Chocolate Icing

Title: Chocolate Icing

1 c Sugar
4 tb Chocolate
3 tb Milk
1 tb Water

Notes: From Grandma Ruby’s (Williams) files. Newspaper clipping.
Looks old. Also on clipping are Confectioners’ Icing and Chocolate
Frosting. This chocolate icing is recommend for frosting an Angel
Food Cake.

Mix chocolate or cocoa with milk and water combined and heat to
boiling. Then add sugar. Boil five minutes, stirring occasionally.
Spread on cake that is cold.

SPECIAL THAI CHICKEN WITH CHILLIES (MILD)

2 tb Oil
4 Fresh Red Chillies
— seeded and sliced
3 Garlic cloves — sliced
500 g Chicken breast — sliced
1 Onion — sliced
2 tb Oyster sauce
1 tb Fish sauce *
1 tb Tamarind sauce
2 ts Brown sugar
— (or jaggary if available)
1/2 c Straw mushrooms
— (or tinned mushrooms
— if desperate)
1/2 c Bamboo shoots (strips)
1/2 Lime — juiced
6 bn Coriander (fresh)

*NOTE: (Fish sauce is available from Asain food shops. Alternatively
substitute twice this amount soy sauce.)

Instructions: ÿÿÿÿÿeat oil in wok, add chillies and garlic and
fry until crisp and golden. Drain onto paper towels (but leave oil in the
wok). Fry chicken and onion in oil until chicken is cooked. Add lime juice
and vegetables. Fry for about 2 minutes. Add sauce.

Title: CHOCOLATE MINT SUGAR COOKIE DROPS

2 1/2 c All-purpose flour
1 1/4 t Baking powder
3/4 t Salt
1 c Granulated sugar
3/4 c Vegetable oil
2 Eggs
1 t Vanilla extract
1 pk NESTLE Toll House mint
-flavored semi-sweet
-chocolate morsels (10 oz)
Assorted colored sugars or
-additional granulated sugar

Preheat oven to 350′F. In small bowl, combine flour, baking powder and
salt; set aside.

In large mixer bowl, combine granulated sugar and oil. Add eggs, 1 at a
time, beating well after each addition. Blend in vanilla extract.
Gradually beat in flour mixture. Stir in Nestle Toll House mint flavored
semi-sweet chocolate morsels. Shape rounded measuring teaspoonfuls of
dough into balls; roll in colored sugar. Place on ungreased cookie sheets.

Bake 8-10 minutes until set. Let stand on cookie sheets 2 minutes. Remove
from cookie sheets; completely.

Makes about 5 1/2 dozen cookies.

  • Rutabaga Puree

    RUTABAGA PUREE

    1 Rutabaga about (1 lb) OR
    1 lb Turnips
    1 md Size orange sweet potato
    1/4 ts Red (cayenne) pepper
    1/2 c Non-fat dry milk powder
    3 tb Fresh parsley — chopped

    Peel and dice rutabaga and sweet potato; place in a
    saucepan. Cover with water and bring to a boil. Cover
    ans simmer, until tender. Drain, reserving in little
    of water. Place vegetables in a blender or food
    processor fitted with the metal blade and process to a
    puree. Add cayenne, nutmeg and dry milk; process to
    blend. Rewarm in saucepan w some of reserved water if
    necessary. Garnish with parsley and serve.

    Smokehouse Chili

    Title: SMOKEHOUSE CHILI

    3 1/2 lb Flank steak
    2 Med. onions coarsely chopped
    2 c Tomatos stewed chopped
    1 c Tomato paste
    1 tb Liquid Smoke
    1/4 c Bullseye Barbecue Sauce
    24 oz Beer
    6 Jalapenos peppers seeded
    – chopped
    3 Garlic cloves minced
    1 c Bell pepper diced
    3 tb Chili powder
    5 tb Cumin
    3 tb Masa Harina
    4 c Tomato sauce
    Salt as needed
    2 ts Back pepper

    Cut meat into small cubes approx. 3/8″ in size. Brown
    meat, onions, Bell pepper, and garlic in a heavy
    skillet. Put the beer into alarge pot and bring to a
    slow boil. Boil for 10 minutes then add the tomato
    sauce, the stewed tomatos, the meat onion/pepper
    mixture, the Jalapenos, the barbecue sauce, and the
    Liquid Smoke. Reduce heat to Medium and cook for 1/2
    hour. Stir every few minutes. Add 2 T of the cumin,
    salt, pepper, Tabasco sauce. Cook for 1/2 hour more.
    At this point add the tomato paste, masa harina, and
    continue cooking for 15 minutes. Add the remaining
    cumin and cook for 10 minutes more. Origin: Jerry

  • Title: Beaumont Inn Corn Pudding

    2 c White whole kernel corn
    4 Eggs
    4 oz Flour
    1 qt Milk
    4 ts Sugar
    2 oz Butter; melted
    1 ts Salt

    Recipe by: Beaumont Inn

    1. In a casserole dish, mix corn, salt, sugar and butter. Beat eggs and add
    to milk. Stir into the corn mixture. Preheat oven to 450 degrees.

