Fatfree Root Beer Floats
2 scoops fatfree frozen vanilla yogurt or ice milk
16 or larger bottle Diet A W Root Beer
Pour 1/2 c or so in the bottom of a large glass, add the frozen yogurt,
let the carbonation settle down and slowly add rootbeer until the glass
is full. For those who are near a Crate and Barrel, our local store
had large thick glass beer mugs for about $2.75 that I got wet and put
in the freezer for about 30 minutes before making the floats. Be sure
the root beer is very ice cold before using.

Title: LENTIL MACARONI SOUP

1 lb Lentils, dried
1/4 c Olive oil
1/2 c Celery, diced
1/2 c Onions, chopped
1 c Tomatoes, crushed
2 c Macaroni or other pasta brok
1 x Salt freshly ground pepper
Fat grams per serving: Approx. Cook
Time: 100 Wash the lentils thoroughly. Place them in
a large saucepan with cold water to cover and cook
over medium heat for about 1-1/2 hours, until tender.
In a seperate saucepan, heat the oil. Add the celery
and onions and saute until golden brown. Add the
tomatoes and simmer for 10 minutes. Add to the
lentils. Bring 2 Qts. of salted water to a boil in a
kettle. Add the macaroni and cook for 10 minutes.
Drain. Add the macaroni to the lentils, season with
salt and pepper and simmer slowly until the pasta is
tender. Serve accompanied by a tossed green salad and

Title: WHITE CHOCOLATE MOUSSE AND KIWI SAUCE

1 1/2 Gelatine leaves
200 g (7oz) white chocolate
1 Egg
1 Egg yolk
1 tb Cointreau or Grand Marnier
300 ml (10 fl oz) cream
———————————–SAUCE———————————–
3 Kiwi fruits
Icing sugar
———————————-GARNISH———————————-
Lemon slices
Sliced strawberries or kiwi
– fruit slices
Level of Difficulty: Medium difficult Preparation Time: 1 hour +

Soak the gelatine leaves in cold water for 10 mins to soften. Melt
the chocolate in a heatproof bowl over a pan of hot, but not boiling,
water. Allow to cool but not to set.
Beat the egg and egg yolk in a stainless steel bowl over a pan of
hot, but not boiling, water until thickened. Squeeze the gelatine
leaves and stir into the warm egg mixture until melted. Allow to
cool while still beating.
Add the melted chocolate to the mixture, a little at a time, until the
mixture is smooth and even. Stir in the liqueur.
Whip the cream until thick and carefully fold into the chocolate
mixture.
Put the mousse in the fridge for 2 hours, until it has set.
Meanwhile, make the sauce. Peel the kiwi fruit and pur e them in a
mixer or food processor. Add icing sugar to taste, if required.
Keep the sauce cold until ready to serve.
Pour a little sauce on 4 individual dishes. Shape the mousse into
egg-shaped balls, using two warm tablespoons, and place them on top
of the sauce.
Garnish with a few lemon leaves, sliced strawberries or slices of kiwi
fruit.

Title: SUGAR COOKIES

1 c BUTTER FLAVOR CRISCO
1 c Sugar
1 Egg
1 1/2 t Vanilla
2 c All-purpose flour
1 t Baking soda
1 t Cream of tartar
1/2 t Salt
1. Cream Butter Flavor Crisco and sugar in large bowl at medium speed of
electric mixer. Beat in egg and vanilla.
2. Combine flour with baking soda, cream of tartar and salt. Blend into
creamed mixture. Cover and chill at least 2 hours.
3. Preheat oven to 375′F.
4. Roll out dough on floured surface to 1/8″ thickness. Cut into desired
shapes with cookie cutters. Place on ungreased baking sheets.
5. Bake at 375′F. for 6-7 minutes. Cool on baking sheets about 1 minute.
Remove to cooling racks.
Makes 5 1/2 to 6 dozen cookies.
NOTE: For holidays, cut dough into desired holiday shapes. Sprinkle with
colored sugar crystals before baking.

3 c Beef Broth
1 ea Carrot — Chopped
1 ea Celery Stalk — Chopped
4 ea Bacon — Strips, Cubed
2 ea Onions — Small, Chopped

1/4 ts Pepper — White
6 ea Frankfurters, Sliced *
2 tb Parsley — Chopped
* Note: Use the real Frankfurters in this recipe and
not the hot dogs!

++++++++++++++++++ Soak beans overnight. In a 3-quart
saucepan bring beans, water and beef froth to a boil.
Cook for about 1 hour. Add carrot and celery and
continue cooking for 30 minutes. In a separate frypan
cook the bacon until transparent. Add the onions;
cook until golden. Set aside. Mash soup through a
sieve or food mill. Return to pan and add the bacon
onion mixture, salt and pepper. Add frankfurters;
reheat about 5 minutes. Sprinkle soup with chopped
parsley and serve.
