Melon Medley Salad

MELON MEDLEY SALAD

2 c Small cantaloupe balls
2 c Small honeydew melon balls
2 c Small watermelon balls
2 c Small crenshaw melon balls
1 c Chopped celery
1/4 c Chopped pistachio/almonds
—–DRESSING—–
1/4 c Light sour cream
2 tb Honey
1 tb Minced fresh mint
Leaves
1 tb Triple sec liqueur
Lettuce leaves optional

Combine cantaloupe, honeydew, watermelon and crenshaw balls and toss
lightly to blend. Chill in plastic bags until ready to serve. At serving
time, drain juice from melon balls and reserve for another use. Toss melon
balls with celery and nuts. Add dressing and toss again. Serve in scooped
out melon halves, if desired, or in lettuce lined salad bowls. DRESSING:
Combine sour cream, honey, mint leaves and liqueur, blending well.

  • Soft Pineapple Cookies

    Title: Soft Pineapple Cookies
    Categories: Cookies
    Yield: 3 Dozen

    2 c Sugar
    1 c Shortening ( Crisco )
    4 Eggs
    1 ts Vanilla extract
    Or
    1 ts Coconut extract
    1 c Crushed pineapple well
    Drained
    4 1/2 c Flour
    2 ts Baking soda
    1/2 ts Salt
    1/2 c Finely chopped nuts
    Or
    1/2 c Shredded coconut

    Cream sugar and shortening. Add eggs one at a time to
    blend. Add drained pineapple and nuts. combine dry
    ingredients and add to creamed mixture. blend into a
    stiff mixture. Drop by tbs. on a lightly greased
    cookie sheet a few inches apart. Bake 350 about 15
    minutes or until browned at edges and appears set.
    Remove to racks to cool. Makes 3 to 4 dozen Note: for
    those of you who don’t know what Crisco is: its a
    white solid vegetable fat with a creamy texture. when
    melted its used to fry things or left as is, its used
    for baking purposes.

    Onion Rings

    2 large Yellow onions
    1 quart Buttermilk
    2 cups Unsalted cracker meal
    2 cups All-purpose flour
    Oil for deep-frying

    Slice the onions and make rings approx. 1/2 inch in width.

    Dip into buttermilk, then coat with the flour. Dip into buttermilk
    again, then coat with the unsalted cracker meal.

    (works best if you use the “wet hand, dry hand” method)
    Place rings onto wax paper. Separate layers with additional sheets of

    wax paper.

    Best if allowed to refrigerate overnight to allow batter to “set”.

    Deep fry until golden-brown. Salt if desired at serving time.

  • Deviled Eggs And Noodles

    Title: Deviled Eggs And Noodles

    1 ea Recipe #19 (Deviled Eggs) 2 T Chopped Onion
    1 T Margarine Or Butter 2 1/2 c Noodles, Cooked
    1 c ( 8 ozs) Dairy Sour Cream 1/3 c Grated Parmesan Cheese
    1/3 c Milk 1/3 c Sliced Ripe Olives
    2 t Poppy Seeds 1/2 t Salt

    Prepare Deviled Eggs according to Recipe 19. Cover and microwave onion
    and margarine in 1 1/2-Qt casserole on high (100%) until onion is tender,
    1 1/2 to 2 minutes. Stir in remaining ingredients. Cover and microwave
    until hot, 5 to 6 minutes.

    Arrange eggs on noodles. Cover and microwave until eggs are hot, 1 to 2
    minutes.

    1 lb Chicken Breast — boneless
    skinless
    *******Sauce*******
    1/2 c Soy Sauce
    1 c Orange Juice
    1 tbsp Lemon Juice
    1 tsp Sugar
    2 Cloves Garlic — crushed
    1/2 tsp Ginger
    ********************
    1 tbsp Oil
    1 med Onion — sliced
    1 Green pepper — sliced
    1 Red Pepper — sliced
    12 Flour Tortillas (6-8 inch)

    Cut chicken breasts into strips 1/4″ thick. Combine all sauce ingredients and
    pour over chicken strips. Cover and refrigerate overnight. Drain meat well and
    stir fry in oil along with onion and peppers until all pink color is gone from
    chicken pieces and vegetables are crisp-tender. Preheat sandwich maker . Trim
    sides from tortillas to form squares 5 X 5 or 6 X 6 inches. Brush outside of
    each with oil. Lay 4 tortillas on pocket grid oiled side down. Spoon chicken
    mixture into the triangle shaped pockets.