    2. Place in oven for 10 minutes. Remove and stir with long prong fork,
    disturbing the top as little as possible.

    3. Return to the oven for 10 more minutes. Repeat stirring procedure.

    4. Return to oven for 10 more minutes. Repeat stirring procedure.

    5. Return to oven for 10 – 15 minutes. Top should be lightly brown and
    pudding should be firm.

    Note: This side dish is so popular that we offer it at lunch and dinner
    every day. The 3 step cooking process and the use of white corn makes this
    a different and unique version of this Kentucky classic.

  • Apple Crisp

    Title: Apple Crisp

    1 c C H Golden Brown Sugar
    1/2 c All-purpose flour
    1/2 ts Nutmeg
    1/2 ts Cinnamon
    1/4 ts Salt
    1/4 c Butter or margarine
    5 c Sliced tart apples
    — (5 to 6 apples)

    Mix sugar, flour, spices, and salt. Cut in butter until mixture is
    crumbly. Spread apples in bottom of buttered 8- or 9-inch square baking
    pan. Sprinkle crumbly mixture over fruit; pat lightly with fingers. Bake
    uncovered at 350 degrees for 40 to 45 minutes, or until apples are tender.
    Serve warm with cream or ice cream. Makes 6 to 8 servings.

    Title: CHOCOLATE MADELEINES

    Yield: 24 servings

    2 Eggs
    1/2 c Sugar
    1 ts Grated lemon rind; OR
    2 ts Grated orange rind
    1 ts Vanilla extract
    1/4 ts Salt
    2/3 c All-purpose flour
    1/3 c Unsweetened cocoa
    8 tb Butter; melted
    -cooled slightly, plus
    4 tb Butter; softened

    PREHEAT OVEN TO 400F. Smear 1/2 teaspoon softened butter over the
    inside of each madeleine form. Be sure to completely cover with
    butter–don’t leave spots. Combine the eggs, sugar and lemon or
    orange rind in a large mixing bowl, and stir them together. Set in a
    pan of simmering water and stir until the egg mixture is very warm to
    your finger. Remove from the heat and beat with a mixer at high speed
    until fluffy, pale yellow, and tripled in volume, about 3 minutes.
    Add the vanilla and salt. Dump the flour and cocoa into a sifter or
    strainer. Sift once, return to sifter or strainer and sprinkle half
    of it over the egg mixture, and fold it in. Pour in 8 tablespoons of
    butter and sprinkle on the remaining flour, and fold gently just
    until the batter is mixed. Spoon a generous tablespoon of batter into
    each prepared mold; do not spread it evenly; it will level itself in
    the oven. Bake for about 10 minutes, until the edges of the cakes are
    golden and they lift easily from the molds. (If you have only 1 pan,
    and can bake only 12 at a time, let the mold cool, wipe it out,
    grease with butter, then refill with batter and bake again.) Remove
    from the oven, slipping the tines of a table fork under each cookie
    to free it, and transfer the madeleines to a rack to cool. Serve
    within a few hours, or wrap airtight and freeze. Serve plain, or
    sprinkle the ribbed side with confectioners’ sugar.

    1/4 c Unsweetened cocoa

    1/2 c Peanut butter
    3 c Oatmeal
    1 t Pure vanilla extract
    pn Salt

    In a saucepan, combine butter or margarine, cocoa,
    sugar and milk. Bring to a boil and boil 1 minute.
    Remove from heat and stir in peanut butter, oatmeal,
    vanilla and salt. Drop from a teaspoon onto waxed
    paper and allow to cool.

    Makes about 3 dozen.

  • CHILE CHEESE CORNBREAD MUFFINS

    1 c Cornmeal
    (blue or yellow)
    1 c Flour
    1/4 c Sugar
    1 tb Baking powder
    1 t Salt
    1 Egg, beaten
    1 c Milk
    1 1/2 tb Butter
    1 Onion, diced
    1/4 c Poppy seeds
    1 Can diced chiles,
    Or fresh
    1/4 lb Cheddar cheese,
    Shredded

    Melt butter in pan, add onions and saute until nicely
    brown. Take off head, add poppy seeds. In bowl
    combine dry ingredients and cheese and chiles.
    Combine egg and milk and add to dry stuff. Beat until
    mixed. Add onions and poppy seeds. Put into 12 muffin
    papers and bake at 400 degrees for 15-20 minutes or
    until brown. Additional cheese can placed on top of
    muffins if desired. WALT
