpot. Add onion and celery
    and cook until vegetables are tender but not browned.
    Add to bread cubes in large bowl. Add salt, pepper,
    sage, and parsley and toss until well mixed. Add
    turkey stock and blend well. Use to stuff 12 to
    14-pound turkey. Bake leftover stuffing in lightly
    greased casserole at 325 degrees 45 minutes to 1 hour
    or until heated through.

    Each serving contains about: 181 calories; 635 mg
    sodium; 22 g cholesterol; 9 g fat; 20 g carbohydrates;
    4 g protien; 0.3 g fiber. 46% of calories from fat.

  • Title: CINCINNATI SKYLINE CHILI

    2 lb Ground beef
    1 cn Tomato sauce (15 oz)
    2 Bay leaves
    1 ts Ground cinnamon
    1 1/2 ts Salt
    1 1/2 ts Vinegar
    1 1/2 ts Ground allspice
    3 c Water
    1/4 ts Garlic power
    1 Onion, chopped
    1 ts Worcestershire sauce
    2 ts Cumin
    1 tb Chili powder
    1/2 ts Crushed red pepper

    Mix ground beef and water until soupy. Mix in other ingredients.
    Simmer, uncovered 3 hours. Stir occasionally. “Makes 8 servings.”

    Note: Top with grated Cheddar, onions, chili beans or use as sauce

  • Roast Pork Lo Mein

    Title: ROAST PORK LO MEIN

    1/2 lb Noodles, fresh
    -boil til soft;drain rinse
    1/2 lb Roasted pork; shredded
    1 c Shredded chinese cabbage
    1 c Bean sprouts; wash
    1/2 c Sliced waterchestnuts,option
    1/2 ts Salt
    2 ts Sherry
    1/4 c Chicken broth, College Inn
    2 tb Oil; for stir frying

    ————————-SAUCE MIX————————-
    6 tb Oyster sauce
    – can add more as per taste
    1/2 ts Sugar
    1 ds Pepper, heavy dash

    Note: Dried Noodles …. 5 cups cooked = 1 lb
    Fresh Noodles …. 2 1/2 cups cooked = 1 lb
    Preparation: – Heat Wok – Add oil and let heat
    – Add salt; stir
    – Add pork sherry; stir fry quickly
    – Add cabbage, bean sprouts, waterchestnuts;
    stir fry [45] Sec.
    – Add stock; place noodles on top
    – Cover cook; [1] Min.
    – Uncover stir
    – Add “sauce mix”; stir until evenly seasoned
    – Serve!

  • Applesauce Brownies

    Title: Applesauce Brownies

    1/3 c Vegetable oil 1 ts Baking powder
    1/2 c Unsweetened applesauce 1/2 ts Baking soda
    1/2 c Unsweetened cocoa powder 2 lg Eggs
    1/2 c Sugar 1 ts Vanilla extract
    1 c All-purpose flour 1/4 c Chopped nuts

    16 big servings, 24 servings if you follow the 1 tsp. sugar per
    serving guideline of ADA, or try using part sugar/part artificial
    sweetener to cut down on calories. The original recipe is almost
    like cake.

    Preheat oven to 375 F.

    Combine oil, applesauce and cocoa. Add sugar and stir until
    dissolved. Add eggs and vanilla. Mix dry ingredients together and
    stir into the mixture.

    Pour the batter into a greased and floured (or wax paper lined
    sprayed) 9 inch square pan. Sprinkle on nuts. (Still tastes good if
    you forget.)

    Bake about 20 to 30 minutes or until top is set but edges are not
    dried out. Toothpick will come out clean. Cut into 16 or more
    squares.

    1/16 recipe = 165 calories, 1 starch + 1 fat + 1 fruit exchange 3
    grams protein, 27 grams carbohydrate, 7 grams fat, 84 mg sodium

    1/24 recipe = 110 calories (1 tsp sugar per serving) 2 grams protein,
    18 grams carbohydrate, 5 grams fat, 56 mg sodium

    Black-Eyed Peas (From my Garden)

    1 lb dried black-eyed peas
    1/2 stick butter
    1 onion — coarsely cut
    1 large shallot — quartered
    3 cups water — (3 to 4)
    1/4 green pepper — chopped
    1 teaspoon salt
    1/2 teaspoon fresh ground pepper

    Soak peas overnight, drain, and let stand. In large skillet heat butter
    and saute onion and shallot. Add peas. Mix well and cook about 8 minutes
    . Pour mixture into large pot and add water to cover the peas. Bring to
    a bowl and add the green pepper, salt and pepper. Lower heat and cook
    for about 1 hour, until the peas are tender.

    1 Cake yeast
    3 ts Baking powder
    2 tb Lukewarm water
    4 tb Sugar
    5 c Plain flour
    1 t Salt
    1 t Soda
    1 c Shortening
    2 c Buttermilk

    Dissolve yeast in water. Into a bowl, sift flour with
    other dry ingredients. Cut in shortening, add
    buttermilk, then add yeast mixture. Stir until all
    flour is dampened. Knead on floured board a minute,
    roll to desired thickness, and cut with a biscuit
    cutter. Bake at 400 degrees about 12 minutes. Dough
    may be kept refrigerated and used about a week. Mrs.

  • Title: MIKEY’S MACKEREL CAT MUNCHIES

    1/2 c Canned mackerel, drained
    1 c Whole-grain bread crumbs
    1 tb Vegetable oil
    1 ea Egg, beaten
    1/2 ts Brewer’s yeast, optional

    Preheat oven to 350 degrees. In a medium-sized bowl, mash the mackerel
    with a fork into tiny pieces. Combine it with the remaining
    ingredients and mix well. Drop mixture by 1/4 teaspoonfuls onto a
    greased cookie sheet. Bake for 8 minutes. Cool to room temperature
    and store in an airtight container in the refrigerator.

    This is all approximate, I just throw in whatever I have to make the lasagne.
    You can use other veges, add green peppers, onions, mushrooms, sprinkle
    nutritional yeast on the layers, whatever you like.

    LASAGNA

    1 pkg microwaveable lasagne noodles (I use Pasta Vigo’s 1 step brand)
    1 jar Ragu sauce
    1-2 eggplant, sliced in thin circles
    1-2 zuchinni, sliced in thin circles
    1 container of fat free cottage cheese (I use Light Lively’s brand)

    Layer the eggplant/zuchinni slices on a microwavable plate, cover with
    plastic wrap and cook a few minutes in the microwave.

    Pour a layer of sauce in a square, microwave baking dish.

    Repeat until you run out of stuff:

    Put a layer of noodles in then spread more sauce on top.
    Add a layer of eggplant/zuchinni slices,
    top with a layer of cottage cheese,
    then top this with some sauce.

    Your last layer should be noodles. Then top with more sauce and bake in
    the microwave (according to package directions).

    Amount Measure Ingredient — Preparation Method

    1 egg yolk
    4 tbl garlic oil
    1 tbl red wine vinegar
    1 tbl Dijon mustard
    1 tbl grated parmesan
    salt and pepper — to taste

    Slowly pour oil into egg yolk while whisking. Slowly whisk vinegar into egg
    mixture. Whisk in remaining ingredients. If dressing is too thick, thin it down
    with a little water 1 teaspoon at a time.

    NOTES : This is called “Caesar Style Dressing” because anchovies are not
    included (which were not used in the original Ceasar salad!).
    Garlic oil is oil which has been heated with a clove of garlic.
