1 1/2 Cups All-Purpose Flour
1 Cup (2 Sticks) Unsalted Butter, — cut into bits
1/2 Cup Sour Cream
1/2 Cup Almonds — finely chopped
1/2 Cup Sugar
1 1/2 Tablespoons Ground Cinnamon

In a food processor, combine the flour and butter. Pulse 2 or 3 times until
the mixture resembles very coarse cornmeal. Add the sour cream and pulse
brefly until the dough just begins to come together. Do not over mix. Form
into a disk, wrap in plastic, and refrigerate for 4 hours or overnight.

Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil or
parchment. In a medium bowl, combine the almonds, sugar, and cinnamon.
Sprinkle the almond-sugar mixture over a work surface, place the disk of
dough on top, and roll out into a 9-by-12-inch rectangle approximately
1/8-inch thick, encrusting the underside of the dough with the almond-sugar
mixture. Trim the edges and cut into even strips, 9 inches long by 1/2- inch
wide.

Gently pick up the ends of the strips and twist 2 or 3 times to form a
corkscrew shape and place on the baking sheet. Bake the twists for
approximately 15 minutes or until they’re brown and crisp. Remove to a rack
and allow to cool. The twists should be stored in an airtight container even
for a few hours and are best eaten the same day they are baked.

Sauteed Chicken Wontons

Title: SAUTEED CHICKEN WONTONS

9 Scallions
5 oz Boneless chicken thighs
2 ts Tamari or other soy sauce +
-more for serving
Oriental sesame oil
-(optional)
Salt and pepper
1/2 lb Wonton skins
6 tb Peanut oil
1/2 ts Minced fresh ginger
1 tb Sesame seeds
Salt and pepper

CHICKEN-TAMARI FILLING:

For the filling, cut the scallions into thin slices.
In a meat grinder or food processor, grind the meat to
a coarse texture, being careful not to overprocess.
Stir in 1/4 of the scallions, 2 teaspoons tamari, the
sesame oil, 1/4 teaspoon salt and 1/8 teaspoon pepper.

Bring a large pot of salted water to a boil. Put
about 1 tablespoon of the filling in the center of a
wonton skin. Brush the edges of the skin with warm
water, top with another skin, and press gently around
the filling to seal the edges. Repeat until all the
filling is used. Slide wontons into boiling water,
stirring gently, and cook for 2 minutes. Drain
carefully and plunge into cold water to stop cooking.
Drain again. Toss with 1 tablespoon of the peanut oil.

Mince the ginger. In a large frying pan, heat 1
tablespoon of the peanut oil over medium heat. Add
the sesame seeds; cook, stirring frequently, until
just golden, about 1 minute. Stir in the ginger. Add
the remaining scallions and cook until soft, about 2
minutes. Season to taste with salt and pepper.

Recipe can be made up to this point several hours
ahead.

Cooking and Serving: Heat 2 more tablespoons of the
peanut oil over medium heat. Brown the wontons in
batches, adding the remaining peanut oil between
additions, or use 2 pans. Cook until both sides are
golden, about 4 minutes total. Top wontons with the
scallion-sesame mixture. Serve additional tamari on
the side for dipping.

1 cn Tuna — 3 oz, flaked white
1 Garlic clove — minced
2 Anchovy fillets — minced -opt
1/2 c Mayonnaise
1/4 c Yogurt — -OR-
1/4 c -Sour cream
1/2 ts Pepper
—–SALAD—–
2 c Turkey — cooked diced
2 Potatoes — medium, cooked
-diced
1 bn Argula — or Watercress
6 sl Turkey — cooked
1 c Cherry Tomatoes
1/3 c Black Olives
2 T Parsley — coarsely chopped

