Smoked Gouda and Caramelized Onion Quesadillas

2 tablespoons butter
1 medium onion — thinly sliced
1 tablespoon golden brown sugar
1/4 teaspoon white wine vinegar
1 1/2 cups smoked Gouda cheese — grated
4 10″ flour tortilla
2 ounces sliced prosciutto — chopped
2 tablespoons butter — melted

Melt 2 tablespoons butter in medium skillet over medium heat. Add onion,
brown sugar, and vinegar; saute until onion is golden brown, stirring
frequently, about 25 minutes. Remove from heat. Cool to room temperature.

Preheat oven to 350 degrees. Sprinkle cheese over half of each tortilla,
dividing equally. Sprinkle prociutto and sauted onion over cheese. Season
with pepper. Fold other half of tortilla over cheese mixture. Brush
tortillas with some of melted butter.

Brush heavy large skillet with some of the melted butter. Place over
med-high heat. Working in batches, cook quesadillas just until brown spots
appear, brushing skillet with butter between batches, about 2 minutes per
side. Transfer quesadillas to hevy large baking sheet.

Bake until tortillas are golden and cheese melts about 5 minutes.

Transfer quesadillas to work surface. Cut each into 6 triangles. Arrange on
platter and serve hot.

NOTE: I sometimes speed up the process by placing prepared quesadillas
directly under the broiler for a quick minute or so on each side.

    2 lb Hamburger 12 oz (2 cn) Toamto Sauce
    6 oz Stuffed Green Olives,Chopped 1 lb Cubed Mozzerlla Cheese
    1 x Salt, Pepper, and Oregano

    Use small jar of stuffed green olives in this recipe.
    Salt, pepper, and oregano to taste.

    Brown hamburger; add tomato sauce and seasonings. Simmer until thick.
    Cool. Add olives and cheese. Spread in humburger buns. Wrap in foil or
    saran wrap. Refrigerate until ready to serve. Reheat in microwave or
    oven.

    Makes 14 to 16 buns.

    2/3 bunch watercress optional
    1/4 head romaine lettuce chopped
    7/8 teaspoon green onions chopped
    1 1/2 tomatoes chopped
    2 pounds chicken breast cooked diced
    1/3 pound bacon diced
    1 1/2 avocados diced
    4 eggs hard boiled
    1/3 cup bleu cheese =

    1/4 cup water =

    1/4 cup red wine vinegar =

    1/8 teaspoon sugar =

    1/4 tablespoon lemon juice =

    1/4 teaspoon worcestershire sauce =

    1/3 teaspoon dry mustard =

    1/4 cup olive oil =

    1/3 cup vegetable oil =

    1/2 clove garlic minced

    Hard boil eggs set aside. Cook bacon not-too-soft-not-too-crisp; =

    dice set aside.
    Dice cooked chicken breast. Chop iceberg romaine lettuce, =

    watercress, tomato green onion. Cube avocadoes hardboiled eggs. =

    Toss together all salad ingredients.

    Blend together water, red wine vinegar, sugar, lemon juice, =

    worcestershire sauce, dry mustard, olive oil, vegetable oil garlic =

    to make a dressing.

    Just before serving, toss the salad with the dressing.

    6 oz Canadian Bacon;* -pitted and chopped
    9 c Tomato sauce; 6 tb Celery; chopped
    1 1/2 c Water; 6 tb Green pepper; chopped
    12 tb Onion; chopped 6 ds Each oregono, garlic
    powder;
    6 tb Mushrooms pieces; Salt to taste;
    6 tb Black olives; 3 c Elbow macaroni; cooked

    * Makes 2 1/2 cups of soup. Gee! there isn’t any for BERT!!!!

    Fry Canadian bacon; drain and cut away any fat. Heat Tomato sauce
    and at water to a boil. Add bacon, vegetables, and seasonings. Cook
    until vegetables are tender. Add Macaroni: reheat
    Food Exchange per serving: 1 MEAT EXCHANGE + 1 STARCH/BREAD EXCHANGE
    + 1 FAT EXCHANGE CAL: 275
