Mexican Shredded Spiced Beef (Carnitas)

5 1/2 pounds beef chuck roast
1/4 cup bottled hot chile salsa
5 cloves garlic — minced
2 1/2 tablespoons chili powder
2 tablespoons fresh oregano — chopped
1 1/2 teaspoons ground cumin
16 ounces canned stewed tomatoes
salt to taste
1. Preheat oven to 300 degrees F. Trim excess fat from roast.
2. Mix together salsa, garlic, chili powder, oregano, and cumin to make a
paste.
Spread on roast.
3. Wrap roast in a large piece of aluminum foil, folding edges to seal tightly.
Place in roasting pan, with seam of aluminum foil up.
4. Bake until meat is so tender that it will shred easily, 4 to 4-1/2 hours.
5. Unwrap meat; discard fat and bones. Skim fat from drippings and reserve
drippings. When roast is cool enough to handle, shred meat.
6. Transfer meat and drippings to a large pan. Stir in tomatoes and their
juice,
breaking them up into small bits. Heat through. Season with salt; adjust
flavors
to taste, adding more salsa and seasonings if desired.
Makes about 7 cups shredded beef (enough for about twenty 8-inch tortillas).
* Timesaver Tip: Beef can be made up to 3 days ahead and stored, covered, in
refrigerator. It can also be frozen at 0 degrees F up to 3 months. To freeze,
package beef in meal-sized servings.
Microwave Version:
1. Trim excess fat from roast. Mix together salsa, garlic, chili powder,
oregano, and cumin to make a paste. Spread on roast.
2. Place roast in a large (14- by 20-inch) oven cooking bag; squeeze out most
of
the air and tie securely. Place roast in a large baking dish.
3. Microwave roast on 100% power for 10 minutes. Reduce power to 50% and
microwave until meat is so tender it will shred easily, about 2 hours.
4. Unwrap meat; discard fat and bones. Skim fat from drippings and reserve
drippings. When roast is cool enough to handle, shred meat.
5. Transfer meat and drippings into a 2-quart casserole. Stir in tomatoes,
breaking them into small pieces. Microwave on 70% power until mixture is heated
through, about 3 minutes. Season with salt; adjust flavors to taste, adding
more
salsa and seasonings if desired. Preparation time: about 2-1/2 hours.

NOTES : Use this tasty spiced beef to fill tacos, enchiladas, and burritos.
It’s
a particularly good recipe for the microwave oven, which cuts cooking time by
half, saving both energy and time. The recipe makes enough to freeze half for a
future meal.

Title: Clam Chowder, Manhattan Style

36 Live clams 3 ts Basil
3 tb Butter 1/2 ts Thyme
3/4 lb Pork, diced 1 Bay leaf
4 Onions, chopped 3 Cloves garlic, diced
4 Tomatoes, chopped 1 tb Soy sauce
2 1/2 c Chopped celery 2 1/2 qt Liquid (clam cooking broth
1 1/2 c Chopped carrots + water
3 ts Fresh parsley 4 Potatoes, diced
Place clams in soup kettle, cover with water, and steam open. Remove
clams from their shells, and mince fine; reserve. Strain clam liquid and
reserve. Saute pork and onions in butter until onions are clear. Add
tomatoes and simmer 5 minutes, stirring. Add celery, carrots, parsley,
basil, thyme, bay leaf, garlic and soy sauce. Stir in correct amount of
liquid (clam cooking water plus additional water, if needed); simmer,
covered, 1 hour. Add potatoes and simmer 15 minutes. Add clams and simmer
another 8 minutes. Adjust seasonings if necessary. Serve immediately, with
crackers.

3 cups almonds
2 cups sugar
1 cup water
28 oz. semi-sweet chocolate
1 cup powdered sugar
Mix almonds, sugar, water in a heavy saucepan over medium high heat for
about 5 minutes until mixture has a sandy texture and coats the almonds.
(While stirring, push mixture up the sides to make sugar crystalize.)
Spread almonds on a baking sheet covered with parchment paper and
freeze.
Warm chocolate until just melted (about 88 F). Put almonds into a bowl and
pour 1/2 of the chocolate in and mix vigoriously to keep almonds from
clumping together. Add the rest of the chocolate and continue to stir
until almonds are well coated.
Roll almonds in powdered sugar to coat.

