HAM AND POTATO CHOWDER

2 tb Butter or margarine
1/4 c Onion — chopped
1/4 c Green pepper — chopped
4 md Potatoes — washed, peeled
– cubed (3 cups)
1 t Salt
1/4 ts Paprika
1/8 ts Pepper
3 tb All-purpose flour
2 c Milk
1 cn (12 oz) Whole-kernel corn
– undrained
1 1/2 c Ham — cooked diced
Parsley — minced
2 1/3 c -Water

Melt butter in 3-1/2-quart saucepan. Saute onion and
green pepper until tender. Add potatoes, 2 cups
water, salt, paprika and pepper. Cover and simmer
about 15 minutes, or until potatoes are tender.
Combine flour and 1/3 cup water in small bowl; blend
well. Stir into potato mixture. Add milk. Simmer
until slightly thickened, stirring frequently. Add
corn and ham; heat through. Sprinkle each serving
with parsley.

    1 large can tomato juice
    2 cans Zesty tomato soup
    1 pound hamburger
    1 can chili beans
    Chili powder and pepper — to taste

    Brown hamburger and drain. Combine tomato juice and soup in pan or slow cooker
    . Add hamburger and beans. Boil for about 5 or 10 minutes. Then turn down he
    at to keep soup hot. Add chili powder and pepper to your family’s taste. This
    is a quick, easy, perfectly seasoned soup that tastes like you simmered it all
    day.

    GREEK STYLE PASTA WITH SHRIMP AND FETA

    1 md Onion
    2 tb Olive oil
    3 ea Garlic cloves
    2 c Tomatoes, canned in puree
    1 tb Oregano
    1 t Basil
    1/4 ts Pepper
    3/4 lb Fettucine
    3/4 lb Shrimp
    1/2 c Olives, black
    1/4 lb Feta cheese

    Bring large pot of water to boil.
    Cut onion into thin slices. In a large
    skillet, warm the oil over medium-high heat until hot but not smoking.
    Add the onion and garlic and cook until the mixture is golden, about 5
    minutes.
    Add the tomatoes, oregano, basil and pepper, and bring the mixture to
    a boil over medium heat, breaking up the tomatoes with a spoon.
    Reduce the heat to low, cover and simmer, stirring occasionally,
    while you cook the pasta and prepare the shrimp. Shell and devein
    the shrimp.
    Uncover the sauce, bring to boil over medium-heat. Add the shrimp,
    reduce heat to low, cover andsimmer for 3 minutes. Add the olives
    and half the feta cheese, stir to combine.
    Drain the pasta, serve topped with the shrimp and sauce. Crumble
    remaining feta cheese on top.

    FISH CHOWDER II

    Amount Measure Ingredient — Preparation Method

    1 c Diced potatoes
    1 c Boiling water
    3/4 lb Fish fillets, cubed
    1/2 ts Salt
    1/8 ts Pepper
    2 tb Parsley, chopped
    3 sl Bacon
    1 Medium onion, chopped
    1 c Milk

    Place potatoes in Dutch oven with boiling water,
    cover and cook 10-15 minutes. Fry bacon until
    transparent, add onion and cook until onion is soft
    and bacon is lightly browned. Add bacon, onion, bacon
    drippings and fish fillets to potatoes. Simmer 10
    minutes or until potatoes and fish are done. Stir in
    milk, salt and pepper. Simmer 5 minutes. Sprinkle with
    parsley.

    Yield: 2-3 servings

  • Title: CHEZ’ FREDDY’S ALTERNATIVE BROWNIES

    1 French Vanilla cake mix
    1 cn 21 oz crushed pineapple
    [drained]
    3/4 c Coconut [shredded]
    1 cn Condensed sweetened milk
    16 oz Pineapple ice cream topping
    1 lg (tub) CoolWhip
    1 tb Cinnamon/sugar

    1. Prepare the cake mix according to package
    directions, adding in the drained pineapple and the
    coconut, and pour into a 12″ x 15″ baking sheet pan
    that is greased and floured. Let cool to room
    temperature.

