EASY LOW-FAT CHILI

1 md Onion — chopped
1/4 c Green pepper — chopped
4 c — water; divided
1 cn Great Northern beans — rinsed
-and drained (15 oz)
1 cn Navy beans — rinsed and
-drained (15 oz)
1 cn Salt-free tomato sauce
-(6 oz)
1 cn Low-salt diced tomatoes
-undrained (14.5 oz)
2 ts Chili powder, or to taste
1 t Salt (optional)
1/2 ts Pepper

In a large saucepan, cook the onion and green pepper
in 1/2 cup water until tender. Add beans, tomato paste
and tomatoes. Stir in chili powder, salt if desired,
pepper and remaining water; bring to a boil. Reduce
heat; cover and simmer for 20 minutes.

    Title: Green Rice

    Yield: 8 servings

    2 c Cooked brown rice
    2 c Grated cheese
    1 c Chopped parsley
    Egg substitute equivalent to
    — 2 eggs
    1/2 c Olive oil
    2 c Milk
    2 Green onions
    1/2 Clove garlic
    1 ts Salt

    Chop onion and garlic. Cook in oil (do not brown). Add other
    ingredients and put into a lightly greased casserole. Bake at 350 F.
    for 45 minutes. Remove from oven and let stand 5 minutes before
    serving.

    Yield: 8 to 10 servings.

  • CHEESE AND APPLE TARTLETS

    Amount Measure Ingredient — Preparation Method

    Pastry:
    2 c All-purpose flour
    1/2 ts Salt
    1/2 c Unsalted butter, cut in
    -small pieces
    5 tb Ice water (or 6 tb)
    Apple filling:
    1 1/4 lb Cooking apples, peeled,
    -cored and coarsely chopped
    8 ts Sugar
    16 ts Shredded cheddar cheese

    Pastry: Combine flour and salt in large bowl. With a pastry blender
    or 2 knives cut in butter until mixture resembles coarse meal.
    Gradually sprinkle with ice water, tossing with a fork until all is
    moistened. Gather dough into a ball. Divide dough in half. Form
    each ball into a square. Wrap and refrigerate 30 minutes.

    Assemble: Preheat oven to 425 degrees F. Cut each dough square in
    quarters. On lightly floured surface, roll out each pastry piece to a
    5-inch circle. Press pastry rounds into 4-inch tartlet pans. Trim
    edge. Set pans on baking sheet. Spoon chopped apples evenly in
    pastry shells. Sprinkle each with 1 ts sugar. Bake at 425 degrees F
    for 20 minutes until pastry is lightly browned and apple is tender.
    Remove from oven. Sprinkle each tartlet with 2 ts cheese. Bake at
    425 degrees F for 5 minutes until cheese is golden brown. Serve hot
    or cold.

    1 1/2 Sleeves Premium Saltines
    2 Cans Minced Clams With Juice From 1 Can
    1/4 Lb Melted Butter
    2 Tsp Garlic Powder
    2 Sprigs Dill, Finely Chopped

    Crush saltines, and melt butter. Preheat oven to 350F. In baking dish
    mix
    crushed saltines, two cans of clams with juice from one can. Add garlic
    powder, melted butter, and dill. Mix well. Bake for about 30 minutes or
    until it bubbles. Serve with saltines.

    2 c Butter
    1 c Sugar
    4 Egg — beaten
    2 tsp Almond flavoring
    5 c Flour
    1/4 tsp Salt

    Cream butter; add sugar and cream until light. Add eggs and flavoring.
    Sift flour and salt together and add to first mixture. Mix well. Press
    dough through cookie press onto ungreased cookie sheet and form into
    shapes. Bake at 350 for 8 to 12 minutes.

  • HAM AND SCALLOPED POTATOES

    10 md Potatoes, thinly sliced
    1 c Grated Cheddar
    2 Onions, thinly sliced
    1 cn Cream of mushroom soup
    Paprika
    Salt and pepper to taste

    Toss sliced potatoes in 1/2 teaspoon cream of tartar and 1 cup water.
    Drain. Put half of ham, potatoes, and onions in CROCK-POT.
    Sprinkle with salt and pepper, then grate cheese Repeat with
    remaining half. Spoon undiluted soup over top Sprinkle with paprika.
    Cover and cook on low 8 to 10 hours. (High: 4 hours). From Rival

    6 oz Slice filet mignon, about 1
    -1/2 to 3 inches wide
    1/8 ts Fresh lime juice,
    -approximately
    Sea salt
    Freshly ground pepper

    Place the beef between two sheets of plastic wrap and pound, pushing it
    outward as you go, to a rough oval shape. Fold into a package and pound
    out again to the required size. Peel off the top plastic wrap and replace
    with wax paper. Turn meat over and replace second sheet of plastic with
    wax paper; set aside until ready to use.

    Heat a griddle. When very hot, grease lightly. Remove top paper. Sprinkle
    the exposed side of the meat with lime juice and salt and pepper and lay it
    face down, with the aid of the paper, on the griddle. Strip off the bottom
    paper. Cook for about 2 seconds, flip the meat over with two spatulas so
    it will not break in the middle, and cook for 2 seconds more. Serve
    immediately, flat if possible, on a large plate with refried beans, and
    fresh salsa of your choice.

  • Seitan A La Normandie

    Title: SEITAN A LA NORMANDIE

    4 c Sliced onions
    2 tb Minced garlic
    2 tb Sesame oil
    -OR- other cooking oil
    4 Pieces of seitan, 2 oz each
    – fried and simmered
    -(SEE NOTE IN DIRECTIONS)
    6 tb Tamari
    4 tb Apple juice concentrate
    1 c -Water
    1/2 c Ground, roasted pecan nuts
    -(Optional; this dish is
    – more delicate without it)
    3 md Apples; peeled, cored,
    – and thinly sliced
    2 tb Mirin or calvados or sherry

    NOTE: This recipe needs uncooked seitan. Cut the
    seitan into four thin pieces (1/8 to 1/4 inch thick),
    each about 2 ounces. The thinner the better. Fry the
    seitan in a (little?) hot oil until lightly browned
    and then simmer it in a little water for about 30
    minutes before using. If you don’t simmer it first,
    you may need to add more liquid to the recipe.

    Saute the onions and garlic in the oil until the
    onions are soft and translucent but not fully cooked.

    Place the seitan in an ovenproof baking dish and cover
    it with tamari, apple juice concentrate, and water.
    Cover with the sauteed onion mixture and sprinkle the
    ground pecans over it, if you wish. Fan the apples
    over the onions and pour the mirin on top. Cover the
    dish with a tight-fitting lid or aluminum foil, and
    bake at 300 degrees F for 2 hours. Serve hot.

    Title: BLOND BROWNIES

    8 oz (1)pkg white cake mix;
    -NO-SUGAR
    2 Eggs;
    2 tb Granulated brown sugar;
    -REPLACEMENT
    2 tb Water
    1/4 c Mints chocolate chips;
    1/4 c Peanut butter chips;

    Combine cake mix, eggs, brown sugar REPLACEMENT and water in mixing
    bowl. Beat in medium speed until well blended and thickened. Fold in
    chips. Pour batter into two, greased and papered 8-in pans. Bake at
    375 degrees for 12 to 15 minutes or unitl brownies test done. Cut
    into 2-in squares. Food Exchange per serving: 1 BREAD EXCHANGE + 1/2
    FAT EXCHANGE PER SQUARES. CAL: 1 SQUARE: 56;