3 lb Ready to Cook BroilerChicken 2 lb Beef Shank Cross-cuts
12 c Water 1 T Salt
1/4 t Pepper 6 ea Slices Bacon
56 oz (2 cns) Tomatoes 1 c Cubed Peeled Potatoes
2 c Coarsely Chopped Carrots 1 c Chopped Onion
1 c Chopped Celery 1 c Chopped Green Pepper
2 T Packed Dark Brown Sugar 1/4 t Crushed Dried Red Pepper
4 ea Whole Cloves 1 ea Clove Garlic, Minced
1 ea Bay Leaf 4 ea Ears Of Fresh Corn
32 oz (2 cns) Butter Beans 10 oz Frozen Cut Okra
2/3 c Unbleached All-purpose Flour
In 10-quart Dutch oven or stock pot combine chicken, beef cross cuts,
water, salt and pepper. Cover; cook til meat is tender, about 1 hour.
Remove chicken and beef from broth, reserving broth. Remove chicken and
beef from bones; discard skin and bones. Cube beef and chicken. Set
aside. Cook bacon til crisp; drain, reserving drippings. Cruble bacon,
set aside. To reserved broth in Dutch oven, add cubed beef, undrained
tomatoes, potatoes, carrots, onion, celery, green pepper, sugar, red
pepper, cloves, garlic,and Bay Leaf. Cover; simmer 1 hour, stirring often.
Remove cloves and bay leaf. With knife, make cuts down center of each row
of corn kernels and scrape off of cobs. Add corn, cubed chicken,
undrained beans, and okra to Dutch oven; simmer 20 minutes. Blend flour
and reserved bacon drippings; stir into stew. Cook until stew thickens.
Salt to taste. Garnish with parsley and serve hot with baking powder
biscuits for a great meal.

Spaghetti Squash Casserole (Moosewood) with Lentils

1 spaghetti squash — cooked and scooped
1 cup chopped onion
2 cloves garlic — crushed
2 medium fresh tomatoes — chopped
1/2 pound sliced mushrooms
1/2 teaspoon oregano
salt and pepper
butter for saute
1 cup cottage cheese
or ricotta cheese
1 cup shredded mozzarella cheese
1/4 cup fresh parsley — chopped
1 teaspoon basil
pinch thyme
1 cup fine dry breadcrumbs
parmesan cheese — garnish
– Cook and strand an 8-inch squash.
– Saute onions, garlic, salt, pepper,and mushrooms in some butter. Add
herbs, chopped tomatoes. Cook until most of the liquid evaporates.
– Combine and pour into buttered 2-quart casserole. Top with lots of grated
parmesan. Bake 375oF about 40 minutes.

Title: Wild Rice-Stuffed Squash

2 md Acorn Squash;
1/2 c Wild Rice; cooked
1 ts Orange Rind; grated
1/2 c Walnuts; chopped
1 tb To 2 tb Frozen Orange Juice;
Concentrate
Cut the squash in half and remove the seeds. Combine the remaining
ingredients and fill the squash with the mixture. Place in a baking
pan. Cover with aluminum foil or a lid and bake in a 400-degree oven
for about 35 minutes, or until the squash is fork-tender. Extra
orange juice concentrate can be drizzled over the squash just before
serving.

