1 Slice toast OR
1/2 English muffin, toasted
Sour cream
1 tb Hollandaise sauce (#25)
1 sl Lox
Kosher caviar

Soak toast in sour cream and place in ramekin or small
baking dish. Cover toast with lox and break egg on
top. Bake in 350 F. oven for abt. 12 to 15 min., or
until egg is set. Remove from baking dish. Add
Hollandaise Sauce and sprinkle with caviar. Serve
immediately.

Low-Fat Oatmeal Muffins

Title: Low-Fat Oatmeal Muffins

Yield: 12 servings

1 c all purpose flour
1/4 c miller’s bran (natural
1 unprocessed bran)
1/4 ts nutmeg
1/2 ts cinnamon
1/2 ts baking soda
1 tb baking powder
1 c oatmeal (any kind)
1 c unsweetened applesauce
3/4 c nonfat milk
1/2 c raisins or any dried fruit
1 cut in small pieces
1 egg or 2 egg whites or 1/4 c
1 egg substitute

Heat oven to 400 degrees and spray a muffin tin with cooking spray.
In a bowl, mix first six ingredients and dump out on a paper plate.

In the same bowl, mix the remaining ingredients and let sit for 5
minutes. Stir in previously mixed dry ingredients just until
completely mixed. Fill muffin cups almost full. Bake for 20 to 22
minutes or until a toothpick inserted in a muffin comes out clean.

Remove muffins from pan and cool on a wire rack.

    1 c Cotija or Parmesian cheese,

    Husk and wash tomatillos. Slice thinly and arrange on
    a platter or 4 salad plates. Combine oil and lime
    juice; sprinkle over tomatillos and top with cheese.
    Makes 4 servings.

    Godiva Strawberry Torte

    2 envelopes unflavored gelatin
    1/2 cup cold water
    3 egg yolks
    1/2 cup sugar
    1/4 teaspoon salt
    1/2 cup milk — scalded
    1 teaspoon vanilla extract
    10 ounces strawberries, frozen, unsweetened — pureed
    2 cups Godiva Liqueur — divided
    1 cup heavy cream
    1 sponge cake, 9″
    1 quart strawberries, fresh — hulled
    whipped cream

    Soften gelatin in water, set aside. In double boiler, cook egg yolks,
    sugar, salt, and milk until slightly thickened, stirring constantly.
    Remove from heat, add gelatin and stir until dissolved. Add vanilla,
    strawberry puree and 1 1/2 cups Godiva Liqueur; chill until slightly
    thickened and mixture mounds on a spoon. Whip cream until stiff, fold
    into strawberry mixture and set aside. To assemble the torte, place
    sponge cake in 9-inch greased springform pan, sprinkle with 1/2 cup
    Godiva Liqueur, cover with whole strawberries, hulled side down, and top
    with strawberry mousse mixture. Refrigerate several hours before
    serving. Garnish with whipped cream and fresh strawberries.

  • Title: Herb Marinated Grilled Vegetables

    3/4 c olive oil
    1/4 c red wine vinegar
    1 ts fresh rosemary; chopped –
    1/2 ts dried rosemary
    1 ts fresh thyme leaves — or
    1/2 ts dried thyme
    1 ts fresh basil; chopped — or
    1/2 ts dried basil
    1 ts fresh oregano; chopped –
    1/2 ts dried oregano
    1 tb garlic — minced
    1/2 ts salt
    Ground black pepper
    —–VEGETABLES-
    2 lb assorted vegetables
    1 left whole if small or cut
    1 in half

    Marinade – whisk together all ingredients in a small bowl. Arrange the
    vegetables in shallow dish or plastic container, pour the marinade
    over them, cover and refrigerate for 2 hrs. Prepare a grill. Remove
    the vegetables from the marinade (reserve marinade). Grill the
    vegetables 6″ away from the heat source until they are tender,
    brushing them with the marinade as they cook. Cooking times will vary
    according to the vegetables.

