Dons Venison Chili

Title: DON’S VENISON CHILI

Yield: 6 servings

4 lb Boneless, cubed venison
3 T Bacon grease
5 T Fresh ground cumin
1 1/2 Cans of beer [*not Lite]
1/2 t Cayenne pepper
6 Jalapenos fresh whole
2 Jalapenos seeded chopped
3 T Soy sauce
1/2 c Chopped green Bell pepper
8 oz Can tomato sauce
2 c Stewwed tomatos
2 T Masa harina

Brown meat in bacon grease. Saute the onions, the
chopped jalapenos, the Bell peppers in the bacon grease
until the onions start to become transparent. Meanwhile
bring the beer whiskey to a boil and add
the meat, seasonings, except for 1 Tblpsn of cumin, the
onions/peppers to the pot. Allow to boil for 5-7 minutes.
Reduce the ehat to medium then add the tomatos tomato
sauce. Stir occassionally while continuing to cook for 30
minutes. reduce heat to simmer and cook for 1 hour.
This is an original venison chili recipe that I had
sworn never to reveal ever to anyone. My daughter has asked
that I give it to you so I will do so…with many 2nd.

    ESCAROLE SOUP

    Amount Measure Ingredient — Preparation Method

    1/4 lb White beans
    5 c Chicken broth
    2 tb Olive oil
    2 tb Minced garlic
    1 sm Onion — finely diced
    2 c Chopped escarole
    Salt and pepper — to taste

    SOAK THE BEANS OVERNIGHT IN WATER. Drain. Place beans
    in a pot, add broth, cover and cook over medium heat
    until beans are soft, about 30 minutes. Meanwhile,
    place another pot on the stove, add oil, place over
    medium heat, add garlic and onion and cook, stirring
    occasionally, for 7 minutes, or until onions soften.
    Add the escarole and continue to cook until wilted,
    another 10 minutes. Add the beans and broth to the pot
    with the escarole. Add salt and pepper as desired,
    cover and simmer for 20 minutes. Serve piping hot.

    3/4 oz Oats, quick-cooking
    – uncooked
    1/2 oz Almonds
    – sliced
    2 ts Coconut
    – shredded
    1 ts Wheat germ
    1/4 ts Cinnamon, ground
    1 ts Vegetable oil
    1 ts Maple syrup
    1/4 ts Vanilla extract
    2 tb Raisins, golden

    Preheat oven to 375F. In medium bowl combine oats, almonds, coconut, wheat
    germ and cinnamon. In small bowl combine oil, syrup, and vanilla add to oat
    mixture and toss to combine. On baking sheet spread oat mixture. Bake,
    stirring frequently, until lightly browned, 8 to 10 minutes. Transfer
    baking sheet to wire rack and let cool. Transfer oat mixture to medium
    mixing bowl, add raisins and toss to combine. Store in airtight container
    for up to 1 week.

    Weight Watcher’s Exchanges: 1 Fat, 1/4 Protein, 1/2 Bread, 1/2 Fruit, 25
    Optional Calories.

  • Title: CONTINENTAL CHEESE BAKE

    1 oz Butter
    1 Clove Garlic, peeled and
    -crushed
    1 Red Pepper, deseeded and
    -diced
    8 oz Chestnut Mushrooms, sliced
    5 oz Soft Cheese, flavoured with
    -garlic and herbs
    5 fl Fromage Frais
    14 oz Can artichoke hearts,
    -drained and halved.
    2 oz Smoked Ham, diced
    1 Egg, Beaten
    8 oz Pasta Bows, cooked and
    -drained
    3 tb Fresh Breadcrumbs
    2 oz Cheddar Cheese, Grated
    Parsley Sprig to Garnish

    Preheat ove to 200C/400F/Gas Mark 6.

    Heat butter and saute garlic, pepper and mushrooms,
    stirring frequently, until softened. Meanwhile, heat
    together soft cheese and fromage frais, stirring until
    combined. Mix in artichoke hearts, ham egg, cooked
    pasta and mushroom mixture.

    Turn into a heatproof dish, sprinkle over the
    breadcrumbs and grated cheese. Bake for 20 minutes
    until top is golden brown. Garnish with parsley sprig
    to serve.

    2 1/2 c Whole wheat flour
    1 tsp Brown sugar
    1/2 c Powdered dry milk
    6 tbsp Meat drippings
    1/2 tsp Salt
    1 Beaten egg
    1/2 tsp Garlic powder
    1/2 c Ice water

    1. Preheat oven to 350. Lightly oil a cookie sheet. Combine flour, dry
    milk, salt, garlic powder and sugar. Cut in meat drippings until mixture
    resembles corn meal. Mix in egg. Add enough water so that mixture forms a
    ball. Using your fingers, pat out dough onto cookie sheet to half inch
    thick. Cut with cookie cutter or knife and remove scraps. Scraps can be
    formed again and baked.

