2 1/2 c Sifted flour
1 ts Baking powder
1/2 ts Salt
2 Eggs
2/3 c Salad oil
2 tb Water
Sift the flour, baking
-powder and salt into a
-bowl. Make a
Well in the center and drop
-the eggs, oil and water
-into
It. Work into the flour
-mixture with the hand and
-knead
Until smooth.
There are two ways to fill
-the knishes. In either
-case,
Divide the dough in two and
-roll as thin as possible.
Brush with oil. Now you can
-spread the filling on one
-side
Of the dough and roll it up,
-like a jelly roll. Cut
-into
5 1/2 Inch slices.

Here’s the basics, fillings follow in the next messages.

DOUGH:

Place in an oiled baking sheet cut side down. Press down lightly to
flatten. Or you can cut the rolled dough in 3- inch circles. Place a
tablespoon of the filling on each; draw the edges together and pinch
firmly. Place on an oiled baking sheet, pinched edges up

In either case, bake in a 375 degree oven 35 minutes or until browned.
Makes about 24.

FILLINGS FOR KNISHES

POTATO: 1 cup chopped onions 6 tablespoons chicken fat or butter 2
cups mashed potatoes 1 egg 1 teaspoon salt 1/4 teaspoon pepper

Brown the onions in the fat or butter. Beat in the potatoes, egg,
salt and pepper until fluffy.

CHEESE 1 1/2 cups diced scallions or onions 4 tablespoons butter 2
cups pot cheese 1 egg 1 1/2 teaspoons salt 1/8 teaspoon pepper 2
tablespoons sour cream

Scallions are better than onions for this, so try to get them. Brown
the scallions in the butter and beat in the cheese, egg, salt, pepper
and sour cream until smooth.

MEAT: 1/2 cup minced onions 2 tablespoons chicken fat 1 1/2 cups
ground cooked meat 1/2 cup cooked rice 1 egg 1 teaspoon salt 1/4
teaspoon pepper

Lightly brown the onions in the fat. Add the meat, rice, egg, salt and
pepper, mixing until smooth.

CHICKEN 1 1/2 cups ground cooked chicken 3/4 cup mashed potatoes 1
egg, 1 teaspoon salt 1/4 teaspoon pepper

Mix all the ingredients until smooth.

And finally, the classic:

POTATO-DOUGH KNISHES

1/4 cup minced onions 6 tablespoons chicken fat or butter 4 cups
mashed potatoes 1/2 cup potato flour 3 eggs 1 teaspoon salt 1/4
teaspoon pepper

Brown the onions in 4 tablespoons chicken fat or butter. Cool.

Knead together the remaining fat or butter, the pota- toes, potato
flour, eggs, salt and pepper. Break off pieces (about 2 inches long)
and flatten slightly. Place a tea- spoon of browned onions on each
and cover by pinching the edges together. Place on a greased baking
sheet. Bake in a 375 degree oven 25 minutes. Makes about 20.

    CHUNKY CHICKEN RICE SOUP

    1 c Cooked cubed chicken
    1 t Oil for frying
    2 c Chicken broth
    1 c Water
    10 oz Frozen mixed vegetables
    1/2 ts Poultry seasoning
    1/4 ts Pepper
    1 c Minute Rice
    1 tb Dried parsley

    1>. In a skillet, fry chicken in hot oil until
    browned. Add broth, water, vegetables (thawed) and
    seasonings. 2>. Bring to a boil. Reduce heat to low,
    cover and simmer 5 minutes. Stir in Minute Rice and
    parsley; cover, remove from heat. Let stand 5 minutes
    before serving.