    Top with tortillas, oiled side up. Close lid and cook 3 minutes or until
    tortillas are heated through and sealed. Repeat with remaining ingredients.

    Makes 12 pockets.

  • Little Jam Cakes

    Title: Little Jam Cakes

    Yield: 1 Servings

    4 Eggs, separated
    1 c Sugar
    1 ts Vanilla
    1 ts Lemon juice
    1 1/2 c All purpose flour (measured
    Then sifted)
    1/4 ts Salt
    1 c Melted butter or margarine
    1 c Gooseberry jam

    Beat egg yolks until thick and beat in the sugar,
    vanilla and lemon juice. Fold in sifted flour and salt
    alternately with melted butter. When smooth, fold in
    stiffly beaten egg whites. Line 16 large or 24 small
    muffing pans with paper cups. Place a spoonful of
    batter in the bottom of each cup and a heaping
    teaspoon of jam. Cover with remaining batter. Bake at
    350F for 15 to 25 minutes depending on the size.
    These are good as a sweet dessert anytime or to pack

  • Melon Relish

    Title: Melon Relish

    Yield: 1 cup

    1 tb Olive oil
    2 tb Shallots; minced
    1/2 c Honeydew melon; small dice
    1/2 c Cantaloupe; small dice
    1/4 c White wine
    2 ts Chiffonade of mint
    Salt and pepper
    5 Pieces fried arugula
    Black pepper
    2 tb Parsley; chopped

    In saute pan, heat the olive oil. When the oil is
    hot, saute shallots for 1 minute. Add the melon and
    cantaloupe and saute for 1 minute. Add the white wine
    and continue sauteing for 2 minutes. Temove from heat
    and season with salt and pepper. Stir in mint. Chill
    for 1 hour. Pile the relish in the center of the
    plate. Arrange the scallops around the relish.
    Garnish with fried arugula, black pepper and parsley.

    6 large eggs
    1 cup sugar
    2 teaspoons cinnamon
    1 teaspoon salt
    5 pieces matzos — whole sheets
    Boiling water — for soaking
    6 large apples — peeled and chopped
    1/4 pound butter — melted
    12 ounce jar cherry preserves

    OVEN: 350
    Greased 9 x 13-inch pan

    Beat eggs til light and fluffy. Break up matzos into small pieces. Pour
    boiling water over and drain well. Add sugar to eggs; beat again. Add
    matzo; beat again. Add melted butter; fold in apples.

    Bake 1 hour. Spread preserves on top; bake 10 minutes longer.

    NOTES : Can freeze bottom without preserves. Reheat, then add preserves.

  • Title: NEVER ON SUNDAY CHOCOLATE ICE CREAM

    2 c Heavy cream
    2 c Half half
    2/3 c Sugar
    1/3 c Unsweetened Cocoa powder
    2 1/2 oz Semi-sweet chocolate; chop
    6 Eggs; well-beaten
    1/2 c Jack daniels whiskey

    Bring cream and half and half to a simmer in a large heavy saucepan.
    Add sugar and cocoa; stir utnil sugar dissolves. remove from heat. Add
    choclate, stir until smooth. Gradually whisk 1/2 cup chocolate
    mixture into eggs. Return mixture to saucepan. Stir over medium-low
    heat for 10-15 minutes or until mixture thickenes and coats the back
    of a spoon. Strain into bowl. Cool mixture completely, stirring
    often. Stir whiskey into custard. Pour into a 1 quart ice cream
    churn. Freeze according to manufacturer’s directions. Store in a
    covered container for several hours to mellow the flavor. If ice
    cream is frozen solid, soften in refrigerator before serving.

  • Jerky Stew

    Title: Jerky Stew

    Yield: 6 servings

    1 lb Jerky, beef or buffalo
    1 c Whole dried hominy, soaked
    -overnight in ample water
    1 lg Yellow onion, peeled/chopped
    1 lb Potatoes*, unpeeled/diced
    Salt and pepper to taste

    *Native Americans would have used prairie potatoes — arrowhead
    (Sagittaria latifolia).

    Break the jerky up into 1-inch pieces and place in a heavy, lidded
    kettle. Drain the hominy and add to the jerky, along with the onion.
    Cover with water and bring to a boil. Simmer, covered, until the
    hominy is tender, about 2 hours. You will have to watch this closely,
    as more water will have to be added as you go along. Add the potatoes
    and cook for an additional 20 minutes. Season with salt and pepper.