    2. Bake 25-30 minutes. Remove from tray and cool on rack.

    1 pound Prawns
    1 1/2 tablespoons Fermented black beans
    1 Clove garlic; minced
    1 slice Ginger root
    1 slice Fresh ginger
    1 teaspoon Sugar
    3 tablespoons Oil
    1/2 pound Ground pork — (NOT sausage!)
    2 teaspoons Hot bean paste
    2 tablespoons Oyster sauce
    1/4 teaspoon Salt
    2/3 cup Water
    1 Egg
    1 Scallion — chopped

    Shell, devein and rinse prawns. slice in half lengthwise (butterfly
    them). Mash bl. bean sauce with garlic, ginger and sugar. SEt
    aside. Add 3 T. oil to wok. Co ok pork 2 min. til not pink. Add
    bl. bean mix. Add prawns and cook 1/2 min on HOT. If you lke add
    tinch of HOT BEAN PASTE (opti on al); Ad oyster sauce, salt and
    water. Bring to a boil , cover wok and cook fo r ONE MINUTE. Stir in
    one raw egg, add scallions. Mix a little cornstarch with water. Add
    to wok. Stir til gets somewhat thick.

  • Title: DOWNEAST BLUEBERRY BREAD PUDDING

    2 tb Sugar-or use equivalent
    -sweetener amount
    1 tb Cornstarch
    10 pk Diatetic sweetener
    1 pt Fresh blueberries, sorted
    – and stemmed
    1 ts Lemon juice, fresh
    4 Slices stale white bread
    1 1/2 tb Margarine, room temperature
    1/2 c Evaporated skimmed milk

    Combine the sugar, cornstarch and sweetener, pressing out all lumps.
    Dump the blueberries into a 6-cup shallow casserole that has been
    lightly sprayed with nonstick vegetable cooking spray. Dump in the
    sugar mixutre, add the lemon juice, and toss well to mix. With a
    potato masher, lightly mash the blueberries, set aside. Butter the
    bread,(with the margarine) lightly on one side, stack the slices and
    cut into 1/2″ cubes.Dump into the casserole and toss well to mix.
    Bake the pudding uncovered in a moderate 350 F oven for 30 minutes,
    remove from oven, add the evaporated skim milk and stir well to mix.
    Return to to oven and bake uncovered for 15 minutes.Serve warm,
    topped, if you like, by a little whole milk. Makes 6 servings.

  • Title: Easy Eggplant Casserole

    1 sm Eggplant 1/2 c Breadcrumbs, dry
    1/2 lb Sausage, bulk 1 ts Butter (or marg.); melted
    1 sm Onion; chopped 1/4 c Cracker crumbs
    1 Egg; well beaten

    Peel eggplant, and cut into 1″ cubes; cook in a small amount of
    boiling wate 10 minutes or until tender. Drain. Let cool slightly.

    Cook sausage and onion until onion is tender and sausage is brown.
    Combine eggplant, sausage mixture, egg, and breadcrumbs. Mix well,
    and spoon into a greased 1-quart casserole. Combine butter and
    cracker crumbs; sprinkle over casserole. Bake at 350 degrees for 25
    minutes.

    SPICY CHICK PEAS AND SPINACH

    1 large onion, chopped
    4 cloves garlic, minced
    6 carrots, sliced thin
    1 cup bouillon
    1/2 teaspoon harissa
    1 lb chick peas, cooked or 3 cans, drained
    1/4 cup fresh cilantro, chopped
    1 lb fresh spinach, rinsed and torn in pieces
    Cooked brown rice or couscous

    Bring the onion, garlic, carrots, bouillon and harissa to a boil in a
    large pot and simmer until the vegetables are softened, about 20
    minutes. Add the chick peas, cilantro and spinach and simmer until
    the spinach is wilted. Serve over brown rice or couscous. Each diner
    can stir in a little more harissa to suit his or her own taste.

    4 to 6 servings.

    1 Slice toast OR
    1/2 English muffin, toasted
    Sour cream
    1 tb Hollandaise sauce (#25)
    1 sl Lox
    Kosher caviar

    Soak toast in sour cream and place in ramekin or small
    baking dish. Cover toast with lox and break egg on
    top. Bake in 350 F. oven for abt. 12 to 15 min., or
    until egg is set. Remove from baking dish. Add
    Hollandaise Sauce and sprinkle with caviar. Serve
    immediately.
