1 1/2 c unbleached flour
2 pkgs active dry yeast
1 tsp salt
2/3 c evaporated skim milk
1/2 c water
1/2 c honey
1/2 c margarine — melted
2 eggs
1/2 c unbleached flour — * see note
—-Glaze—-
1/2 c honey
1/4 c margarine — melted
1/2 c raisins

To prepare batter, combine 1 1/2 cups flour, undissolved yeast, and salt in
a mixing bowl; set aside. In a skillet, heat evaporated skim milk, water,
1/2 cup honey and 1/2 cup margarine until very warm 120-130 degrees.
Gradually add to dry ingredients; beat 2 minutes at medium speed. Add eggs
and 1/2 cup flour. Beat 2 minutes at high speed. Place in a mixing bowl
coated with cooking spray. Cover tightly with plastic wrap> Refrigerate 2
to 24 hours.

On lightly floured surface, divide dough into 15 pieces. Roll each into a
20-inch rope. Divide each rope into: 1 12-inch (body), 1 5-inch (head), and
3 1-inch (ears and tail) strips. Coil pieces to make body and head; attach
ears and tail to head and body. Place bunnies on baking sheet coated with
cooking spray. Cover; let rise in warm, draft-free place until doubled in
size, 20 to 25 minutes. Bake at 375 for 12 to 15 minutes or until golden
brown. Remove to wire racks. Meanwhile to prepare glaze, combine remaining
honey and margarine in a saucepan until margarine has melted. Brush bunnies
with glaze while warm. Then, decorate with raisins for eyes.

NOTES : * Combine 3 more cups additional unbleached flour to make a stiff
batter.

    300 g jar of chili sauce
    400 g can cranberry jell
    1 small onion — chopped
    1 Tbsp lemon juice
    2 Tbsp brown sugar

    1. Heat sauce in saucepan until well mixed.

    2. Pour over weiners in crockpot and cook on low for 4 hours.

    Author’s Notes:
    I just made them this weekend. My recipe is as follows:

    I boiled my little smokies in water for 2-3 min to reduce the amount of
    grease.

    Difficulty : very easy.
    Precision : measure the ingredients.

  • Senators Navy Bean Soup

    Title: Senator’s Navy Bean Soup

    1 c Dried navy beans
    1 tb Olive oil
    3/4 c Diced onion
    1/4 c Diced carrot
    1/4 c Diced celery
    5 c Chicken broth
    1/2 ts Thyme
    Salt and pepper; as desired
    3 tb Lemon juice

    COVER THE BEANS with cold water and soak overnight. The next day,
    drain and discard water. Place oil in a 2-quart pot over medium heat
    and add the onions, carrots and celery. Cook for 5 minutes. Add the
    broth, beans, thyme, salt and pepper. Cover, reduce heat to low and
    cook until beans are soft, about 1 1/2 hours. Add lemon juice and
    serve.

    1 1/8 c Whole wheat flour (5 1/4 oz)
    1 1/8 c Bread flour (5 1/4 oz)
    1 t Salt
    1 tb Butter
    2 tb Molasses
    2/3 c Water
    1 1/2 ts Dry yeast
    TOPPINGS:
    3/4 tb Poppy seed (optional)
    3/4 tb Sesame seeds (optional)

    1. Place first 4 ingredients inside the bread pan. Add molasses and
    water. Close cover and place dry yeast into the yeast holder. SELECT:
    WHOLE WHEAT DOUGH MODE. Press start. (Breadmaker completes the basic
    dough mode 3 hours and 15 minutes later) 2. Rest in a greased covered
    bowl in refrigerator for 20 minutes. 3. Divide the dough into 6 equal
    portions. Roll each portion on a lightly floured surface into a log,
    approximately 3/4 inch thick and 8 inches long, using the palm of
    your hand. 4. Seal the ends together tightly to make a ring with a 1
    1/2 to 2 inch hole in the center. 5.Place on a greased baking pan.
    Spray water on top. Proof at 90 deg. for 30 minutes . 6. Bring 1
    gallon water with 1 tb sugar to a boil. 7. Reduce to a simmer. Cook 4
    or 5 bagels at a time for 7 minutes, turning once. Drain well. 8.
    Place on a greased baking pan. 9. Sprinkle tops with poppy seeds or
    sesame seeds, if desired. 10. Bake in 45 deg. oven for 25 to 30
    minutes until golden brown, turning them over after half the baking
    time.

    1 Unbaked 9″ pie shell
    4 ounces Sweet cooking chocolate
    3 tablespoons Butter or margarine
    1 teaspoon Instant coffee granules
    1/3 cup Sugar
    1 cup Light corn syrup
    3 Eggs — slightly beaten
    1 teaspoon Vanilla
    1 cup Pecans — chop coarse
    —–TOPPING—–
    1 teaspoon Instant coffee granules
    1/2 cup Heavy cream
    1 tablespoon Sugar
    1/4 teaspoon Vanilla

    Melt chocolate; stir in coffee. Remove from heat.
    Combine sugar and syrup in another pan. Bring to a boil, stirring until sugar
    is dissolved. Reduce heat and boil gently for 2 minutes, stirring occasionally.
    Remove from heat and add the chocolate mixture. Pour slowly over eggs, stirring
    constantly. Stir in vanilla and pecans. Pour into pie shell. Bake at 375~ for
    45-50 minutes or until filling is completely puffed across top. Cool and
    garnish with the topping and pecan halves if desired. Coffee-flavored Topping:
    Combine the coffee granules, heavy cream, sugar and vanilla in a chilled bowl.
    Whip just until soft peaks form. 1 cup.