For dressing, puree tuna with garlic, anchovies, mayonnaise and sour cream
or yogurt. Season with pepper.
For salad, combine diced turkey with cooked potatoes. Mix with 1/2 of
dressing. Taste for seasoning. Arrange arugula or watercress on large
plate. Mound potato and turkey mixture in centre. Arrange slices of turkey
on top of chopped salad. Drizzle remaining dressing. Arrange tomatoes and
olives around outside of the salad and sprinkle with parsley.
SERVES: 6-8

1/2 cup Butter — Melted
1/2 cup Sugar
12 ounce Milk Chocolate Chips
1/2 cup Milk
1 package Env. Unflavored Gelatin
16 ounce Cream Cheese — Softened
1/2 cup Sour Cream
1/2 teaspoon Almond Extract
1/2 cup Heavy Cream — Whipped
Garnishes *

* Garnishes to include whipped cream and chocolate shavings (optional).

In large bowl, combine vanilla waver crumbs, almonds, butter and sugar; mix
well.

Pat firmly into 9-inch springform pan, covering bottom and 2 1/2 inches up the
sides. Set aside. Melt over hot (not boiling) water milk chocolate chips; stir
until smooth. Set aside. Pour milk into small saucepan; sprinkle gelatin on
top. Set aside for 1 minute. Cook over low heat, stirring constantly until
gelatin dissolves. Set aside.

In large bowl, combine cream cheese, sour cream, and melted chocolate chips;
beat until fluffy. Beat in gelatin mixture and almond extract. Fold in whipped
cream. Pour into prepared pan. Chill until firm (about 3 hours). Run knife
around edge of cake to separate from pan; remove rim. Garnish with whipped
cream and chocolate shavings, if desired.

Makes 1 9-inch Cheesecake

2 each Cloves garlic — crushed
1/4 cup Sesame seed — toastd/crushd
1 cup Grn onions — finely chopped
1 teaspoon Pepper
1 teaspoon Sesame oil
2 cups Soy sauce
1 cup Sugar
1/4 cup Oil

Place short ribs in bowl. Add garlic, sesame seeds, green onions, pepper,
sesame oil, soy sauce, sugar and oil and toss to coat meat well.
Cover and let stand at room temperature 2 hours. Barbecue over coals or run
under broiler, turning and basting often with marinade until meat is tender.

Sprinkle salt, pepper, and paprika over the veal slices. Saute in butter
until browned. On each fillet place 1 stewed tomato, 3 spears asparagus
and a heaping T of mushrooms. Cook gently. Pour cooking juices over the
fillets while cooking. Cook uncovered until mushrooms are just tender.
Serve with pureed potatoes and a salad.

3 ea Egg yolk
3 ea Egg white
1 x Sponge cake
1 x Lady fingers
1 t Cornstarch
3 t Sugar
1/2 c Nuts, chopped

Place pieces of sponge cake, lady fingers or similar cake into an
earthenware dish (fill about 1/2 full). Add a few macaroons. Heat the
wine. Mix the cornstarch and sugar together and slowly add the wine.
Beat the yolks of eggs and add to the wine mixture. Cook about 2
minutes. Pour over the cake and let cool. When cool, cover with the
stiffly beaten egg whites and sprinkle with the chopped nutmeats.
Bake at 325-F for a few minutes to brown. Serve cold.

1 cup butter
2 1/2 cups sugar
2 eggs — beaten
1 tablespoon lemon rind — grated
2 tablespoons lemon juice
3 1/2 cups flour
1 tablespoon baking powder
1 3/4 cups coconut

Beat butter until soft and gradually add the sugar. Blend until creamy. Beat in
eggs, lemon rind and juice; stir in coconut. Mix together flour, baking powder
and salt. Stir this into butter mixture; mix well.

Form the dough into a 2″ roll on a piece of foil or waxed paper in which you ca
n wrap it securely. Chill the dough for 4-12 hours.

Slice cookies approximately 1/4 inch thick and place on cookie sheet. Bake at 4
00° for 8-10 minutes. Or drop by teaspoonfuls onto cookie sheet and bake.

Makes 5 dozen.