  • Fresh Peach Cobbler

    Title: Fresh Peach Cobbler

    Yield: 6 servings

    1/2 c Sugar 1 c Flour
    1 tb Cornstarch 1 tb Sugar
    1/4 ts Ground nutmeg 1 1/2 ts Baking powder
    4 c Peeled fresh or canned 1/2 ts Salt
    Peaches, drained 3 tb Shortening
    1 ts Lemon juice 1/2 c Milk

    1. Heat oven to 400F. Mix 1/2 cup sugar, cornstarch and nutmeg in a
    2 qt. saucepan. Stir in peaches and lemon juice. Cook over medium heat
    until mixture thickens and boils. Boil and stir 1 minute.
    2. Pour into ungreased 2 quart casserole dish. Stir together the
    flour, baking powder, 1 T sugar and salt. Add the shortening and cut
    through with a fork until flour clings to shortening. Add milk. Form into
    a ball. Drop mixture by 6-8 teaspoonsful onto hot fruit.
    3. Bake for 25-30 minutes, or until topping is golden brown. Serve
    with whipped cream or vanilla ice cream.
    NOTE: You may substitute any fruit for the peaches, just being
    careful that the amounts are approximately the same.

    3 cups mincemeat,28 to 30oz jar
    1 1/2 cups apple — chopped

    Preheat oven to 425 degrees F.

    Mix mincemeat and apple. Pour into 9-inch pastry-lined pie pan .
    Cover with top crust which has slits cut in it. Seal and flute.

    Bake 40 to 45 minutes or until crust is nicely browned. Serve slightly
    warm.

    Title: Beef Satay

    3 tb Corn oil
    1 sm Onion, finely chopped
    1 Garlic clove, crushed
    1/2 ts Hot chili powder
    1 1/2 ts Curry Powder
    1 1/4 c Water
    2/3 c Crunchy peanut butter
    1 ts Light brown sugar
    2 ts Dark soy sauce
    1 ts Lemon juice
    Salt to taste
    Fresh ground pepper to taste
    1 lb Boneless sirloin steak
    Lemon pieces (opt)
    Fresh cilantro sprigs (opt)

    To make peanut sauce, heat 2 tablespoons of oil in a saucepan. Add
    onion and garlic and fry gently until golden.

    Stir in chili powder, Curry Powder, water, peanut butter and brown
    sugar. Bring to a boil; simmer gently until thickened. Stir in soy
    sauce and lemon juice, then salt and pepper. Turn mixture into a
    serving dish.

    Preheat broiler. Grease a broiler pan. Trim and cut meat in 1/2″
    cubes. Thread (not too tightly) onto 8 bamboo skewers, leaving a
    space at each end for holding. Cover ends with small pieces of foil
    to prevent burning. Place skewers in greased broiler pan. Brush with
    remaining 1 tablespoon oil. Cook under preheated broiler 10-15
    minutes until golden and cooked through. Turn and brush frequently
    with oil during cooking. Garnish with lemon pieces and cilantro
    sprigs, if desired, and serve hot with peanut sauce.

    1 Box butter flavored cake mix
    1 Can Mandarin oranges — (11 oz.)
    4 eggs
    1 Tsp. vanilla
    Frosting:
    1 Box vanilla pudding
    1 Small Can crushed pineapple
    1 Small Contai Dream Whip
    1/2 C. powdered sugar
    1 Small Pkg. cream cheese

    Pour liquid of Mandarin oranges in small bowl. Add cake
    mix, butter and vanilla. Add eggs, one at a time. Chop up
    Mandarin oranges into small pieces. Beat all ingredients
    except Mandarin oranges for 3 minutes on mix setting. Add
    oranges and beat for one more minute. Pour into 3 greased and
    floured foil cake pans.
    Frosting: Combine vanilla pudding mix with cream cheese
    and pineapple juice. Add powdered sugar and crushed pineapple
    pieces. Fold in Dream Whip. Beat for 2 minutes. Frost cake.

    1 can cream of mushroom soup, condensed

    2/3 cup catsup

    1 teaspoon salt

    Heat oven to 350 degrees.

    Cook and stir meat until brown. Drain off fat.

    Cook macaroni as directed on package; drain.

    In ungreased 2-quart casserole, mix all ingredients.

    Cover; bake 40 minutes. Uncover; sprinkle with crushed potato chips if
    desired and bake 5 minutes longer.