  • Title: Barbecued Octopus with Pepper Salad

    1 lb Octopus, small
    1/4 c Olive oil
    1/2 c Lemon juice
    1 ts Oregano or marjoram, dried
    1 Garlic clove; crushed
    1 md Bell pepper, green
    1 md Bell pepper, red
    1 md Bell pepper, yellow

    MMMMM————————–DRESSING——————————-
    1/2 c Olive oil
    1 tb Lemon juice
    1 tb Red wine vinegar
    1 Garlic clove; crushed
    1 tb Parsley; finely chopped
    1/2 ts Salt
    Pepper

    Cut octopus into strips or leave whole if small enough. Wash well and
    place in a glass bowl. Add oil, lemon juice, herbs and garlic. Cover
    and place in refrigerator for 24 hours stirring occasionally. Cut
    capsicums into four lengthways, remove seeds and white membrane.
    Brush outer skin with oil and place skin down on hot barbecue until
    skins are well blistered, rub skins off with a towel. Arrange on
    plates, alternating colours. Drizzle with half of the dressing and
    set aside. Heat barbecue to medium heat. Place Octopus on the
    barbecue plate and cook for 15-20 minutes, turning frequently and
    splashing on a little marinade as they cook. Remove and pile into
    the centre of the pepper salad. Pour over remaining dressing and
    serve with fresh garden salad.

    1 cup Chopped onion
    1 Chopped green pepper
    10 milliliters Garlic — minced
    1 can (15-oz) tomato sauce
    1 can (12-oz) beer
    1 cup Shredded sharp cheddar
    Cheese
    1 package Carrol Shelby Texas brand
    Chili mix

    Brown meat; drain. Add onions, pepper and garlic; cook until vegetables are
    tender. Add tomato sauce and 1 cup beer. Add large spice packet, salt and
    cayenne pepper to taste; mix well. Bring to a boil; reduce heat. Simmer 15
    minutes. Gradually add remaining beer to masa flour packet, stirring until well
    blended. Add to meat mixture, simmer 5 minutes. Serve with cheese.

    6 c Apples; *
    1/4 c Sugar
    2 tb Unbleached Flour
    1 1/2 c Cheddar; Sharp, Shredded
    3/4 c Unbleached Flour
    1/4 c Sugar
    1/2 ts Cinnamon; Ground
    1/4 ts Salt
    1/2 c Butter

    * Use tart cooking apples such as Macs or Granny Smith;s. Core, pare,
    and thinly slice the apples.

    Heat the oven to 375 degrees F. Combine the apples, sugar, flour and 1
    cup of cheese. Place in a greased 8-inch square baking pan. Combine the
    flour, sugar, cinnamon, and salt. Cut in the butter until the mixture
    resembles coarse crumbs then sprinkle over the apple mixture. Bake in the
    preheated oven for 30 to 35 minutes. Remove from the oven and top with
    the remaining cheese. Return to the oven until the cheese melts. Serve
    warm with hard sauce or ice cream.

    4 c Unsweetened apple juice; 1 Cinnamon stick;
    3 c Unsweetened pineapple juice; 3 Whole cloves;
    2 c Cranberry juice cocktail; Lemon slices;
    1/4 ts Ground nutmeg;

    Combine all the ingredients in a large kettle and simmer for 10
    minutes. Serve hot.

    1/2 cup serving – 65 calories, 1 fruit exchange 16 grams
    carbohydrate, 0 protein, 0 fat, 3 mg sodium, 128 mg potassium, 0 chol.

    1 1/2 bunches broccoli (about 1 1/2 pounds)
    1 large head cauliflower (about 2 pounds)
    1 pound carrots, peeled and cut into
    1/4-inch slices on a diagonal
    1 tablespoon vegetable oil
    4 tablespoons unsalted butter
    2 cups very coarse dry bread crumbs
    1/2 cup grated Parmesan
    1/2 teaspoon cayenne

    Trim broccoli, reserving stems for another use, and cut florets into
    1-inch
    pieces. (There should be about 5 cups.)

    Trim cauliflower and cut florets into 1-inch pieces. (There should be
    about
    5 cups.)

    In a large saucepan of boiling salted water cook vegetables until
    crisp-tender, 2 to 5 minutes. In a colander drain vegetables and
    refresh
    under cold water to stop cooking. Drain vegetables well. Vegetables
    may be
    prepared up to this point 1 day ahead and chilled, covered.

    In a large heavy skillet heat oil and 2 tablespoons butter over
    moderately
    high heat until foam begins to subside and saute bread crumbs,
    stirring,
    until golden. Stir in Parmesan, cayenne and salt to taste and saute,
    stirring, until crisp. Bread crumbs may be prepared 3 days ahead and
    kept
    in an airtight container.

    Preheat oven to 350 degrees F.

    In skillet melt remaining tablespoon butter over moderate heat and in
    it
    toss vegetables with salt and pepper to taste. Sprinkle vegetables
    with
    bread crumbs and toss to combine. Transfer mixture to a baking dish
    and
    bake, uncovered, 10 minutes, or until just heated through.

    Yield: 8 servings
