IRISH SODA MUFFINS

1 c Quaker Oats, uncooked
— (quick or old-fashioned)
1 c Buttermilk or sour milk*
1 Egg
1/3 c Margarine or butter — melted
1/4 c Brown sugar, firmly packed
1 c All-purpose flour
1 t Baking powder
1/2 ts Baking soda
1/2 ts Salt (optional)
1/2 c Raisins
Combine oats and buttermilk; refrigerate 1 hour or
overnight. Heat oven to 400 F. Grease 12 medium
muffin cups or line with paper baking cups. In large
bowl, combine egg, margarine and brown sugar; mix
well. Add oat mixture alternately with combined dry
ingredients to egg mixture, mixing just until dry
ingredients are moistened (batter will be slightly
lumpy). Stir in raisins. Fill prepared muffin cups
2/3 full. Bake 20 to 25 minutes or until golden brown.
*NOTE: To make sour milk, place 1 tablespoon lemon
juice or vinegar in glass measuring cup. Add enough
milk to equal 1 cup; mix well. Let stand 10 minutes.

Title: Brownie Crust Pie

1 pk Brownie mix
1 pk Chocolate chips
1 pk Cream cheese,softened
1 ct Cool Whip,thawed
1 cn Any read-made pie filling
Make brownie mix according to directions on box. Add chocolate chips
and bake in springform pan as directed on box. Let cool. Mix cream
cheese with Cool Whip. Spread on brownie crust and chill for eight
hours or overnight. Remove springform – draw knife around the edge
for easy removal. Top with pie filling and serve.

Title: VEGAN ALMOND CHEESECAKE

1 8″ graham cracker crust,
-unbaked
1 lb Tofu
1/2 c Brown sugar
1/2 c Almond meal
1/4 c Honey or syrup
1/4 c Oil
2 tb Lemon juice
1 ts Almond extract
Pinch of salt
1/4 c Almonds, slivered, toasted
Preheat oven to 350 degrees.
Blend all ingredients except crust and almonds in a food processor until
smooth and creamy.
Pour into unbaked pie shell, top with slivered almonds, and bake for about
45 minutes or until cracks start to form on the edge of the filling.

Spray an 8″ or 9″ pie pan with Pam. In a large bowl, combine ice milk and
Cool Whip. Blend in remaining ingredients. Freeze at least 2 hours. Note:
First time cutting, cut into 8 pieces and refreeze.

NEW YEAR’S DAY, VASILOPITTA BREAD

2 tb Dry yeast
1/4 c Warm water
1/2 ts Each.. cinnamon, anise
-seeds, orange peel
1 Bay leaf
1 oz Ouzo (optional)
1/2 c Water
1/2 c Hot milk
1/4 lb Butter
7 c Unbleached flour, unsifted
1 c Sugar
1/2 ts Salt
3 Eggs
12 Walnut halves
The Greeks wrap coins in foil and knead them into this
bread. They believe anyone who finds a coin will have
good luck in the coming year.
Dissolve yeast in warm water and set aside. Put
spices, orange peel,bay leaf, and ouzo in a pot with
the 1/2 cup water and bring to a boil. Set aside to
steep and cool. Heat milk and remove from heat. Add
the butter and allow the milk to cool slightly. Put
the flour, sugar, and salt in a large bowl. Mix in
eggs, yeast, milk mixture, and flavored water (remove
only the bay leaf) Stir the mixture until all the
flour has been absorbed.
Turn the dough out onto a lightly floured board and
knead until smooth, about 20 minutes. Place in a
buttered bowl, and flip the dough so the top is
greased as well. Cover with a towel dampened with hot
water. Set in a warm, draft free place to rise until
doubled in bulk, about 4-6 hours.
Punch down the dough and knead for about 5 minutes.
Shape into one large round loaf and decorate the top
with walnut halves. Set aside to rise once more,
about 2 hours (uncovered). Bake in a preheated 350 F
oven for 1 hour.
Makes 1 loaf.

