1 lb CHORIZO – smoked, diced (or
-Linguica)
1 lb Potatoes – boiling type,
-peeled, diced
1 cn Kidney beans – drained
-(5-1/4 oz. can)
1 cn Tomatoes – diced (14-1/2 oz.
-can)
1/2 Head cabbage – green,
-medium, coarsely chopped
1 Med. onion – chopped
1 lg Carrot – diced
1/2 Bell pepper – green, diced
3 Clove garlic – minced

I saw this in Bon Appetit yesterday and decided to
keep it. I’ll bet a dollar to a doughnut that the
recipe originally called for Linguica, but was changed
to kielbasa for the masses. If you can’t find smoked
Linguica or Kielbasa, Andouille would also be a good
substitute. I hope to try this when it gets cooler
(like October — grin)! Hope it appeals to you, too.

Number of Servings: 8

Combine all ingredients in large pot. Bring to boil,
stirring occasionally. Reduce heat; simmer until
thick, stirring occasionally, about 2 hours. Season
with pepper. (Can be prepared 2 days ahead;
refrigerate. Rewarm before serving.)

  • CINNAMON BREAD PUDDING WITH WHISKEY SAUCE

    5 c Cinnamon bread pieces (1")
    1/4 c Raisins or dried currants
    2 Eggs
    2 Egg whites
    3/4 c Sugar
    2 1/2 c Hot skim milk
    —–WHISKEY SAUCE—–
    1 c Sugar
    1 c Water
    1/4 c Whiskey
    1/4 c Nonfat vanilla yogurt

    1. Preheat oven to 375F. Butter (or non-stick spray) a 13 x 9 x 2 (3 quart)
    baking dish. 2. Combine bread cubes and raisins in buttered dish. In medium
    bowl, combine eggs, egg whites and 3/4 cup sugar; beat well. Add hot milk.
    Mix well. Pour mixture over bread and raisins; let stand 5 minutes. 3. Stir
    gently and bake for 25-35 minutes or until liquid is absorbed. 4.
    Meanwhile, in a small saucepan, combine 1 cup sugar and water; mix well.
    Bring to a boil and boil for 5 minutes. Remove from heat; stir in whiskey.
    Cool to lukewarm. Stir in yogurt. 5. Serve warm bread pudding with warm
    sauce. TIP: To substitute for whiskey, use 1/4 cup water and 1 teaspoon
    brandy extract.

    1 lb Cabbage — Head, Small
    1 tb Vegetable Oil
    2 Onions — Medium, Chopped
    1/2 lb Pork — Lean, Cubed
    1 lb Ground Beef — Lean
    1 t Caraway Seed
    1/2 t Salt
    1/2 t Pepper
    1/2 c White Wine — Dry
    1 t Vegetable Oil
    3 Bacon — Strips, Thick Sliced

    Remove outer, wilted cabbage leaves and core. Place cabbage in a
    large pot of boiling water and simmer gently for 10 minutes. Remove
    and drain. gently pull off 12 leaves and set aside. Finely chop the
    rest of the cabbage. Heat 1 T vegetable oil; add onions, pork, and
    ground beef. Cook until lightly browned. Drain off excess fat. Add
    the chopped cabbage, caraway seeds, salt, and pepper. Pour in the
    white wine. Cover and simmer the mixture for 10 minutes, stirring
    often. Grease an ovenproof dish with 1 t of vegetable oil; line the
    dish with half the cabbage leaves. Spoon in the meat mixture, cover
    with the rest of the cabbage leaves. Cut bacon strips in half and
    arrange on top. Place in preheated 350 degree F. oven; bake for
    approximately 45 minutes.

    Using Frozen Bread Dough Healthwise

    Amount Measure Ingredient — Preparation Method

    2 teaspoons cornmeal
    1 loaf frozen honey wheat bread dough — thawed
    1/4 cup water
    1 1/2 cups small brococli florets
    1 yellow bell pepper — in 1/8″ wide strips
    3 tablespoons chopped red onion
    2 cloves garlic — minced
    3 Roma tomatoes — thinly sliced
    1 tablespoon fresh basil — in thin strips
    3/4 cup shredded Provolone cheese

    Heat oven to 450 F. Spray cookie sheets with Pam. Sprinkle evenly with
    cornmeal. Divide dough into thirds. Press or roll ech into a 7″ circle. Place
    on coated cookie sheets. Prick crusts generously with fork. Bake at 450 F. for
    8 minutes. (If crusts puff during baking, flatten slightly with spoon).
    Meanwhile, bring water to a boil in nonstick medium skillet. Add broccoli,
    bell pepper, onion and garlic. Return to a boil. Reduce heat. Cover and simmer
    until vegetables are crisp-tender, 3-4 minutes. Set aside.
    Top each partially baked crust with 1/3 of the tomatoes. Arrange vegetable
    mixture evenly over tomatoes. Top with basil and cheese. Bake at 450 F. for an
    additional 7-9 minutes or until cheese is melted and crusts are golden brown.

