Red, White, Blueberry Shortcake

10 ozs Fat-Free Pound Cake
thawed and cut into 3 layers
1 c blueberry pie filling — * see note
1 c strawberry pie filling — * see note
4 ozs Cool Whip Lite® — thawed
Spread bottom layer of cake onto serving plate. Spread with blueberry pie
filling. Add second layer of cake. Spread with strawberry pie filling. Top
with third layer of cake. Frost top and sides of cake with whip topping.
Chill until ready to serve.

6 English muffins; split
6 oz Tomato paste or pizza sauce
Oregano
Garlic powder
Basil (optional)

Soy cheese substitute
Mushrooms
Onions
Green peppers
Olives
Place English muffin halves on an ungreased baking sheet and spread each
half with tomato paste.
Sprinkle with oregano, basil and garlic powder.
Arrange toppings; sprinkle with cheese substitute.
Freeze two hours, or until firm.
Wrap individually. Return to freezer.
To heat, bake unwrapped at 450 F for 12 minutes.
Yield: 12 pizzas

Cape Cod Clam Chowder

1/4 Lb. bacon — finely diced
2 medium-sized onions — finely chopped
3 C. diced potatoes
2 Tsp. salt
1/2 Tsp. oregano
1/4 Tsp. basil
2 C. boiling water
24 chowder clams (grind liquor and all
through medium
blade of food grinder)
Saute bacon and onions in large kettle until onions are
tender and golden. Pour off fat. To the kettle, add potatoes,
salt, oregano, basil and water; let simmer until potatoes are
tender, about 15 minutes. Add the clams. This is the base;
make 1 quart. Next day, add to base 1 quart milk, 2 table-
spoons butter, salt and freshly ground pepper to taste; heat.

Pig Cake

1 Box butter flavored cake mix
1 Can Mandarin oranges — (11 oz.)
4 eggs
1 Tsp. vanilla
Frosting:
1 Box vanilla pudding
1 Small Can crushed pineapple
1 Small Contai Dream Whip
1/2 C. powdered sugar
1 Small Pkg. cream cheese
Pour liquid of Mandarin oranges in small bowl. Add cake
mix, butter and vanilla. Add eggs, one at a time. Chop up
Mandarin oranges into small pieces. Beat all ingredients
except Mandarin oranges for 3 minutes on mix setting. Add
oranges and beat for one more minute. Pour into 3 greased and
floured foil cake pans.
Frosting: Combine vanilla pudding mix with cream cheese
and pineapple juice. Add powdered sugar and crushed pineapple
pieces. Fold in Dream Whip. Beat for 2 minutes. Frost cake.

Title: RED COOKING SAUCE FOR MEAT SHANGHAINESE

2 c Water
2 oz Dry sherry or rice wine
3 tb Dark soy
2 tb Brown sugar
4 Slice ginger
1 Star anise
2 Scallions
1 Slice dried tangerine

To use these sauces: bring them to a slow boil in a
large kettle. Add meat or poultry, return to slow
boil, reduce heat to simmer, and cook until done.
Drain meat and serve with some sauce (optionally
thickened with cornstarch-water) on the side. Save and
reuse leftover sauce, which gets richer with each use.
Leftover sauce should be salted lightly, boiled a few
minutes, skimmed, and cooled before storage in the
refrigerator. If it is to be kept a long time it
should be boiled and skimmed once in awhile.

Title: SPICY BEAN CURD

1/2 lb Medium-firm tofu
1 ts Soy sauce and dry sherry
1 ts Sweet bean sauce or hoisin
-sauce
1/4 lb Ground pork
3 tb Salad oil
1 ts Minced fresh ginger
2 ts Minced garlic
2 ts Hot bean sauce or 2 small
-dried chiles
3/4 c Water
2 tb Soy sauce
2 Green onions, thinly sliced
2 tb Each water and cornstarch
A fiery sauce coats cubes of delicate tofu in this
succulent stir-fry. To balance it’s zestiness and
soothe your palate, serve with hot cooked rice. Cut
tofu into 1/2 inch cubes; place in a colander and let
drain for 15 minutes. In a bowl, blend the 1 tsp soy,
sherry, and sweet bean sauce; add pork and stir to
coat. Stir in 1 tsp of the oil; let stand for 15
minutes. Heat a wok or wide frying pan over high heat.
When pan is hot, add remaining oil. When oil begins
to heat, add ginger and garlic. Stir once, then add
pork and stir-fry until meat is no longer pink (about
2 minutes). Stir in hot bean sauce. Add tofu, the 3/4
cup of water, and the 2 Tbs soy. Cook for 3 minutes;
then add onions. Stir together the water and
cornstarch; pour into pan and cook, stirring, until
sauce boils and thickens. Makes 2 to 3 servings.

Title: FAVORITE PEANUT BUTTER COOKIES

1/2 c Peanut butter
1/4 c Margarine or butter,
-softened
3/4 c Sugar
1 Egg, beaten
1/2 c All-purpose flour
1/2 t Baking powder
1/4 t Salt (opt)
2 c Rice CHEX brand cereal,
-crushed to 1 cup
Preheat oven to 350′F. Lightly grease cookie sheet. In large bowl, cream
peanut butter, margarine and sugar. Add egg. Stir in flour and baking
powder; add salt, if desired. Stir in cereal; mix well. For each cookie,
roll 1 level tablespoon dough into ball. Place on prepared cookie sheet.
With fork dipped in sugar, flatten slightly in criss-cross pattern. Bake
8-10 minutes or until bottoms are lightly browned. Let stand 1 minute
before removing from cookie sheet. Cool on wire rack.
Makes 2 1/2 dozen cookies.

Once steeped, this vinegar is supposed to “keep for several months.
(Garnishes and other solids left in the jar, however, may discolor or
break down.)”
Sage Caraway Vinegar
1 cup packed fresh sage leaves plus sprigs for garnish, rinsed
and spun dry
1 1/2 teaspoons caraway seeds, bruised with a rolling pin
1 3/4 cups cider vinegar
1/4 cup water
Put the sage leaves in a very clean 1-qt glass jar and bruise
them with a wooden spoon. Add the caraway seeds, the vinegar,
and the water and let the mixture steep, covered with the lid, in
a cool dark place for 4 days to 2 weeks. Strain the vinegar
through a fine sieve into a glass pitcher, discarding the solids,
and pour it into 2 very clean 1/2-pint glass jars. Add the sage
sprigs and seal the jars with the lids.

1 box powdered sugar
1 egg
1 cup melted butter
1 cup peanut butter
1 cup finely crushed graham crackers
1 6 ounce package chocolate chips
2 ounces bittersweet chocolate (optional)
Mix first 5 ingredients. Pat into jelly roll pan (15.5″ x 10.5″ x 1").
Melt chocolate in double boiler. Pour on top. Place in refrigerator for
about 30 minutes. Cut into squares (or bars) and return to refrigerator.
Also good frozen.

DANISH FETA CHEESE-BROILED TOMATOES

3 lg Tomatoes, cut in half
Dash of pepper
1/2 c Mayonnaise
1/2 c Danish Feta cheese, finely
Crumbled
1 tb Chopped green onion
1/8 ts Dried thyme
Core tomatoes slightly, then sprinkle tomatoes with
pepper. In a bowl, blend together mayonnaise, Feta
cheese, green onion and thyme. Spoon into halves.
Broil for about 5 minutes or until tops are golden
