Salting mixture: 1 lb salt 2 oz sugar 1 oz saltpeter
pepper and chili spices –
to taste

As you travel around East Africa you will see countless Africans
selling food along the roadsides, in the markets, or through bus and
train windows. They sell fruit, boiled eggs grilled maize, boiled
maize, yogurt, milk, soda pop, fried dough balls, samosas, yellow
buns, and real seasonal delicacies like roasted mice and termites.
The following are a few East African snack foods you can try.

“Beef Jerky” is more common in South Africa but still a part of the
East African diet. It is generally made from beef, but other game is
used when available. Cut strips of meat following the grain of
muscle. Make strips 2 inches wide and 1 inch thick. Best made during
cool dry weather if possible.

Salt the meat by rubbing the mixture in well and leave in the basin
of salt mixture overnight. Dip a cloth in vinegar, wring dry and
whip the meat well.

Hang the strips of meat in a cool, dry, well ventilated place until
dry.

You can also hang the meat on an oven rack placed in the top slot of
the oven. Dry the meat on low heat.

    3 whole egg
    1 cup milk
    1/2 cup flour
    2 teaspoons salt
    2 tablespoons butter
    2 tablespoons onion — chopped
    20 ounces frozen spinach (2 packs) — squeezed dry
    12 ounces carrot — peeled
    12 ounces cauliflower
    butter for greasing loaf pan

    Preheat oven to 400F

    In a blender or processor, combine eggs, milk flour, and salt and process
    until smooth. Reserve. Melt butter in a medium skillet over moderate heat.
    Add onion and cook, stirring, until softened. Remove from heat, and stir in
    spinach and about a third of the reserved batter. Reserve. Bring a medium pan
    of water to a boil and cook whole carrots for about 6 minutes, depending on
    thier thickness, until tender but still crisp. With a slotted spoon, remove to
    a plate and allow to cool. Add cauliflower florets to the water and cook for
    about 3 minutes. Remove with a slotted spoon and allow to cool slightly.
    Butter a 2 quart loaf pan, then butter a piece of aluminum foil large enouigh
    to line it with a slight overhang. Line the pan with the foil, fitting it inot
    the corners and allowing it to hang over the edges. Place half the
    cauliflower in the base of the pan and pour over half of the remaining batter.
    Next, spread half of spincach mixture over the cauliflower in an even layer.
    Lay the carrots next to each other lengthwise in the pan. Spread the remaining
    spinach over the carrots, then the remaining cauliflower, and press down
    gently. Pour over the remaining batter. Butter a piece of aluminum foil large
    enough to cover the pan. Place over the vegetables, seal with the overhanging
    foil, and gently press down the foil. Place pan in a larger roasting pan and
    place in oven. Pour enough boiling water into the larger pan so that it
    reaches about halfway up the sides of the loaf pan. Bake for 1 hour. Remove
    from the oven and remove loaf pan from the water. Allow to cool for at least
    an hour. Remove foil from the top and invert on a plate. Carefully peel off
    the foil and cut across into 1 inch slices.

    3 tablespoons margarine
    1 cup cooked — mashed sweet
    — potatoes
    1/2 cup skim milk

    Sift dry ingredients together, cut in margarine. Add mashed sweet potatoes. G
    radually add milk to form dough. Roll or pat to 1/2-inch thickness on flour bo
    ard. Cut with biscuit cutter. Bake in non-stick pan at 425 degrees F. for 12
    -15 minutes.

    Stir mix before measuring. gradually add water until a
    soft dough forms. turn out onto a floured board. Knead
    ten times. Roll or pat to a thickness of about 1/2
    inch. Cut out with a floured biscuit cutter. Bake on a
    baking sheet in a 450 deg f oven for 8 to 10 minutes
    or until lightly browned.

    4 tb Bacon fat
    5 ea Lg onions; coarsly chopped
    2 ea Lg green peppers; chopped
    3 ea Garlic clove; minced
    1 1/2 tb Hungarian Paprika
    3 lb Stewing beef; in 1″ cubes
    1 x Pepper; to taste
    1 x Salt; to taste
    6 oz Tomato paste
    1 x Sour cream; at room temp.

    Preheat oven to 325f.
    Heat fat in a deep heavy pot. Cook the onions,
    peppers, and garlic until the onions are limp and
    transparent. Add paprika has lost its raw taste. Add
    beef and remaining ingredients except sour cream.
    Stir well to combine. Simmer in preheated oven for 1
    1/2 to 2 hours or until the meat is tender. Adjust
    oven temperature during cooking time so contents of
    pot remain at a simmer. Serve in shallow soup bowls
    with a tablespoon of sour cream atop each serving.

    4 plump moist vanilla beans
    4 cups sugar

    Flatten the vanilla beans and cut them in half lengthwise. With
    a small spoon, scrape out the seeds and place them in a small bowl; reserve
    the seeds for another use. Combine
    the pods and the sugar in a jar. Cover securely and set aside
    at room temperature for several days to scent and flavor the
    sugar. Use in place of regular sugar when preparing desserts.
    Vanilla sugar can be stored indefinitely. As the sugar is used,
    replace with new sugar. (When baking, I return rinsed and
    thoroughly dried pods to the sugar mixture as an added boost.)

    1/2 lb Monterey Jack Cheese
    1/2 lb Sharp cheddar cheese
    1/2 lb Hot pork sausage*
    1 1/2 c Bisquick mix
    1 Egg
    1 pk Pork flavor Shake ‘n Bake
    20 Whole jalapeno peppers**

    *Jimmy Dean Sausage brand is best **Use 20-30
    peppers-may use fresh, but success reported when using
    bottled or canned

    Slice peppers in half lengthwise and scrape out all
    the seeds (wear gloves). Try to keep both halves near
    each other as you have to put them back together
    later. Mix bisquick, raw sausage cheddar cheese.
    Stuff each pepper with Monterey Jack cheese and put
    the halves back together. Grab a handful of bisquick
    mixture and mold around pepper in shape of elongated
    egg. Use enough to cover pepper wiell. Dip armadillo
    egg in beaten egg and roll in Shake ‘n Bake. Bake on
    broiler pan (can use cookie sheet) at 350 degrees for
    25 minutes or until crisp.

    1 Egg, separated 1 c Shredded coconut
    1 c Artificial sweetener 1/2 c Chopped pecans (optional)
    2 c Cornflakes 1/2 ts Almond extract

    Beat egg white until stiff but not dry. Fold in sweetener equivalent
    to 1 cup sugar. Add remaining ingredients. Drop by teaspoonfulls onto
    greased baking sheet. Bake 350F for 12 minutes. Remove from pan at
    once. Makes about 3 1/2 dozen cookies, each cookie is 1/2 fat. 24
    calories.

    1 teaspoon salt

    Heat oven to 350 degrees.

    Cook and stir meat until brown. Drain off fat.

    Cook macaroni as directed on package; drain.

    In ungreased 2-quart casserole, mix all ingredients.

    Cover; bake 40 minutes. Uncover; sprinkle with crushed potato chips if
    desired and bake 5 minutes longer.
