2 c Cups
1 c Dried red chiles such as
-Piquin or Cayenne
2 c Vegetable oil

Heat the oil in a pan to 350 F. Remove from heat, add
chiles, and let stand until cool.

Cover pan and let stand for 12 to 24 hours … the
longer it sits the hotter it gets. Strain and use as
any vegetable oil.

    Title: AROMATIC BEEF (COLD)

    Yield: 8 servings

    2 lb Beef bottom round,
    -fat trimmed
    Oil
    4 oz Soy sauce
    6 oz Dry sherry
    4 Garlic cloves
    2 Ginger slices
    3 Scallions, in 1″ lengths
    1 Cinnamon stick
    1 Star anise star
    4 Basil sprigs
    1 tb Sugar
    Water to cover
    2 tb Gelatin
    4 oz Cold water
    Sesame oil

    Wash meat and pat dry. Brown quickly on all sides in a
    little oil. Combine next 9 ingredients in a large
    kettle. Bring to a boil. Add meat and water to cover.
    Lower heat and let simmer at lowest heat for 2 hrs.
    Off heat, let steep for 1 hr. Remove beef, chill, and
    slice thin.

    Strain and defat liquid. Soften gelatin in water; add
    to liquid in a fresh pot. Bring to a boil and reduce
    to 2 – 2 1/2 c. Let cool. Arrange beef in a serving
    bowl or dish or mold that has been oiled with a dash
    of sesame oil. Pour cooled liquid over. Chill in
    fridge.

    To serve: unmold on a bed of greens.

    GRANDMA’S CHICKEN AND DUMPLING SOUP

    ********Chicken Broth*******
    1 ea Fryer (2 1/2 – 3 lb chicken)
    Cut up into small pieces.
    6 c Cold water
    3 ea Chicken boullion cubes
    6 ea Peppercorns
    3 ea Whole cloves
    **********Soup Base*********
    1 cn 10 3/4 oz. chicken broth
    1 cn 10 3/4 oz. cream chick. soup
    1 cn 10 3/4 oz. cream mush. soup
    1 c Chopped celery
    1 1/2 c Chopped carrots
    1/4 c Chopped onion
    1 c Chopped potatoes
    1 ea Small bay leaf
    1 c Fresh or frozen peas
    1 t Seasoned salt
    ******Feather Dumplings*****
    2 c Flour
    1 t Salt
    4 ts Baking powder
    1/4 ts White or black pepper
    1 ea Egg, well beaten
    2 tb Melted butter
    2/3 c Milk

    Place fryer, water, boullion, peppercorns and cloves
    in kettle and bring to a boil. Reduce heat; simmer
    until chicken is tender (about 1 1/2 hours). Cool
    chicken just slightly; cut into bite size pieces and
    set aside. Strain and skim chicken broth. Put
    reserved chicken and broth in large kettle; add cans
    of broth, chicken, and mushroom soups, celery,
    carrots, onion, potatoes, bay leaf, peas and seasoned
    salt. Put cover on kettle; simmer soup on low heat for
    about 2-3 hours. About 30 minutes before serving, mix
    up feather dumplings by sifting dry ingredients
    together. Add egg, melted butter and enough milk to
    make moist, stiff batter. Drop by teaspoons into
    boiling liquid. Cook, covered and without “peeking”
    for 18-20 minutes or until the dumplings are done.
    Yield is 10 – 12 servings.

    1/4 c Sugar use 2 1/2 T fructose
    FRUCTOSE
    1/3 c “ ” 3 1/2 T “
    1/2 ” “ 5 T ”
    2/3 c “ ” 7 T “
    3/4 c ” “ 1/2 c
    1 c ” “ 2/3c ”

    Substitute fructose in recipes calling for sugar.
    Since it is a natural sweetener there should be
    appreciable change in blood sugar levels.
    Fructose does not break down in cooking like some
    artificial sweeteners.
    General rule of thumb is to use 1/3 less fructose
    thatn the amount of sugar called for. It can be used
    in all diets,but diabetics should check with their
    doctors if there’s any doubt about using it.