    2 ts Vegetable oil
    2 c Chopped Vidalia or other
    .sweet onion
    2 lg Garlic cloves, minced
    1 1/2 c Arborio or other short-
    -grain rice
    2 cn 14.5 oz ea vegetable broth
    1/2 c Crumbled feta cheese divided
    1/3 c Chopped fresh parsley
    1/4 c Grated parmesan cheese
    Freshly ground pepper

    Heat oil in saucepan over medium heat. Add onion and
    garlic, and saute 1 minute. Stir in rice. Add 1/2 cup
    broth; cook until liquid is nearly absorbed, stirring
    constantly. Add the remaining broth, 1/2 cup at a
    time, stirring constantly until each portion of the
    broth is nearly absorbed before adding the next.
    Remove from the heat; stir in 1/4 cup of the feta
    cheese, parsley, and parmesan cheese. Spoon rice
    mixture into a serving bowl. Top with remaining feta
    and pepper.

    1 Large Onion — Chopped
    1/3 Cup Olive Oil
    4 Cloves Garlic — Minced
    2 Bulbs Fennel — Thinly Sliced
    2 Medium Zucchini — Diced
    6 Tomatoes, Peeled, Seeded — Chopped
    8 Fresh Basil Leaves — Finely Chopped
    6 Cups Vegetable Broth, Or Chicken Broth — Or Water
    1 Cup White Wine
    Salt And Pepper — To Taste
    Fresh Basil Leaf — For Garnish

    1. Saute the onion in olive oil until it becomes soft. Add the garlic and
    continue sauteing for another minute over medium heat.

    2. Add the fennel, zucchinis, tomatoes, and fresh basil. Stir well,
    reduce the heat to low-medium, and continue to saute for 2 or 3 minutes,
    watching that it does not stick to the bottom of the pot.

    3. Pour the stock or water into the vegetable mixture. Add the wine and
    bring the soup to a boil. Stir well. Cover the pot and cook slowly for
    30 minutes. Add the salt and pepper, stir again, and simmer the soup for
    10 minutes more. Serve the soup hot. Garnish the top of each serving with
    fresh basil, finely chopped.

    This morning’s breakfast got my husbands attention, he really liked it, so
    I will share.

    1 medium zuchinni, sliced
    1/4 lb (or so) mushrooms, sliced
    1 bunch green onions, sliced
    1 4 ounce carton liquid fake eggs
    1/2 cup non fat cottage cheese
    tortillas (optional)

    “Saute” mushrooms and zuchinni in nonstick skillet, add gr onion, and heat
    through, pour in the egg stuff and cook until nearly set, add the cottage
    cheese and heat through, mixing well.

    I made this into breakfast burritos, but would be good to eat as is, too.

  • Peanut Butter Sandwich Loaf

    2 cups all-purpose flour
    2 teaspoons double-acting baking powder
    3/4 teaspoon salt
    1/3 cup sugar
    3/4 cup creamy peanut butter
    1 cup milk
    1 egg
    1/4 teaspoon orange extract — optional

    1. Sift flour and mix thoroughly with the salt, sugar and baking powder.
    Add the peanut butter and mix in with a pastry blender.
    2. Beat the egg and add the milk and orange extract to the egg; blend.
    Pour this mixture into the flour mixture and stir until thoroughly combined
    but do not beat.
    3. Grease a 9 x 5-inch loaf pan. Pour mixture into pan and bake in
    preheated 350-degree oven for 50-55 minutes. Cool before slicing.

  • Rice and Coconut Milk

    Rice and Coconut Milk

    2 cups rice
    1/4 cup coconut milk
    water
    salt and pepper
    chopped cilantro

    Rice: long grain white, jasmine, or pearl — not “minute” or “converted”

    Wash rice until the water remains clear. Place rice in a 2-1/2 quart
    saucepan. Add the coconut milk (quantity varies as per your likely). Add
    cold water to cover the top surface of the rice by exactly 1 inch. Bring to
    a boil, continue. As soon as the top surface of the rice is no longer
    covered with liquid, cover the saucepan, turn the heat to the lowest setting
    and simmer/steam for 15 minutes. Season with salt and pepper. Garnish.

    Black and Decker type Steamer Enough for 2 servings
    Use “full” water bath level. Put 1/2 cup washed rice in bowl. Add 1/4 cup
    coconut milk to bowl. Make up the difference with water (1/2 cup water in
    bowl). Set timer for 35 minutes.
    Fluff with fork. Season with salt and pepper and garnish with cilantro.