    2a. Remove cake from oven and immediately poke holes
    in the top of the cake with a wooden spoon handle
    then…

    2b. Heat the condensed milk and the pineapple
    topping `til free flowing liquid (like water) and pour
    the evaporated milk in them… then the pineapple
    topping in them as well…

    3. Dust the top with the cinnamon/sugar and
    refrigerate `til dessert is to be served…

    4. Remove from the fridge and, top with the cool
    whip, garnish with additional syrup, cinnamon/sugar,
    slice and serve…

  • Wine Fruit Cup

    Title: Wine Fruit Cup

    Yield: 6 servings

    1 1/2 c White Wine; Dry
    1 T Lemon Juice
    1/4 t Salt
    1/2 c Raisins; Golden Seedless
    2 ea Nectarines, Sliced
    1/2 c Sugar
    1 1/2 t Anise Seed
    1 ea Cinnamon Stick; Small
    4 ea Purple Plums; Sliced

    In an enameled or stainless steel saucepan, combine the wine, sugar,
    lemon juice, anise seed, salt and sinnamon stick and bring to a boil.
    Turn off heat and cool to room temperature. Combine the raisins,
    plums, and peaches in a bowl and strain the cooled wine syrup over
    them. Cover and refrigerate for several hours, stirring
    occasionally. NOTE: This fruit cup can be served as a dessert also.

    CHOCOLATE FINGERS

    Amount Measure Ingredient — Preparation Method

    1 c Powdered sugar
    1 c Powdered milk
    3 tb Unsweetened cocoa powder
    1/3 c Raisins
    1/3 c Glace’cherries
    1/3 c Mixed candied peel
    Vanilla extract
    1 c Vegetable shortening, melted

    Sift powdered sugar, powdered milk and cocoa into a bowl. Add fruit and
    toss until fruit is well coated.

    Stir in shortening and a few drops of vanilla. Mix thoroughly.

    Line an 8-inch square pan with plastic wrap. Pour mixture into pan.
    Refrigerate until firm. Turn out onto a board and cut into fingers. Wrap
    pieces in foil or pladtic wrap. Store in an airtight container in a cool
    place.

    Makes about 32 fingers.

    3 c Bake it all mix
    1 Egg
    3 tb Sugar
    1 tb Orange peel — grated
    3 tb Orange juice
    3/4 c Milk
    12 Sugar cubes
    Orange juice

    Place egg into bowl, blend in sugar. (NOTE: Place peel
    into a measuring cup. Fill to the 1/4 cup mark with
    orange juice and add enough milk to make 1 cup.) Add
    Mix and stir quickly until just blended. Batter
    will be lumpy. Fill muffin cups, rubbed well with
    shortening, 1/2 full. Onto the top of each unbaked
    muffin, press a cube of sugar dipped into orange
    juice. Bake in a 425 F. oven about 15 minutes.

    1/4 cup sugar
    1/3 cup prune paste
    1 each egg
    1 teaspoon vanilla extract
    3/4 cup flour
    1/2 teaspoon baking soda
    1/2 teaspoon cinnamon
    1/4 teaspoon baking powder
    1/4 teaspoon salt
    1 1/2 cups quick-cooking oats
    3/4 cup raisins

    *Original recipe calls for Sunsweet Lighter Bake (prune paste).
    Substitutes could be WonderSlim, homemade prune paste, or applesauce.

    In a large bowl, beat together sugars, Lighter Bake, egg and vanilla.
    In another bowl, combine flour, baking soda, cinnamon, baking powder and
    salt; stir into Lighter Bake mixture. Stir in oats and raisins. Drop
    by rounded teaspoonfuls onto baking sheets coated with vegetable cooking
    spray. Bake 8 to 9 minutes at 375 F. Cool on racks.
