Bacon-Onion Croutons

Title: Bacon-Onion Croutons

Yield: 12 Servings

5 sl Firm white bread
Or 6 slices French bread
2 tb Bacon drippings
2 tb Olive oil or vegetable oil
1/2 ts Onion powder
1 ts Poppy seeds

Cut crusts from 5 slices firm white bread or 6 slices French bread. Dice
bread into 1/2-inch cubes. In a large frying pan over medium heat, heat 2
tablespoons bacon drippings with onion powder and poppy seeds. Add bread
cubes, stirring well until coated with mixture. Transfer bread cubes to a
rimmed baking sheet and spread in a single layer. Bake in a 300° F oven
until lightly browned and crisp (25 to
30 minutes). Cool.

Makes about two cups.

    Title: RED APPLE SALAD

    Yield: 4 servings

    4 Firm tart apples
    1 1/2 c Sugar
    1/4 ts Salt
    1/2 c Red cinamon candy
    3 c Water
    1/2 c Cottage cheese
    1/4 c Chopped green pepper

    Pare and core apples. Add sugar, salt, and candy to
    the water. Put over heat and stir until dissolved.
    Cook apples slowly in this sirup in covered pan until
    just tender, turning occasionally to color evenly.
    Drain and chill. Mix cheese with green pepper and
    stuff the apples. Serve on watercress or other dark
    greens.

    40 Large marshmallows (10 oz. bag)
    5 Cups corn flakes cereal
    1/2 Teaspoon vanilla (optional)
    2 Teaspoons green food coloring
    M Ms. Plain Chocolate Candy

    Preparation :
    Melt margarine in large saucepan. Add marshmallows and cook over low heat,
    stirring constantly until melted and mixture is syrupy. Remove from heat.
    Add vanilla and food color. Mix. Add corn flakes and mix until well coated
    and bright green.

  • Corn and Bean Pudding

    Title: Corn and Bean Pudding

    1 ts Canola oil 1/2 ts Salt
    1 sm Onion, finely chopped 4 dr Hot pepper sauce
    2 Eggs 2 c Cooked kidney or
    brown beans
    1 c Milk 14 oz Can cream-style corn

    This recipe is suitable for a gluten-free diet.

    Heat oil over medium heat in a small nonstick skillet. Cook onion,
    stirring occasionally about 4 minutes or until translucent.

    In 6 cup casserole sprayed with nonstick coating, beat eggs, milk,
    salt and hot pepper sauce until smooth. Stir in beans, corn and
    cooked onion. Mix well.

    Place casserole in larger pan. Pour enough hot water into larger pan
    to come 2 inches up sides. Bake at 350 F for 20 minutes. Stir
    mixture and bake 20 minutes longer or until tester inserted near
    centre comes out clean.

    1/6 recipe – 181 calories, 1 1/2 starch, 1 protein choice 3 grams
    total fat, 1 gram saturated fat, 74 mg cholesterol, 9 grams protein,
    29 grams carbohydrate, 376 mg sodium, 389 mg potassium. Very high
    fibre.

    Tex-Mex variation: Add 1/3 cup chopped papper or 2 tsp chopped
    pickled jalapeno pepper.

    1/2 teaspoon salt
    1 teaspoon baking powder
    1 teaspoon cinnamon
    2 teaspoons anise
    1 teaspoon clove
    1 cup sugar
    1 pound shortening — (Crisco)
    2 eggs

    Cream shortening and sugar. Add eggs and mix well. Add dry ingredients and mi
    x together. Place teaspoon size balls on cookie sheet, and press with thumb.
    Bake and sprinkle with sugar and cinnamon while hot. Bake 15-20 minutes at 350
    degrees.

    24 Cabbage heads (solid heads)
    3 Red peppers; quartered
    1 Fresh horseradish
    — peeled and chopped
    1/2 Box bay leaves
    1 Garlic head
    1/4 Box dry whole red peppers
    52 oz Salt (not iodized)

    Core cabbage and fill with salt. Place, core side up,
    in large crock. Layer cabbage, above ingredients
    alternately. When all has been place in crock, cover
    with large leaves which have been removed from
    cabbage; fill crock with water. Place a heavy weight
    on top of cabbage; cover with clean cloth. Should be
    ready in 40 days. Keep water clean by removing foam
    each day which will begin to form in about 10 days.

  • Title: Applesauce Oat Bran Muffins

    1 c All purpose flour Pie spice
    1 c Oat bran 1/2 c Unsweetened applesauce
    1/4 c Packed brown sugar 1/2 c Water
    4 ts Baking powder 1/4 c Vegetable oil
    1 ts Ground cinnamon or pumpkin 2 Large egg whites

    Place flour, oat bran, brown sugar, baking powder, and cinnamon or
    pumpkin pie spice in bowl and mix well at low speed. In a separate
    bowl combine the applesauce, water, oil, and egg whites and beat with
    a fork to blend. Add applesauce mixture to flour mixture and mix at
    medium speed only until all flour is moistened. Grease muffin tins
    with margarine or line with paper cups. Fill muffin tins 1/2 full
    and bake at 400 F for about 20 minutes, or until muffins are browned
    and spring back when touched in the center. Serve hot, if possible.

    FAT 5 gm; NA 120 mg Food exchanges per serving: 1 bread, 1 fat
