Title: Hearty alphabet beef soup

Yield: 2 servings
1/2 lb Stew beef
-or round steak
1 Stewed tomatoes 1 pound can
1 cn Tomato sauce, 8 oz can
1 c Water
1 pk Onion soup mix
1 pk Frozen mixed vegetables;
-partially thawed
1/2 c Alphabet noodles;uncooked
Using the beef stew meat which is already cut up, place the meat, combined
with the stewed tomatoes, tomato sauce, water and soup mix into crockpot.
Cover and cook on LOW for 6 to 8 hours. Turn to HIGH, add vegetables that
have been partially thawed, and noodles. Cover and cook on HIGH for 30
minutes or until vegetables are done.

Skillet Hamburger Pie

1 1/2 Pounds Ground Beef
1/2 Cup Celery — coarsely chopped
1/2 Cup Chopped Onion
1 Teaspoon Worcestershire Sauce
3/4 Teaspoon Salt
1/8 Teaspoon Pepper
16 Oz. Can Cut Green Beans — drained
10 3/4 Oz. Can Beef Gravy
6 Servings Instant Mashed Potato Granules
1/2 Cup Sour Cream — (dairy)
1 Tablespoon Chives — snipped
Paprika
1/3 Cup American Cheese — shredded
In skillet cook beef, celery, and onion till meat is browned and
vegetables crisp-tender. (Electric skillet 350 degrees). Stir in
Worcestershire, 1/4 teaspoon salt, pepper, beans, gravy, and 1/2 cup
water. Reduce heat (220 degrees) and simmer to blend flavors. Whip
potatoes and 2 cups boiling water; add sour cream, chives, and
remaining salt. Spoon in mounds over meat. Top with paprika and
cheese. Cover; heat till cheese melts. Serves 6.
This recipe was taken from a REALLY old cookbook by Better Homes and
Gardens “Easy Skillet Meals”. I use a little more pepper (prefer
white pepper) and some garlic salt and a little minced garlic if I
have it on hand. Enjoy!

CHUNKY SPICY AVOCADO SALSA

2 avocados, peeled — seeded and chopped
Juice of one lime
1/2 cup onion — finely chopped
1/2 yellow pepper, seeded — and finely chopped
3 plum tomatoes — chopped
1 jalapeno, seeded — and finely chopped
Salt and pepper
Combine all ingredients in a bowl and gently
toss to together with a fork.
Variation: Mash the avocados and stir in remaining ingredients.

Title: Calabaza Soup

Yield: 6 servings
1 1/2 lb Calabaza squash, peeled
— seeded
1 ea Green bell pepper, chopped
1 ea Garlic clove, pressed
4 ea Scallions, minced
6 ea Thyme leaves
4 ea Whole allspice, crushed
1 ts Cumin
1 ts Fenugreek
1 lg Ripe tomato, peeled
— chopped
1 c Coconut milk
Salt pepper
Chili pepper, to taste
Simmer all the ingredients except the salt, pepper chili pepper, in
6 cups of water for 1 hour. Strain the liquid into a bowl allow the
solids to cool. Puree the cooled solids.
Return the puree to the soup pot along with the strained liquid.
Simmer, uncovered, until the mixture is reduced to a syrup-like
consistency. Add the seasonings while simmering serve very hot.
VARIATION: Add 1/2 lb fresh okra after pureeing the vegetables above.

Title: Turkey-Barley Soup

6 c Turkey or chicken broth; 1 Bay leaf;
1 c Turkey; diced cooked 1 ts Dry thyme;
1 c Pearl barley; 1/4 ts Dried marjoram;
1 Onion; chopped 1/4 ts Ground black pepper;
2 Celery; stalks, chopped 2 tb Chop.fresh parsley
(2ts.dry)
3 Carrots; sliced
Combine all the ingredients in soup pot or slow cooker. Cook over
low heat in the slow cooker for 6 hours or simmer on the stove for 1
hour, or until the carrots are tender and the barley is soft.
1/6 recipe – 181 calories, 1 lean meat, 1 bread, 2 vegetable
exchanges 30 grams carbohydrate, 11 grams protein, 2 grams fat, 44 mg
sodium, 320 mg potassium, 18 mg cholesterol.

HEIRLOOM RAISIN MUFFINS

1 c Raisins
1 c Water
1/2 c Butter/Regular Margarine
1/4 c Sugar
2 ea Large Eggs
1 1/2 c Unbleached Flour, Sifted
1 t Baking Powder
Combine raisins and water in saucepan. Bring to a
boil, reduce heat and cover. Simmer 20 minutes.
Drain raisins, reserving liquid. Add enough water to
reserved liquid to make 1/2 cup. Cool well. Cream
together butter and sugar in bowl until light and
fluffy, using electric mixeer at medium speed. Add
eggs, beat 2 more minutes. Sift together flour and
baking powder. Add flour mixture alternately with 1/2
cup of reserved raisin liquid into creamed mixture,
mixing well after each addition. Stir in raisins.
Spoon batter into greased 3-inch muffin-pan cups,
filling 2/3rds full. Bake in 400 degree F. oven 18
minutes or until golden brown. Serve hot with
homemade jam or jelly.

2 pounds stewing beef (Prime round)
–cut into 1 1/2-inch pieces
2 1/2 pints beef stock
1 pound small Irish potatoes
1 bunch small carrots
3/4 pound small onions
2 fresh tomatoes
Assorted spices in a cloth bag
–(thyme, bay leaves, garlic, etc.)
Salt
Pepper
In a pot combine meat and stock. Bring to a boil, reduce heat, cover and
simmer until meat is tender. Add vegetables and spices. Cook until
vegetables are done, strain off one cup of stock from stew, thicken slightly
with beef roux mixture (???). Pour back into stew and let simmer until ready
to serve (about one-half hour).
Yield: 6 servings

3 c Apricot juice; -unsweetened 1 tb Lemon juice
Chill apricot juice and ginger ale throughly. To serve, combine
apricot juice, ginger ale, and lemon juice; stir well, and pour into
individual glasses.

Title: Baked Bananas

Yield: 4 servings
4 Bananas; firm 1/4 c Brown sugar; firmly packed
2 Lemons; grated rind juice 1/4 c Butter (or marg.); melted
Cut bananas in half lengthwise; place cut side down in a buttered
baking dish. Brush bananas with lemon juice; sprinkle wiht grated
lemon juice; sprinkle with grated lemon rind and brown sugar. Drizzle
with butter.
Bake at 350 degrees for 15 to 20 minutes. Serve warm as a side dish
with meat, or as a dessert plain or with ice cream.
If used with brown sugar substitute, could be used as a diabetic
recipe Also use less margarine, way less!! Brush with a pastry brush.

Title: Onion soup

4 c Water
–or vegetable stock
3 Onion; chopped
1/4 c Water
2 tb Tamari soy sauce, low sodium
1/2 ts Dry mustard; optional
1 ds Thyme; optional
1/4 ts Garlic powder; optional
Recipe by: McDougall Plan Saute onions in 1/4 cup water. Cook about 15
minutes until soft and tender. Add 4 cups water (or vegetable stock) and
bring to a boil. Reduce heat to low. Add tamari. Simmer covered for at
least 30 minutes before serving. The longer it cooks the more flavor it
will have.
HELPFUL HINTS: Double the recipe and freeze some for another day.