Title: Velvet Smooth Cream Pies

3/4 c C and H Granulated Sugar
1/3 c All-purpose flour
1/4 ts Milk
2 Eggs; or…
3 -Egg yolks
1 tb Butter or margarine
1 ts Vanilla
1 9″ pastry shell
— (baked and cooled)
In a saucepan mix sugar, flour and salt. Add milk and eggs. Beat with a
whisk until smooth. Bring to boil over medium heat stirring constantly.
Continue cooking and stirring until smooth and thickened. Remove from
heat, stir in butter and vanilla. Cool 5 minutes. Pour into pastry
shell. Chill until set.
BANANA CREAM PIE: Make a base filling; cool. Slice 2 or 3 large bananas
in bottom of baked pie shell; add cooled filling and chill. Serve with
Whipped Cream Topping.
BUTTERSCOTCH CREAM PIE: Use 3/4 cup firmly packed C and H Golden or Darn
Brown Sugar instead of granulated sugar in basic filling recipe; increase
butter to 3 tablespoons. Top with Tall ‘N’ Tender Meringue (see separate
recipe) or chill and serve with Whipped Cream Topping.
COCONUT CREAM PIE: Stir 1 cup flaked coconut into basic filling before
pouring into baked pie shell. Top with Tall ‘N’ Tender Meringue or chill
and serve with Whipped Cream Topping. Garnish with toasted coconut, if
desired.
CHOCOLATE CREAM PIE: Make basic filling; add 1/2 cup semi-sweet chocolate
pieces to hot, cooked filling in saucepan. Stir until completely melted.
Pour into baked shell; chill. Spread with Whipped Cream Topping; garnish
with shaved chocolate.
MICROWAVE DIRECTIONS: Combine sugar, flour and salt in deep 2 quart glass
mixing bowl. Add eggs and milk. Beat with whisk until smooth. Microwave
at full power 8 minutes, stirring 3 times. Precede {sic} as recipe
directs.

Title: AROMATIC BEEF (COLD)

2 lb Beef bottom round,
-fat trimmed
Oil
4 oz Soy sauce
6 oz Dry sherry
4 Garlic cloves
2 Ginger slices
3 Scallions, in 1″ lengths
1 Cinnamon stick
1 Star anise star
4 Basil sprigs
1 tb Sugar
Water to cover
2 tb Gelatin
4 oz Cold water
Sesame oil
Wash meat and pat dry. Brown quickly on all sides in a
little oil. Combine next 9 ingredients in a large
kettle. Bring to a boil. Add meat and water to cover.
Lower heat and let simmer at lowest heat for 2 hrs.
Off heat, let steep for 1 hr. Remove beef, chill, and
slice thin.
Strain and defat liquid. Soften gelatin in water; add
to liquid in a fresh pot. Bring to a boil and reduce
to 2 – 2 1/2 c. Let cool. Arrange beef in a serving
bowl or dish or mold that has been oiled with a dash
of sesame oil. Pour cooled liquid over. Chill in
fridge.
To serve: unmold on a bed of greens.

Title: Green Beans with Mushrooms

2 lb Green beans, fresh; 1"pieces 1 ts Sugar
3 c Water, salted; boiling 3 oz Mushrooms, sliced canned
1 ts Salt 1/2 c Butter; melted
Place beans in saucepan containing boiling walted water. Add salt and
sugare. Cover and simmer for 30 minutes; drain. Saute mushrooms in
butter and add to beans.

Food Exchange per serving: 1 VEGETABLE EXCHANGE + 1 FAT EXCHANGE
(Nancy O’S note: 1/2 Cup of butter I sure would use margarine and
would, for sure, cut back on it even though I switched to margarine
MAKE IT WORK. I find it is really important to fix them veggies that
are taste for the diet…..)
NANCY C’S NOTE: Yes, the recipe DOES call for 1/2 cup butter. This
seems excessive to me so I’ll probably just use a tablespoon or two.
(Sorry Nancy C. not me!!! It will be 1 to 2 tablespoon margarine for
me)

Hearty Beef Stew

2 pounds beef — cut in 1-inch cubes
5 carrots — sliced
1 large onion — diced
3 stalks celery — sliced
28 ounces tomatoes
1/2 cup quick-cooking tapioca
1 whole clove
2 bay leaves
Salt and pepper to taste
Trim all fat from meat. Put all ingredients in crock-pot. Mix
thoroughly. Cover and cook on low 10 – 12 hours. (High; 5 to 6 hours).
To enhance the flavor, put in a day of snow sking. Then have this for
dinner.