    NOTES : Per pizza: 470 calories, 12 g. fat, 24 mg. chol. If fresh basil in
    unavailable use 1 tsp. dried.

    MAHARAGWE (SPICED RED BEANS IN COCONUT MILK)

    2 md Yellow onions, chopped
    1 tb Oil
    2 ea Tomatoes, chopped
    1 t Salt
    2 ts Turmeric
    3 ea Chili peppers, ground
    2 c Coconut milk

    In a large pot, cover the beans with water simmer
    until they are tender. Saute the onions in the oil
    until golden. Add, with the remaining ingredients, to
    the pot simmer for several minutes until the beans
    are very tender the tomatoes are cooked. Serve over
    rice or a stiff porridge.

    2 cups sugar
    1 stick butter — melted and cooled
    1 teaspoon grated lemon peel
    1 teaspoon vanilla extract
    1 teaspoon lemon extract
    3 cups all-purpose flour
    2 teaspoons baking powder
    2 teaspoons salt
    1 cup buttermilk
    2 cups slivered almonds
    2 cups golden raisins
    3 cups chopped mixed dried fruits

    Preheat oven to 325 degrees F. Grease a clean, empty 1-pound coffee can. Line
    bottom with a piece of waxed paper, cut to fit, and grease paper. In a large
    bowl beat eggs and sugar until thick and pale yellow, about 5 minutes. Beat in
    melted butter, lemon peel and extracts. In a small bowl, mix flour, baking
    powder and salt and blend into egg mixture alternately with buttermilk. Stir
    in almonds, raisins and dried fruit. Pour batter into prepared can and place
    on a baking sheet. Bake 55 to 60 minutes, or until bread is well browned and a
    toothpick inserted in center comes out clean.

    Cool bread in can for 10 minutes, then turn out onto a rack to finish cooling.
    (You may have to cut out the bottom of the can to push out cake.) To serve,
    cut into slices or wedges. Makes 1 loaf

    2/3 cup olive oil
    2 onions — minced
    4 cloves garlic — peeled and minced
    3 28 ounce can whole peeled Italian plum tomatoes
    1 1/2 tablespoons dried oregano
    2 tablespoons dried basil
    Pinch of sugar
    Salt and pepper

    In a large pot heat the olive oil over medium heat. Add
    the onions and cook for 5 minutes or until translucent.
    Add the garlic and cook for another minute. Pour in the
    plum tomatoes and stir to combine. Add oregano, basil,
    sugar and salt and pepper and mix well. Bring to a simmer
    and cook for 25-30 minutes. Remove from heat and allow
    sauce to cool for 15 minutes.

    Pass the sauce through a food mill or puree in batches in
    a food processor. Caution: proceed with care to avoid
    being burned by the hot sauce. Return pureed sauce to pot
    and heat to serve.

    Yield: 6 cups

    A recipe that I got from my mom.

    1 cucumber
    1 tomato
    1/4 of an onion
    some green onions
    some fresh cilantro
    salt/peper to taste

    Peel and finely dice cucumber. Finely dice
    tomato and onion. Cut green onions and cilantro
    into small pieces. Mix all the ingredients.
    Salt and pepper to taste.

    2 Dried black mushrooms
    1/4 lb Lean pork
    1 tb Cornstarch
    1 tb Sherry
    1 Egg white
    6 Dr sesame oil
    1/4 c Bamboo shoots
    1 Scallion stalk
    1/2 c Stock
    2 ts Cornstarch
    6 c Stock
    1 tb Soy sauce
    3/4 To 1 tsp salt
    2 Eggs
    1 d Pepper

    Soak dried mushrooms. Shred pork. Combine cornstarch,
    sherry egg white; add to pork toss to coat.
    Sprinkle with sesame oil. Shred bamboo shoots soaked
    mushrooms. Mince scallion stalk. Blend cold stock
    remaining cornstarch. Put remaining stock in a pan
    with mushrooms, bamboo shoots, soy sauce salt. Bring
    to a boil. Reduce heat simmer, covered, 2 to 3
    minutes. Add cornstarch mixture cook, stirring,
    until soup begins to thicken. Add pork cook 1 minute
    more. Meanwhile beat eggs. Pour eggs in slowly,
    stirring constantly until they separate into shreds,
    then turn off heat. Sprinkle with minced scallions
    pepper. VARIATION: For the pork, substitute chicken.