Title: NO-BAKE BUTTERSCOTCH HAYSTACKS

1 c Butterscotch Chips
– (Hershey’s)
1/2 c Reese’s Peanut Butter Chips
1 tb Shortening
-(do not use butter,
– margarine or oil)
1 1/2 c Chow mein noodles
— coarsely broken
Line tray with wax paper. In medium microwave-safe bowl, place
butterscotch chips, peanut butter chips and shortening. Microwave at
HIGH (100%) 1 minute; stir. If necessary, microwave at HIGH an
additional 15 seconds at a time, stirring after each heating, just until
chips are melted and mixture is smooth when stirred. Immediately add
chow mein noodles; stir to coat. Drop mixture by heaping teaspoonfuls
onto prepared tray or into paper candy cups; let stand until firm. If
necessary, cover and refrigerate until firm. Store in tightly covered
container in refrigerator. About 2 dozen candies.
Variation:
Chocolate Haystacks: Substitute 1 cup Hershey’s Semi-Sweet Chocolate
Chips or Hershey’s Milk Chocolate Chips for butterscotch chips. Proceed
as directed above with peanut butter chips, shortening and chow mein
noodles.

Broccoli Corn Chowder (Pressure Cooked)

2 tablespoons butter or oil
2 medium leeks, white part only (abt 1 1/2 c) — thinly sliced
1 medium onion — coarsely chopped
2 large potatoes (1 lb), peeled — cut in 1/2″ cubes
2 stalks broccoli (stalks from 2 heads only) — peeled and chopp
ed
1 cup fresh or frozen corn kernels
5 cups vegetable stock
1/2 teaspoon salt — or to taste
1/4 cup finely chopped fresh parsley — divided
1/2 cup milk, or half-and-half
serves 6
Melt the butter in the cooker. Saute the leeks and onions, stirring frequently
, until the onion is lightly browned, about 4 minutes. Stir in the potatoes,
broccoli, corn, stock, salt, and half the parsley. Lock the lid in place and o
ver high heat bring to high pressure. Adjust heat to maintain high pressure an
d cook for 3 minutes. Reduce the pressure with a quick release method. Remove
the lid, tilting it away from you to allow any excess steam to escape. Stir i
n the remaining parsley and milk. Adjust seasonings before serving.

Lemon Refrigerator Cookies

1 cup butter
2 1/2 cups sugar
2 eggs — beaten
1 tablespoon lemon rind — grated
2 tablespoons lemon juice
3 1/2 cups flour
1 tablespoon baking powder
1 3/4 cups coconut
Beat butter until soft and gradually add the sugar. Blend until creamy. Beat in
eggs, lemon rind and juice; stir in coconut. Mix together flour, baking powder
and salt. Stir this into butter mixture; mix well.
Form the dough into a 2″ roll on a piece of foil or waxed paper in which you ca
n wrap it securely. Chill the dough for 4-12 hours.
Slice cookies approximately 1/4 inch thick and place on cookie sheet. Bake at 4
00° for 8-10 minutes. Or drop by teaspoonfuls onto cookie sheet and bake.
Makes 5 dozen.

Title: Rattlesnake and Beans

3 lb Dry kidney or pinto beans
– cooked; -OR-
64 oz -Canned beans
30 oz Stewed tomatoes; undrained
4 oz Canned diced jalapenos
– more or less to taste
1 lg Red onion
– cut in large chunks
1 Garlic clove; smashed
1 ds Salt
1 lb Ground beef
– browned and drained
1/2 lb Rattlesnake meat *
– in bitesized pieces
– browned
Broken tortilla chips (opt.)
* (can substitute quail, dove, chicken, rabbit, or
pork)
Put cooked beans into large pot, add tomatoes,
jalapenos, onion, salt, garlic, ground beef and
rattlesnake (or other) meat. Simmer 10 minutes to heat
thoroughly. For chili pie put some broken tortilla
chips in bottom of bowl and spoon beans over chips.