    MARASCHINO PARTY CAKE

    2 1/4 c Flour
    1 1/3 c Sugar
    3 ts Baking powder
    1 t Salt
    1/2 c Shortening
    1/4 c Maraschino cherry juice
    16 Maraschino cherries cut into
    -eighths
    1/2 c Milk
    1/2 TO
    2/3 c Egg whites, unbeaten
    – 4 large eggs
    1/2 c Chopped nuts

    Sift together in mixing bowl flour, sugar, baking powder and salt. Add
    shortening, cherry juice, cherries and milk. Mix on slow to medium speed
    for 2 minutes. Add egg whites and continue beating 2 more minutes. Add
    nuts. Bake in two layers in 350 degree oven for 30 to 35 minutes.
    Ice with 7 minute icing and decorate with cherries.

    Dill Pickle Soup – Pc

    7 c ;water
    1 1/2 lb Soup bones
    8 oz Mixed vegetables
    1 c Dill pickles; shredded
    1/2 c To 1 cup sour cream
    4 tb Flour
    1 c Dill pickle juice
    Salt

    Rinse vegetables and soup bone, clean, prepare stock and drain
    off.

    Shred dill pickles into fine strips.

    Garnish soup with flour and cream, bring to the boil; add uncooked
    dill pickles and pickle juice, salt to taste. Heat.

    (The shredded pickles may also be added when cooked.)

    Serve with potatoes, dropped noodles or cooked farina cooled and

    1/3 Cup brown rice — uncooked
    1 Cup lentils — uncooked
    4 Cups water
    1 onion — chopped or sliced
    1 carrot — chopped or sliced
    2 potatoes — chopped
    1 green pepper — chopped
    1 Cup tomatoes — chopped
    1 clove garlic — crushed, or more
    1 bay leaf
    1/2 teaspoon basil
    1 Tablespoon tamari
    1 Tablespoon lemon juice
    1 Tablespoon molasses
    1 Tablespoon cider vinegar

    Put lentils, rice, and water in a large pot. Bring to a boil. Reduce
    heat, cover, and simmer 30 minutes. Add onions, carrots, and
    potatoes. Simmer 30 minutes more. Add green pepper, tomatoes, and
    seasonings. Cook an additional 30 minutes. Serve hot.

    Curried Leek Potato Soup

    1 lg Onion, chopped
    4 lg Leeks, washed sliced
    12 oz Potatoes, diced
    1 pn Arame weed
    1 t Rosemary
    1/2 ts Curry powder
    1 3/4 pt Water
    1 ea Garlic clove
    Soy sause, to taste

    Heat oil in a soup pot saute the onion leeks for 5
    minutes. Add the potatoes, arame, rosemary, curry
    powder water. Stir well, bring to the boil, reduce
    heat, cover cook for 20 minutes. Blend until smooth
    in a blender with the garlic clove soy sauce.
    Reheat serve.

    1 c Cooked chicken, diced
    1 cn Cream celery soup
    1 cn Cream of chicken soup
    1 cn Chicken broth
    1 1/3 c Minute rice
    1 T Worcestershire sauce
    1 ds Tabasco
    1/3 c Sherry
    Salt and pepper
    1/2 cn French onion rings

    Mix all ingredients except french onion rings in
    casserole and place in oven heated to 325 degrees for
    7 minutes. Sprinkle french onion rings on top and bake
    for 7 more minutes.

    3/4 cup vegetable shortening
    –butter flavored
    1 1/4 cups light brown sugar, packed
    1 egg
    1/3 cup orange juice
    1 1/2 teaspoons vanilla extract
    3 cups rolled oats — quick-cooking
    1 cup all-purpose flour
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/4 teaspoon ground cinnamon
    1 cup sweetened coconut flakes
    1 cup chopped dates
    1 cup chopped nuts — walnuts or pecans

    Preheat oven to 375 degrees; grease cookie sheets. In
    a large bowl with an electric mixer on medium speed, beat
    the shortening, brown sugar, egg, orange juice and vanilla
    extract until well blended. In a medium bowl, combine the
    oats, flour, baking soda, salt and cinnamon. With the mixer
    on low speed, beat the flour mixture into the shortening
    mixture until just blended. Stir in the coconut, dates and
    nuts. Drop the dough by rounded tablespoonfuls 2 inches
    apart onto the prepared cookie sheets. Bake one cookie
    sheet at a time for 10 to 12 minutes, or until the cookies
    are lightly browned. Cool for 2 minutes on the cookies
    sheets. Remove to racks to cool completely.
